- Preheat your oven 350. Prep a round cake pan for nonstick. I like to use Parchment Paper .
- In a medium mixing bowl, use a fork or a whisk to mix together the flour with the baking powder.
- Next, in a large mixing bowl, blend together the oil with the sugar.
- For the next step, we will add the dry ingredients from the first bowl to the mixing bowl. Do this by adding half of the dry ingredients at a time, stirring gently between additions. Then add the mashed banana and stir in the eggs and vanilla extract and mix until just blended. Do not over-mix the ingredients.
- Bake this cake for 35-40 minutes or until a toothpick comes out clean.
