WHITE PINEAPPLE JELLO
This recipe was shared with us from some dear friends. My husband and her husband served in the same National Guard unit in Utah. We spent a Thanksgiving with them and this was one of the outstanding salads she prepared.

Steps:
- Dissolve gelatin in cold water.
- Add hot water.
- Cream the cream cheese, lemon juice and sugar.
- Drain pineapple. Add to cheese mixture. Stir in gelatin.
- Add walnuts.
- Let stand 10 minutes then fold in cool whip.
- Refrigerate until time to serve.
SIMPLE PINEAPPLE JELLO
Chill jello mixture about 45 minutes so that it becomes syrupy before adding the pineapple. Make ahead at least 4 hours.Salad, dessert, side, lunch or dinner.

Steps:
- Drain Pineapple juice into a 2 cup measure. [Makes about 1 cup. May add water to make one cup if needed.] Heat juice in microwave. Add jello powder and stir and allow to sit for 2 minutes. Add 1 cup of water to make a total of 2 cups. Pour into refrigerator dish. Refrigerate for about 45 minutes until it has become syrupy consistency on a spoon. Stir in the pineapple. Cover and refrigerate for four hours.

I combined two favorite cake recipes to come up with this one. Always a hit parties and potlucks. The topping really makes this one great. Lemon Jell-O® works well too.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Beat cake mix, 1 1/4 cup water, vegetable oil, and egg whites together in a bowl using an electric mixer in medium speed until combined, about 2 minutes. Pour batter into the prepared baking dish.
- Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, 29 to 34 minutes. Cool for 15 minutes.
- Stir pineapple-flavored gelatin with boiling water in a bowl until dissolved; stir in cold water.
- Poke holes into cake using a skewer or straw; spoon gelatin mixture evenly over cake. Refrigerate for 4 hours.
- Mix pineapple and pudding mix in a bowl; fold in whipped topping. Spread mixture evenly over chilled cake; refrigerate at least 2 more hours.
