1/4 bunch cilantro, chopped
1/4 cup extra-virgin olive oil
1 large sweet onion, diced
4 cloves garlic, minced
2 teaspoons kosher salt
3 pounds ground turkey (50-50 light and dark meat)
1/4 cup all-purpose flour
1/4 cup chili powder
3 tablespoons ground cumin
1/2 teaspoon freshly ground black pepper
Pinch of cayenne pepper
4 cups low-sodium chicken stock
2 15-ounce cans cannellini beans, with liquid

Steps:

  • In a blender or food processor, puree the roasted chiles and cilantro until smooth. Set aside.
  • In a large Dutch oven over medium-high heat, combine the olive oil, onion, garlic and salt. Cook until the onion is translucent, 5 to 6 minutes. Add the turkey and cook until browned and cooked through, breaking it up with a wooden spoon, 7 to 8 minutes.
  • Add the flour, chili powder, cumin, black pepper and cayenne and cook until fragrant, about 2 minutes. Deglaze the pot by adding the chicken stock and scraping up the browned bits from the bottom of the pot. Add the reserved pureed chiles and cilantro. Bring to a boil, then reduce the heat to a low simmer.
  • Add the beans and simmer, partially covered, until the turkey is tender and the chili has thickened, about 1 hour. Remove from the heat, cover and keep warm until serving. Serve with toppings.

1 pound ground turkey
Coarse salt and ground pepper
1 large onion, chopped
2 jalapenos, diced (seeded for milder taste)
2 teaspoons ground cumin
1 tablespoon tomato paste
2 cans (19 ounces each) cannellini beans, drained and rinsed
2 cans (14 1/2 ounces each) reduced-sodium chicken broth
1 cup water
Sour cream, cilantro, and radishes for garnish

Steps:

  • In a large, deep, skillet, heat oil over medium-high heat. Add ground turkey; season with salt and pepper. Cook, breaking up turkey with spoon, until browned, 9 minutes.
  • Add onion and jalapenos; cook until soft, 3 minutes. Stir in cumin and tomato paste; cook 2 minutes.
  • Add cannellini beans, chicken broth, and water; bring to boil. Reduce heat; simmer until thick, 15 to 20 minutes.

2 (4 ounce) cans canned green chile peppers, chopped
1 tablespoon ground cumin

ground white pepper to taste

5 cups chicken broth
2 cups shredded Monterey Jack cheese

Steps:

  • In a large pot over medium heat, combine the onion, garlic and ground turkey and saute for 10 minutes, or until turkey is well browned. Add the chile peppers, cumin, oregano, cinnamon, cayenne pepper to taste and white pepper to taste and saute for 5 more minutes.
  • Add two cans of the beans and the chicken broth to the pot. Take the third can of beans and puree them in a blender or food processor. Add this to the pot along with the cheese. Stir well and simmer for 10 minutes, allowing the cheese to melt.

2 lbs ground turkey
4 (15 ounce) cans cannellini beans
1 (15 ounce) jar alfredo sauce
4 -5 cups chicken broth
1 (8 -12 ounce) can tomatoes and green chilies (hot)
1 (7 ounce) can green chilies
1 yellow bell pepper
1 onion (med)
minced garlic (3 tablespoons)
cilantro (1 tablespoon)
white pepper (2 teaspoons)
cayenne pepper (2 teaspoons)
oregano (1 tablespoon)
cumin (1 tablespoon)
poultry seasoning (2 teaspoons)
2 1/2 cups shredded monterey jack cheese

Steps:

  • In a large pot, combine the onion, yellow pepper, garlic and ground turkey and sauté until turkey is well browned. Add the chile peppers, chicken and poultry seasoning, cumin, oregano, cilantro, cayenne pepper to taste, and white pepper to taste and continue to sauté.
  • Add the chicken broth and 3 cans of beans to the pot. Take the fourth can of beans and puree them in a blender or food processor. Add this to the pot along with the alfredo sauce and cheese. Stir and continue to simmer allowing the cheese to melt thru.

1 tablespoon baking cocoa
2 bay leaves
1 teaspoon salt

Steps:

  • In a Dutch oven or large soup kettle, cook the turkey and onions over medium heat until meat is no longer pink; drain. Add oregano and cumin; cook and stir 1 minute longer. Stir in tomatoes, broth, tomato sauce, chili powder, cocoa, bay leaves, salt and cinnamon. Bring to a boil. Reduce heat; cover and simmer for 45 minutes. Add beans; heat through. Discard bay leaves.

1 1/4 lb lean (at least 93%) ground turkey
2 teaspoons ground cumin
1 cup chopped onion (1 large)
1 poblano chile, seeded, chopped
2 cloves garlic, finely chopped
2 cans (15 oz each) Progresso™ cannellini beans, drained, rinsed
1 carton (32 oz) Progresso™ chicken broth (4 cups)
2 cans (4.5 oz each) Old El Paso™ chopped green chiles
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
Sour cream, if desired
Chopped fresh cilantro, if desired

Steps:

  • In 4-quart Dutch oven, heat oil over medium-high heat. Cook turkey and cumin in oil 6 to 8 minutes, stirring occasionally, until turkey is no longer pink; drain. Remove turkey; set aside.
  • Add onion and poblano chile to Dutch oven; cook over medium heat 5 minutes, stirring occasionally, until tender. Add garlic; cook 30 seconds.
  • Mash 1 can of the beans with potato masher; add mashed beans and remaining can of beans to Dutch oven. Stir in turkey, broth, green chiles, salt and pepper. Reduce heat to medium-low; simmer uncovered 15 to 20 minutes or until slightly thickened. Garnish individual servings with sour cream and cilantro.
