8 tablespoons unsalted butter at room temperature, plus butter for greasing the souffle dishes
2/3 cup granulated sugar, plus sugar for dusting the souffle dishes
6 ounces white chocolate, preferably imported, broken into small pieces
1/2 cup dark brown sugar
8 extra-large eggs at room temperature, separated
1 tablespoon pure vanilla extract
7 ounces unsweetened chestnut puree, available in cans
8 teaspoons confectioners' sugar

Steps:

  • Preheat the oven to 400 degrees. Position a rack in the center of the oven.
  • Butter eight individual souffle dishes, each with a one-and-one-half- cup capacity. Sprinkle each with a little granulated sugar and shake out the excess.
  • Put the chocolate pieces into a mixing bowl. Select a saucepan in which this bowl will fit neatly. Put an inch or so of water in the saucepan and bring to the simmer. Place the mixing bowl over, but not in, the water. Stir until the chocolate is melted and without lumps.
  • Remove the bowl from the heat and continue stirring until the chocolate is cooled almost to room temperature.
  • Put the eight tablespoons of butter and the brown sugar into the bowl of an electric mixer. Start beating the butter mixture while adding the yolks one at a time. Add the vanilla and chestnut puree and beat until smooth.
  • Scrape the chocolate into the butter mixture and mix only until blended. If this is overbeaten, the mixture will become warm and separate.
  • Beat the egg whites with the one- third cup of granulated sugar until they are shiny and hold soft peaks. Add about one-quarter cup of the beaten whites to the chocolate mixture.
  • Scrape the chocolate mixture into the remaining beaten whites and fold gently. Pour an equal portion of the mixture into each of the prepared souffle dishes.
  • Arrange the souffle dishes on a baking sheet and place in the oven. Bake 20 minutes or until the souffles are puffed and browned. Sift one teaspoon of confectioners' sugar over each souffle and serve.

5 tablespoons all-purpose flour
1/4 teaspoon salt
5 ounces white chocolate (chopped finely)
3 large egg yolks (room temperature)
6 large egg whites (room temperature)
1/4 teaspoon cream of tartar
1 teaspoon vanilla extract
1 scoop of butter
Dusting: powdered sugar
Garnish: fresh raspberries

Steps:

  • Gather the ingredients.
  • Preheat oven to 375 F.
  • Butter a large soufflé dish and sprinkle it with 1/4 cup granulated sugar; set the prepared dish aside.
  • Stir together the salt, all-purpose flour, and remaining 1/4 cup plus 1 tablespoon sugar; set the mixture aside.
  • Melt the white chocolate pieces in a heatproof bowl or double boiler over barely simmering water, stirring the chocolate constantly to avoid burning it. (Even a small amount of overheated chocolate will ruin an entire recipe.)
  • Once the chocolate is melted, remove the bowl from heat and stir in the egg yolks until the mixture is thoroughly combined.
  • In a separate bowl, beat the egg whites with the cream of tartar on medium-high speed until they hold soft glossy peaks .
  • Continue beating the egg whites on high speed, add the vanilla, and then gradually add the salt-flour-sugar combination until the egg whites hold stiff glossy peaks.
  • Gently stir 1/3 of the egg whites into the chocolate mixture, then carefully fold in the remaining whipped egg whites. The chocolate mixture should be evenly colored and light and bubbly, without egg white streaks or marbling.
  • Spoon the soufflé mixture into the prepared dish and allow it to rest, covered, for up to 30 minutes or bake right away for 25 to 30 minutes (slightly longer at high altitudes) until the soufflé has risen with a crusty exterior.
  • Serve the soufflé with a dusting powdered sugar if desired.

Steps:

  • Preheat the oven to 325 degrees F.
  • Toast the hazelnuts in the oven until golden brown and fragrant, about 10 minutes, checking often. Remove the skins from the nuts by rubbing them in a towel while they are still hot. Grind in food processor until they are powdered.
  • In a saucepan, combine the flour, milk, egg yolks, 6 ounces of the sugar, and the salt. Place the saucepan over medium heat, and cook until the mixture pulls away from the sides of the pan.
  • Melt the white chocolate in the top of a double boiler. Add the melted chocolate to the flour mixture and stir well. Set the mixture aside to cool and rest.
  • Melt the butter. Brush the inside of 4 (2-ounce) souffle molds with the melted butter. Sprinkle some sugar inside the molds and tap out the excess to leave a light coating of sugar all around the inside of the mold.
  • Whip the egg whites to soft peaks. Gently fold the egg white into the chocolate mixture, alternating with the hazelnut powder. Place the souffle mixture into the prepared molds. Bake for 18 minutes. Serve immediately.

Steps:

  • Put an oven rack in the middle position and preheat the oven to 350 degrees F. Butter a 6-cup souffle dish or casserole.
  • Melt the chocolate and butter in a large bowl set over a pan of barely simmering water, stirring frequently. (Or in a microwave-safe glass bowl in a microwave at 50 percent power for 2 to 3 minutes, stirring well every 30 seconds until the chocolate is melted and smooth.) Cool completely.

  • Bake about 30 to 35 minutes or until the center is still jiggling and a toothpick inserted in the center comes out with moist crumbs adhering to it. Serve the souffle warm.

  • Break the chocolate into pieces and process in a food processor until very fine.
  • Heat the creme fraiche to boiling point and with the processor's motor running, pour it through the feed tube in a steady stream. Process a few seconds until smooth.
  • Separate the eggs and add the yolks to the hot chocolate mixture. Process for a few seconds to incorporate. Then transfer the mixture to a bowl and allow it to cool until it has thickened to spreading consistency.

2 ounces 70% dark chocolate, broken into pieces
1 tablespoon butter
1 tablespoon all-purpose flour
4 ⅓ tablespoons cold milk
1 pinch salt
1 pinch cayenne pepper
1 large egg yolk
2 large egg whites
1 pinch cream of tartar
1 tablespoon white sugar, divided

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a rimmed baking sheet with parchment paper.
  • Brush bottom and sides of 2 (5-ounce) ramekins lightly with 1 teaspoon melted butter; cover bottom and sides right up to the rim. Add 1 tablespoon white sugar to ramekins. Rotate ramekins until sugar coats all surfaces. Pour off extra sugar.
  • Place chocolate pieces in a metal mixing bowl. Place bowl over a pan of about 3 cups hot water over low heat. Do not let water boil or come to a simmer.

  • Place 2 egg whites in a mixing bowl; add cream of tartar. Whisk until mixture begins to thicken and a drizzle from the whisk stays on the surface about 1 second before disappearing into the mix, 2 or 3 minutes. Add 1/3 of sugar and whisk in. Whisk in a bit more sugar about 15 seconds; whisk in the rest of the sugar. Continue whisking until mixture is about as thick as shaving cream and holds soft peaks, 3 to 5 minutes.
  • Transfer a little less than half of egg whites to chocolate. Mix until egg whites are thoroughly incorporated into the chocolate, 1 or 2 minutes. Add the rest of the egg whites; gently fold into the chocolate with a spatula, lifting from the bottom and folding over. Stop mixing after the egg white disappears. Divide mixture between 2 prepared ramekins. Place ramekins on prepared baking sheet.
  • Bake in preheated oven until scuffles are puffed and have risen above the top of the rims, 12 to 15 minutes.

Soufflé has earned a reputation for difficulty, but following a few key techniques will reward you with a masterpiece every time.

1/2 cup sugar, plus more for dusting
5 ounces bittersweet chocolate, chopped
2 ounces semisweet chocolate, chopped
1 1/3 cups milk
6 large egg yolks plus 8 large egg whites, room temperature
6 tablespoons all-purpose flour
2 tablespoons brandy (optional)
1 teaspoon pure vanilla extract
Salt
Pinch cream of tartar (if not using a copper bowl)
Creme Anglaise

Steps:

  • Preheat oven to 400 degrees, with rack in lower third. Do not open oven door until ready to bake. Brush outer lip of a 2-quart souffle dish with melted butter. Tie a sheet of parchment around dish with kitchen twine so it extends 3 inches above rim. Brush inside of dish and collar with melted butter. Dust with sugar (this adds texture, which helps the souffle climb); tap out excess. Chill dish in freezer 15 minutes.
  • Stir chocolates in a large heatproof bowl set over a saucepan of simmering water until smooth. Scald the milk (heat it until it's just about to simmer) in a saucepan over medium heat; remove from heat. Using an electric mixer fitted with the whisk, beat 6 tablespoons sugar and the yolks on high until pale, about 4 minutes. On low, beat in flour. Beat in half the hot milk, ladling it in a little at time (this is called tempering and prevents the yolks from scrambling).
  • Whisk mixture into pan of hot milk; bring to a boil over medium-high heat, whisking. Reduce heat to low; simmer until thick, about 2 minutes. Pour into chocolate. Stir in brandy (if desired), vanilla, and a pinch of salt. (This mixture can be refrigerated, 2 days. Rewarm in a heatproof bowl set over a pan of simmering water.)
  • Egg whites are best whipped when they're at room temperature (they attain more volume). Using a balloon whisk, beat whites and a pinch of salt in a copper bowl until foamy. (Or beat with an electric mixer in a stainless-steel bowl with cream of tartar.)
  • Add 1 tablespoon sugar; beat until whites almost hold stiff peaks. Add remaining tablespoon sugar, and beat until peaks are stiff (meaning they stand straight up when whisk is lifted).
  • Spoon one-third of egg whites onto base (incorporating in batches prevents them from deflating). Fold them in: Cut through center of mixture with a large rubber spatula, then gently turn spatula over. Rotate bowl a quarter turn; continue folding whites and turning bowl until mostly combined.
  • Fold remaining whites into base, one-third at a time.
  • The mixture is ready when the whites are fully incorporated.
  • Pour mixture into prepared dish. Place on a rimmed baking sheet; this helps you move souffle in and out of oven. Bake 15 minutes. Reduce temperature to 375 degrees; bake until set, 20 minutes. Remove collar; serve immediately with creme anglaise if desired

2 cups chopped rhubarb
1/2 cup white sugar
2 teaspoons vanilla extract

1 1/3 cups whipping cream
2 eggs, separated

2 tablespoons brandy or 2 tablespoons rum
3 tablespoons white sugar
1 dash salt
3 -5 seasonal berries (to garnish)

Steps:

  • THE RHUBARB: Simmer rhubarb, sugar and vanilla until soft.
  • Puree, then set aside to cool.
  • THE MOUSSE: Prepare 6 x 4oz ramekins by wrapping outsides with parchment or waxed paper rings to stand 2 inches above the ramekin's lip.
  • Secure parchment with an elastic band or string.
  • Over a pot of simmering water (or in a microwave) melt chocolate and set aside to cool. (Keep water simmering on stove.)
  • Whip cream to soft peaks and chill.
  • Over simmering water,whisk together egg yolks, water, brandy and 2 tbsp sugar for 2 minutes to warm eggs.
  • Remove from simmer, and whisk chocolate into egg yolk mixture.
  • Let mixture sit until at room temperature.
  • Fold in whipped cream in two additions just until incorporated.
  • Whip egg whites to medium-peak, and add the remaining 1 tbsp of sugar and a dash of salt.
  • Fold one third of the egg-whites into mousse followed by the remaining two thirds.
  • Quickly fold in the rhubarb.
  • Spoon mousse into the ramekins, filling up over the edge of each ramekin.
  • Freeze overnight- or at least 6 hours.
  • TO ASSEMBLE: Simply remove the parchment/waxed paper and garnish the frozen mousse (what IS the plural of"mousse"?) with a few fresh berries.
