Yield A side dish for 4 (or 2, with leftovers)

Number Of Ingredients 5

4 cups frozen peas
2 1-pound bunches watercress, trimmed of all but top 2 to 3 inches
4 tablespoons unsalted butter, cut into small pieces
1/2 teaspoon freshly ground black pepper
3/4 teaspoon sea salt

Steps:

  • Fill a large saucepan with water and bring to a boil. Add the peas and return to a boil. Turn off the heat. Add the watercress tops to the peas and cover the saucepan. Let sit for 5 minutes so that the watercress wilts.
  • Drain the peas and watercress and transfer to a food processor. Add the butter, pepper and salt and process until smooth. Taste and adjust seasoning. Spoon into a serving dish and serve.

two 10-ounce packages frozen peas
2 bunches of watercress, coarse stems discarded and the watercress rinsed and spun dry (about 4 cups)
1/4 cup water
2 tablespoons unsalted butter

Steps:

  • In a large saucepan combine the peas, the watercress, and the water and boil the mixture, covered, for 5 minutes, or until the peas and watercress are tender. Transfer the mixture to a food processor, add the butter and salt and pepper to taste, and purée the mixture.

8 cups salted water
2/3 cup dried black-eyed peas
1 bunch watercress, tough stems discarded, the rest washed well, spun dry (2 cups packed), and chopped
1 large firm-ripe peach, peeled and cut into 1/2-inch pieces
2 scallions, chopped
1 celery rib, chopped fine
4 teaspoons fresh lemon juice
1/2 teaspoon ground cumin

Steps:

  • In a saucepan bring water and peas to a boil and simmer 20 minutes, or until tender. Drain peas in a colander and rinse under cold water to cool. Drain peas well and in a large bowl toss with remaining ingredients and salt and pepper to taste. (Salad may be made 2 hours ahead and chilled, covered.)

  • Put the peas and watercress with a small amount of the stock in the food processor and whizz
  • Put the peas and watercress mix in a saucepan and add the rest of the ingredients seasoning for taste
  • Heat gently and then before serving add the cream, again the amount to your taste
  • Keep tasting until it tastes how you want it to be. Do not add too much watercress - it is a bitter strong flavoured herb and could overpower the delicate taste of the peas

2 large baking potatoes, pricked with a fork in several places
3 firm Bosc pears
1 1/2 cups stemmed watercress
1 teaspoon salt
Freshly ground pepper to taste
1/4 cup toasted walnuts, coarsely chopped

Steps:

  • Preheat oven to 450 degrees. Place the potatoes on a baking sheet and roast for 20 minutes. Peel, halve and core the pears. Place the pears on the baking sheet with the potatoes and roast until the potatoes and pears are soft, about 40 minutes.
  • Meanwhile, bring a pot of water to a boil. Add the watercress and blanch for 1 minute. Drain well. Place the watercress and the pears in a food processor and process until smooth, stopping to scrape down the sides of the bowl.
  • Cut the potatoes in half lengthwise and scoop out the flesh. Pass the potato through a ricer into a medium-size bowl. Stir the pear mixture into the potato until smooth. Season with the salt and pepper to taste. Divide among 4 plates and sprinkle with the toasted walnuts. Serve immediately.

2 leeks, sliced
400g frozen peas
600ml vegetable stock
1 sprig of fresh mint
1 (100g) pack watercress
150ml semi skimmed milk

Steps:

  • 1. Heat the oil in a large pan, add the leeks and sauté for 3mins or until soft. Add the peas and stock and slowly bring to the boil. Cover and simmer for 5 mins or until the peas are tender.
  • 2. Add the watercress and simmer for a further 2 mins.2 Transfer to a blender, add the milk and whizz until just smooth or longer if you prefer a smoother soup. Gently reheat before serving.
