WHOLE-GRAIN SPELT AND CORNMEAL BISCUITS
Gently pat the dough flat instead of rolling with a rolling pin: patting preserves all the pockets of fat needed for flaky biscuits; rolling pancakes them for small, dense pucks. Cutting the biscuits into squares rather than stamping out rounds solves two issues in one: squares mean no leftover scraps, which bake flatter when rerolled. You also entirely avoid the twisting motion of using a cutter that can also lead to flat biscuits. Spelt flour lends a deep nutty flavor to the biscuits and an extra dose of whole grains; cornmeal adds texture. You can use white whole-wheat flour if you can't find spelt.

- Preheat oven to 450°F.
- Weigh or lightly spoon flour into dry measuring cups; level with a knife. Combine flour, cornmeal, baking powder, baking soda, and salt in a bowl, stirring with a whisk. Cut butter into flour mixture using a pastry blender or 2 knives until mixture resembles coarse meal. Stir in buttermilk just until combined.
- Turn dough out onto a lightly floured surface. Knead 2 to 3 times or until dough comes together. Pat dough into a 10- x 8-inch rectangle; cut into 16 squares. Place biscuits 2 inches apart on a parchment paper-lined baking sheet. Bake for 10 to 12 minutes or until browned.

SPELT BISCUITS
I have made these biscuits for health nuts and non healthy eaters alike, but there are never leftovers. These are heavier on account of the spelt flour, but the nutty whole grain flavor is divine. Best when served fresh out of the oven, eaten with butter and honey or jam.

- Preheat the oven to 450 degrees F (220 degrees C).
- In a large bowl, stir together the flour, baking powder and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually stir in milk until dough pulls away from the sides of the bowl. You may need to adjust the amount of milk. Pat out on a floured surface to about 1 inch thick. Cut into biscuits and place on a baking sheet.
- Bake in the preheated oven for 12 to 15 minutes, until the bottoms are golden brown.

- Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
- Whisk together both flours, the baking powder, sugar, 1/2 teaspoon salt and 1/4 teaspoon pepper in a large bowl. Work in the butter using your fingers or a pastry cutter until the mixture resembles small peas.
- Add the milk and stir until just incorporated. Gently knead into a ball, and then pat into a 1-inch-thick rectangle. Cut into twenty-four 1 1/2-inch squares and place on the prepared baking sheet, leaving about 1 inch between each biscuit. Sprinkle an additional 1/4 teaspoon salt and pepper on top.
- Bake until golden brown, about 20 minutes. Cool on the baking sheet and serve warm.
WHOLE GRAIN SPELT BISCUITS
The basis for this recipe comes from "spelt biscuits" from allrecipes.com. Then I added a few delightful seeds to get an amazing flavoured dinner roll! I used a mix of coconut oil and butter, but feel free to use one or the other. Also, I don't always have buttermilk, so I mix half yogurt with half water.

- In a large bowl, mix together the flour, baking powder, salt, and seeds.
- Cut in the coconut oil and butter to resemble coarse crumbs (a pastry blender can come in handy here, so can your hands).
- Add the buttermilk and mix until blended.
- Cut dough into 6 equal portions and arrange on a baking sheet.
- Bake at 220C for 12-15 minutes, until golden brown.
