4 skinless, boneless chicken breast halves - cubed
1 onion, chopped
1 ¼ cups chicken broth
1 (4 ounce) can diced green chiles
1 teaspoon garlic powder

½ teaspoon dried cilantro
⅛ teaspoon cayenne pepper
1 (15 ounce) can cannellini beans, drained and rinsed
2 green onions, chopped
2 ounces shredded Monterey Jack cheese

Steps:

  • Heat oil in a large saucepan over medium-high heat. Cook chicken and onion in oil 4 to 5 minutes, or until onion is tender.
  • Stir in the chicken broth, green chiles, garlic powder, cumin, oregano, cilantro, and cayenne pepper. Reduce heat, and simmer for 15 minutes.
  • Stir in the beans, and simmer for 5 more minutes, or until chicken is no longer pink and juices run clear. Garnish with green onion and shredded cheese.

1 small yellow onion (, diced)
1 tbsp olive oil
2 cloves garlic (, finely minced)
2 (14.5 oz) cans low-sodium chicken broth
1 (7 oz) can diced green chilies
1 1/2 tsp cumin
1/2 tsp paprika
1/2 tsp dried oregano
1/2 tsp ground coriander
1/4 tsp cayenne pepper
salt and freshly ground black pepper (, to taste)
1 (8 oz) pkg Neufchatel cheese (aka light cream cheese), (cut into small cubes )
1 1/4 cup frozen or fresh corn
2 (15 oz) cans cannellini beans
2 1/2 cups shredded cooked rotisserie or left-over chicken*
1 Tbsp fresh lime juice
2 Tbsp chopped fresh cilantro, (plus more for serving)
Tortilla chips or strips, monterrey jack cheese, sliced avocado (for serving (optional))

Steps:

  • Heat olive oil in a large pot over medium-high heat. Add onion and saute 4 minutes minutes. Add garlic and saute 30 seconds longer.
  • Add chicken broth, green chilies, cumin, paprika, oregano, coriander, cayenne pepper and season with salt and pepper to taste. Bring mixture just to a boil then reduce heat to medium-low and simmer 15 minutes.
  • Drain and rinse beans in a fine mesh strainer or colander then measure out 1 cup. Set whole beans aside, transfer 1 cup beans to a food processor along with 1/4 cup broth from soup, puree until nearly smooth**.
  • Add Neufchatel cheese to soup along with corn, whole beans and pureed beans and stir well. Simmer 5 - 10 minutes longer.
  • Stir in chicken, fresh lime juice and cilantro. Serve with Monterrey Jack cheese, more cilantro, avocado slices and tortilla chips if desired.

1 teaspoon chili powder
½ teaspoon each: ground cumin, dried oregano, salt, mustard powder
1/4 teaspoon black pepper (cayenne pepper)
1 pinch red pepper flakes
3 tablespoons butter
1 yellow onion (diced)
1 large jalapeno pepper (seeded and diced)
4 cloves garlic (diced)
3 tablespoons flour
6 cups chicken broth
1/3 cup half and half ((half milk, half cream))
2 (15.5 oz.) cans cannellini beans, drained
1 teaspoon Hot Sauce
1 teaspoon Worcestershire sauce
2 (4 oz.) cans mild green chilies
1 ½ lbs. bone-in skinless chicken breast (see notes)
Salt/Pepper
1 (15.25 oz.) can whole kernel sweet corn (drained. Can sub frozen corn.)
8 oz. cream cheese (softened)
Lime wedges, Diced Avocado, Sour cream, Tortilla Strips, Fritos, Monterey or Pepper Jack cheese.

Steps:

  • Combine the seasonings and set aside.
  • Melt the butter in a 4 1/2-quart pot. Add the diced onions and jalapeno pepper and cook for 5 minutes. Add the garlic and cook for 1 minute.
  • Add the flour and toss to coat. Cook for 2 minutes, until raw flour smell is gone.
  • Add the chicken broth in small splashes, stirring continuously. Add the half and half in the same manner.
  • Optional: Reserve 1 heaping cup of drained beans and combine it with ½ cup broth. Blend in a food processor, blender, or immersion blender. Add it to the soup along with the remaining whole beans. (This helps to thicken the broth. Otherwise, all beans can be added whole.)
  • Add the seasonings, hot sauce, Worcestershire sauce, and green chilies. Bring to a boil. Let it boil for 15 minutes, uncovered, then reduce to a simmer.
  • Season each side of the chicken with salt/pepper. Add the chicken and the corn to the pot and let it simmer gently for 15-20 minutes, uncovered. (Cooking too rapidly will make the chicken tough.) Stir throughout cooking to lift any beans that may have settled to the bottom.
  • Remove the chicken and shred it once cooked through. Return it to the pot.
  • Reduce heat to low and stir in the softened cream cheese. Stir continuously until the cheese is fully melted into the chili.
  • Taste and adjust seasonings as needed. Serve with cornbread!

1/2 teaspoon lemon pepper seasoning

3 celery ribs, chopped

1 tablespoon chili powder

  • Over medium heat in a heavy pot, sauté the pork (or chicken) and onion in oil and butter for 8 to 10 minutes or until the meat browns and onion softens.

1 can white beans, drained and rinsed
1 cup frozen shoe peg white corn
1 jar diced green chilies (they are mild.)
The juice of 1 lime (about 2 to 3 tbsp lime juice)

Steps:

  • Heat olive oil in a large saucepan over medium heat and cook onions for 4 to 5 minutes or until translucent.
  • Add garlic and cook an additional minute.
  • Add the whole chicken breasts, stock and salt to the saucepan, cover, bring to a boil and reduce to a simmer.
  • Cook for 18-20 minutes, remove chicken to a plate and allow to cool.
  • While the chicken is cooling, add the remaining ingredients to the pot.
  • Remove the chicken from the bone, chop into bite-size pieces, and add to the pot.

3 (16 ounce) cans navy beans, drained
32 ounces chicken broth
1 (12 ounce) can evaporated milk
1 cup water
1 onion, chopped (or use 1T dried chopped onion)
2 (4 ounce) cans diced green chilies
2 garlic cloves, minced
1/2 tablespoon white pepper
1 tablespoon dried oregano
1 tablespoon ground cumin
1/2 teaspoon salt
1/4 teaspoon ground cloves
4 cups cooked boneless skinless chicken breasts
1/2 cup mild salsa
1/2 cup sour cream
1 bunch chopped cilantro (optional)
1 whole avocado, diced (optional)
1/2 cup shredded monterey jack cheese
10 corn tortillas

Steps:

  • In a large pot, sautee onion in a little olive oil and then add beans, broth, evaporated milk, chilis and garlic. If you are using dried chopped onion, add it to the liquid at this time. Bring to a boil, turn down heat to simmer.
  • While soup is heating chop chicken into small pieces. Combine spices into a small dish. Sprinkle the spices onto the chicken and toss to cover. Once the soup is boiling/simmering, stir in chicken. Simmer for 30 minutes.
  • If chili seems too thick, add up to 1 cup of water
  • Serve with grated cheese, sour cream, salsa, cilantro and avocado. Heat tortillas and serve on the side. Yum!
  • **you can omit the chicken and use vegetable broth for a delicious vegetarian version.

1 1/2 lbs skinless chicken pieces
1 large onion, chopped
2 heads garlic, minced
1 (14 ounce) can chicken broth
2 tablespoons ground cumin
1 tablespoon dried oregano
1/2 teaspoon salt
1/4 teaspoon red pepper sauce (or to taste)
1 (4 ounce) can green chilies, chopped
15 -16 ounces canned or dried great northern beans, rinsed and drained
1 cup white corn
3 tablespoons lime juice
2 tablespoons fresh cilantro, chopped

Steps:

  • Remove fat from chicken.
  • Mix dried beans (if using canned beans, add them at the end of cook time) onion, garlic, broth, cumin, oregano, green chilies, salt and pepper sauce in a 4 to 6 quart crock pot or slow cooker.
  • Add chicken.
  • Cover and cook on high if using dried beans or low if using canned beans for 4 to 5 hours or until juice of the chicken is no longer pink when thickest pieces are cut.
  • Remove chicken.
  • Using 2 forks, remove cooked chicken from bones and shred.
  • Return shredded chicken to the crock pot.
  • If using canned beans, add them, corn, lime juice and cilantro to the crock pot.
  • Cook on low for 15 to 20 minutes or until additions are hot.

The first time I made it for my kids, they asked me so many times what it was called, but by the end of the meal they cared much more about getting second helpings than remembering the name! If you have time be sure to double the recipe and store in the fridge or freezer, because, like most soups and stews, the leftovers are amazing.

1 tablespoon olive oil
1/2 onion, diced
1/2 jalapeño, minced
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
1 garlic clove, minced
1 teaspoon chili powder
1 teaspoon ground cumin
1 1/4 teaspoons salt
1/4 teaspoon cayenne pepper
1/2 cup frozen corn kernels (no need to thaw)
2 (15-ounce) cans white beans (such as Great Northern or cannellini), drained and rinsed
1 3/4 cups chicken broth, store bought or homemade
1/4 cup heavy cream
Optional toppings:
Chopped cilantro, sour cream, grated Monterey Jack cheese, diced avocado, and/or corn tortilla strips

Steps:

  • In a medium soup pot, heat the olive oil over medium heat. Add the onion and jalapeño and cook, stirring, until the onion has softened, 2 to 3 minutes.
  • Add the chicken and cook, stirring occasionally, until it is lightly browned on the outside and no longer pink on the inside (add more olive oil if the pot starts to dry out), 4 to 5 minutes.
  • Toss the minced garlic and spices into the pot and turn a few times to coat the chicken evenly. Add the corn, beans, and chicken broth and bring to a boil. Reduce the heat to low and simmer, about 20 minutes.
  • Break up some of the beans with the back of a wooden spoon to help thicken the chili. Stir in the cream, garnish with the desired toppings, and serve!

1 medium onion, chopped
2 cans (15 ounces each) cannellini beans, rinsed and drained
1 can (4 ounces) chopped green chiles
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon pepper
1 can (14-1/2 ounces) reduced-sodium chicken broth
Optional toppings: Reduced-fat sour cream, shredded cheddar cheese and chopped fresh cilantro

Steps:

  • In a large saucepan, cook chicken and onion over medium-high heat until chicken is no longer pink, 6-8 minutes, breaking up chicken into crumbles., Pour 1 can of beans in a small bowl; mash slightly. Stir mashed beans, remaining can of beans, chiles, seasonings and broth into chicken mixture; bring to a boil. Reduce heat; simmer, covered, until flavors are blended, 12-15 minutes. Serve with toppings as desired. Freeze option: Freeze cooled chili in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add broth if necessary.
