This is a simple recipe, containing no fat! None! So go ahead and have your dessert. You could use Splenda instead of the sugar.This is not supposed to rival Cool Whip, but it is one way to be able to at least enjoy your dessert. I have not tried it with Splenda(or other sugar substitutes) but imagine it would work. Remember to put your bowl and the beaters to your electric mixer in the freezer for at lease 30 minutes before beginning this recipe. Note: I use Carnation non-fat dry milk powder, and suggest you use a good product like it to get the best results.

Ingredients

1/3 cup of carnation instant nonfat dry milk powder
1/3 cup ice cold water
1/4 cup granulated sugar
1 teaspoon lemon juice
1 teaspoon vanilla extract

Steps:

Chill bowl and beaters of electric mixer in freezer for 30 minutes.
In chilled mixing bowl, combine powdered milk, ice water, sugar, lemon juice and vanilla extract. Beat on high speed until peaks form.

Avoid icky hydrogenated oils: this is by no means a diet or lite food, but a purer alternative. This isn't really a recipe as much as a technique to make your own whipped topping for desserts that call for it, such as pies, dessert pizzas, etc. SERVING SIZE IS 1 TBSP

1 pint heavy whipping cream
1/2 cup confectioners' sugar
optional 1/4 tsp vanilla

Steps:

Whip the cream with a whisk or wooden fork in a sturdy bowl until peaks form.
Beat in the powdered sugar tablespoon by tablespoon, until it has something of a real shape and consistency to it. Voila, you're done! Sprinkle with some cinnamon if topping a pumpkin pie.
I like giving it a light vanilla flavor-- a little goes a long way, 1/8-1/4 tsp is really all you need. For some ideas, 1/4 tsp lemon extract with some yellow food dye makes for a nice lemon cream topping, same with strawberry extract and red food coloring. Almond extract with some crushed almonds on top? Mmm!

1 dash salt
1 tablespoon lemon juice
3 tablespoons sugar
1 tablespoon vanilla

Steps:

if kitchen is warm, prechill a deep, narrow bowl and beaters.
combine above ingredients in chilled bowl.
beat with handmixer until thick and peaks form.
add 3 tbsp white sugar and 1 tsp vanilla.
beat again.
