If you like spinach-cheese pie, try these simple but elegant-looking little spinach cakes.

12 ounces fresh spinach, (see Note)
1/2 cup part-skim ricotta cheese, or low-fat cottage cheese
½ cup finely shredded Parmesan cheese, plus more for garnish
2 large eggs, beaten
1 clove garlic, minced
¼ teaspoon salt
¼ teaspoon freshly ground pepper

Steps:

  • Preheat oven to 400 degrees F.
  • Pulse spinach in three batches in a food processor until finely chopped. Transfer to a medium bowl. Add ricotta (or cottage cheese), Parmesan, eggs, garlic, salt and pepper; stir to combine.
  • Coat 8 cups of the muffin pan with cooking spray. Divide the spinach mixture among the 8 cups (they will be very full).
  • Bake the spinach cakes until set, about 20 minutes. Let stand in the pan for 5 minutes. Loosen the edges with a knife and turn out onto a clean cutting board or large plate. Serve warm, sprinkled with more Parmesan, if desired.

3 tablespoons extra-virgin olive oil
1 pound cremini mushrooms, halved and thinly sliced
Kosher salt and freshly ground black pepper
10 ounces chopped frozen spinach, thawed and squeezed dry
6 ounces Asiago cheese, shredded (about 2 cups)
1 large egg, beaten
Whole-grain mustard, for serving

Steps:

  • Preheat the oven to 450 degrees F. Line a baking sheet with parchment.
  • Heat the oil in a large skillet over medium-high heat. Add the mushrooms and cook, stirring occasionally, until the mushrooms are a rich golden brown, 10 to 12 minutes. Season with salt and pepper. Transfer the mushrooms to a bowl and cool slightly.
  • Add the spinach, cheese and egg to the mushrooms and stir together to combine (it's nice if there are pockets of cheese in the mixture).
  • Using a 1/4 cup dry measuring cup as a mold, tightly pack some of the mixture into the cup to make a cake. Tap the cake out of the cup on to the prepared pan. Repeat with the remaining mixture to make 8 cakes. Bake until the cheese is golden, about 12 minutes. Serve hot with whole-grain mustard.

1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 jar (7-1/2 ounces) marinated quartered artichoke hearts
1 tablespoon Italian seasoning
3 tablespoons grated Parmesan and Romano cheese blend
1 teaspoon extra virgin olive oil
Carrot and celery sticks

Steps:

  • Drain artichokes, reserve marinade. In a small saucepan, cook and stir beans, spinach, artichokes and Italian seasoning over medium heat until aromatic and heated through, 4-5 minutes. 1/4 cup packed brown sugar

FILLING:
2 cups 2% cottage cheese
1 cup reduced-fat plain yogurt
4 ounces reduced-fat cream cheese
3/4 cup sugar
1/2 cup egg substitute
3 tablespoons cake flour
2 tablespoons lemon juice
1/2 teaspoon grated lemon zest
1 teaspoon vanilla extract

Steps:

  • In a small bowl, combine the graham cracker crumbs, brown sugar and cinnamon; stir in butter. Press onto the bottom and 1 in. up the sides of a 9-in. springform pan coated with cooking spray. Place on a baking sheet. Bake at 325° for 10 minutes. Cool on a wire rack., In a blender or food processor, combine cottage cheese and yogurt. Cover and process until smooth; set aside. In a large bowl, beat cream cheese and sugar until smooth. Add egg substitute; beat on low speed just until combined. Stir in the flour, lemon juice, lemon zest and vanilla. Fold in cottage cheese mixture. Pour into crust. , Return pan to baking sheet. Bake at 325° for 40-45 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Remove sides of pan. Refrigerate leftovers.
