WHITE CHOCOLATE FUDGE
This is the white chocolate lovers' equivalent to heaven. Creamy sweet fudge with pecans. Serve it alongside traditional chocolate fudge for a beautiful presentation.

- Grease an 8x8 inch baking dish. Set aside.
- In a medium bowl, beat cream cheese, sugar, and vanilla until smooth.
- In the top of a double boiler over lightly simmering water, heat white chocolate, stirring until melted and smooth.
- Fold melted white chocolate and pecans into cream cheese mixture. Spread into prepared baking dish. Chill for 1 hour, then cut into 1 inch squares.

WHITE CHOCOLATE FUDGE
This recipe is similar to one of my favorite dark fudge recipes. I'll frequently make my white fudge to give as gifts for Christmas and Valentine's Day. It's an interesting contrast to all of the darker candies-and the cream cheese gives it such a nice rich and creamy texture! My husband and I live on the farm where he was born and raised. We have five children, ranging in age from 17 to 7. I enjoy playing the organ, singing, reading, walking and may crafts.

- Line a 13x9-in. pan with foil; grease foil with 1-1/2 teaspoons butter., In a heavy saucepan, combine sugar, milk and remaining 3/4 cup butter; bring to a rapid boil over medium heat, stirring constantly. Boil 4 minutes, stirring constantly. Remove from heat; stir in baking chips and marshmallow creme until melted. Stir in vanilla. Immediately spread into prepared pan. Refrigerate until firm, 1-2 hours. , Using foil, lift fudge out of pan. Remove foil; cut fudge into 1-in. squares. Store between layers of waxed paper in an airtight container.

CHOCOLATE AMARETTO FUDGE

- Pour 3/4 cup amaretto liqueur and 1/2 cup condensed milk into a large saucepan over medium-low heat. Add 3 cups sugar and stir until dissolved. Add 1/4 cup butter, semisweet chocolate chips, dark chocolate chips, and 1/2 cup white chocolate chips; stir until mixture is smooth and all chocolate has melted, about 5 minutes. Reduce heat to low; stir occasionally to prevent the mixture from burning.
- Heat 3/4 cup sugar, 2 tablespoons condensed milk, and 2 tablespoons amaretto in a small saucepan over medium-low heat; cook and stir until sugar is dissolved, about 5 minutes. Add 1 1/2 cups white chocolate chips, 3 tablespoons butter, and red food coloring; stir until smooth and coloring is evenly distributed, about 3 minutes.
- Remove both saucepans from heat. Pour dark chocolate mixture into a square 10-inch aluminum foil pan. Let sit for 1 to 2 minutes. Drop spoonfuls of the white chocolate mixture on top and swirl into dark chocolate layer with a butter knife or toothpick. Shake pan lightly to settle fudge. Refrigerate until firm, about 1 hour and 30 minutes. Cut into 1-inch squares.

Steps:
- Brush six 3.5cm deep, 5 x 8cm loaf pans or an 18cm (base measurement) square cake pan with the melted butter to grease. Line the base and sides with non-stick baking paper, allowing the paper to overhang the sides.
- Combine the sweetened condensed milk, brown sugar, butter and glucose in a 2-litre (8-cup), heatproof, microwave-safe glass jug or bowl. Cook, uncovered, on Medium-High/650watts/70%, using a balloon whisk to stir every 2 minutes, for 6-8 minutes or until the mixture begins to boil.
- Continue to cook on Medium-High/650watts/70%, stirring every minute, for 3-4 minutes or until the mixture is thick, golden and boils rapidly. With a tea towel or oven mitt, very carefully place the jug on a board and set aside for 1 minute or until the bubbles subside.
- Add the white chocolate and use a wooden spoon to stir continuously until the chocolate melts and the mixture is smooth. Stir in the walnuts and liqueur and mix well.
- Spoon the mixture evenly into the prepared pans. Set aside for 2 hours to cool to room temperature and become firm. Remove from pan, wrap in greaseproof or non-stick baking paper and store in an airtight container in the fridge. Cut the fudge into 1cm-thick slices to serve.
