1/2 tablespoon olive oil
1/2 cup chopped onion
1/2 cup chopped green pepper
2 large eggs or 1/2 cup egg substitute
2 tablespoons nonfat milk
2 tablespoons grated parmesan cheese
2 tablespoons salsa

Steps:

  • Coat an oven proof skillet with cooking spray. Heat the skillet, then add olive oil. Cook onion and pepper until lightly browned, about 5-7 minutes.
  • Whisk eggs and milk together. Add to skillet and cook for 1 minute without stirring. Remove from heat.
  • Sprinkle egg mixture with cheese. Broil until cheese is browned and top of frittata is firm, about 1-2 minutes.
  • Slice into 4 wedges and top with salsa.

Besides fried egg sandwiches, I also enjoy a toasted Western on occasion. Sometimes I also make it as a Frittata for dinner.

1 red pepper, chopped
6 green onions, chopped
8 slices bacon, sliced into small pieces
8 eggs
1/2 cup half-and-half
1 tablespoon butter
salt and pepper

Steps:

  • Preheat oven to 350 degrees.
  • In a medium sized skillet over medium high heat, fry the bacon until desired doneness in butter.
  • Add the chopped vegetables and continue cooking until just softened.
  • In the meantime, crack the eggs in a bowl, add half/half, salt and pepper to taste and whisk until combined.
  • Pour mixture over the other ingredients in the skillet and cook until the bottom has just set.
  • Place pan (with foil wrapped around the handle if not ovenproof) in the oven and bake for approximately 10 minutes or until the top is set.
  • Watch closely!
  • Cut into four wedges and serve hot.

1 medium Yukon Gold potato, peeled and sliced

1/2 cup chopped sweet green pepper
1 cup shredded cheddar cheese, divided

Steps:

  • Layer two 24-in. pieces of aluminum foil; starting with a long side, fold foil to create a 1-in.-wide strip. Shape strip into a coil to make a rack for bottom of a 6-qt. oval slow cooker. Add water to slow cooker; set foil rack in water., In a large skillet, heat oil over medium-high heat. Add potato and onion; cook and stir 4-6 minutes or until potato is lightly browned. Transfer to a greased 1-1/2-qt. baking dish (dish must fit in slow cooker)., In a large bowl, whisk eggs, pepper sauce, salt and pepper; stir in ham, green pepper and 1/2 cup cheese. Pour over potato mixture. Top with remaining cheese. Place dish on foil rack., Cook, covered, on low 3-4 hours or until eggs are set and a knife inserted in the center comes out clean.

1 teaspoon olive oil
1 large tomato, chopped
2 tablespoons sliced ripe olives, drained

Steps:

  • Heat oven to 350°F. In medium bowl, beat eggs, water, salt, cumin and pepper with wire whisk until blended. In small bowl, mix remaining ingredients except cheese.
  • Spray 10-inch ovenproof skillet with cooking spray; heat over medium-high heat. Pour egg mixture into hot skillet. Reduce heat to medium; spoon vegetable mixture over egg mixture. Cook 5 minutes, lifting edges occasionally and tipping skillet to allow uncooked egg mixture to flow to bottom of skillet. Sprinkle with cheese.

7 whole large eggs
3 large egg whites
1/2 cup milk
1 green bell pepper, chopped
1 small onion, chopped
2 tablespoons olive or vegetable oil
4 ounces bulk breakfast sausage (1/2 cup)
1 cup coarsely grated sharp or extra-sharp Cheddar (1/4 pound)

Steps:

  • Preheat broiler.
  • Whisk together whole eggs and whites, milk, and 1/2 teaspoon each of salt and pepper.
  • Cook bell pepper and onion in oil in an ovenproof 12-inch nonstick skillet over medium-high heat, stirring occasionally, until softened and golden, about 8 minutes. Add sausage and cook, breaking up large clumps, until no longer pink, about 2 minutes. Add egg mixture and half of cheese and cook, lifting up cooked egg around edges to let uncooked egg flow underneath, 3 to 5 minutes (top will still be moist).
  • Sprinkle top with remaining cheese and broil 4 to 6 inches from heat until set, puffed, and golden brown, about 3 minutes.
  • Cool 5 minutes, then loosen edges with a spatula and slide onto a plate. Serve warm or at room temperature.
