Friends of mine in America, and British friends who went to private schools, have never heard of mint or green custard, and they usually cringe at the idea of it. But anyone having had a typical State education will remember fondly the sight, smell and taste of green custard, especially when it is served with chocolate concrete, try Wicklewood's Schooldays Chocolate Concrete (Gluten Free)# 439397. It is a favourite with kids and adults love it for the taste and the nostalgia For a more grown up version you could stir in 2 tablespoons of Crème de Menthe before serving.

2 tablespoons cornflour
3 tablespoons sugar (or sugar substitute)
1 pint milk
3 -4 drops , food colouring
1 teaspoon peppermint, essence

Steps:

  • In a bowl, mix the cornflour, sugar and enough of the milk (about an ounce) to make a smooth paste.
  • Meanwhile heat the remaining milk until almost boiling.
  • Remove from the heat and stir into the cornflour paste, stirring well.
  • Pour back into the pan and return to the heat, continue to boil, stirring continuously until thickens.
  • Remove from heat and stir in the colouring and peppermint, mix well.
  • Serve hot with chocolate concrete or chocolate brownies.

I think it is the custard in this pasta dish that makes it exclusive to expectant mums,,,and anyone they decide to let into the secret. I devised this dish while pregnant with my youngest child, and the only way I could satisfy my constant craving and keep my eldest daughter, who lives on pasta, away from my creation was to tell her it was custard instead of cheese sauce... It worked, as everyone knows pregnant women crave strange foods,,,and who is going to be brave enough to put it to the test?

Number Of Ingredients 12

2 cups broccoli florets
1 1/2 cups mature cheese, grated
1 cup cooked ham, diced
1 cup sweetcorn
3 tablespoons butter
3 cups milk
3 tablespoons flour
1/2 teaspoon prepared mustard
1 cup spring onion, chopped
2 cups pasta (shapes of your choice)
salt and pepper (to taste)
1/4 cup spring onion, chopped (for garnish)

Steps:

  • Cook the pasta according to manufacturer's instructions, drain and set aside.
  • Cook the broccoli in boiling salted water for 15 mins, drain and set aside.
  • Meanwhile, in a large pan, gently melt the butter and remove from heat.
  • Add the flour and blend together until a smooth paste is formed.
  • Return to the heat, gradually adding the milk and beat into a smooth consistency( ensure the flour is cooked out thoroughly or the resulting sauce will taste floury).
  • Stir in the cheese and prepared mustard.
  • Season to taste.
  • Add the cooked pasta, broccoli and all other ingredients (except onion for garnish) to the cheese sauce,coat well.
  • Adjust seasoning to taste.
  • Garnish with remaining spring onion and serve with some focaccia bread or a crusty roll.

100 g custard powder
200 g softened butter
2 eggs
4 tablespoons milk
140 g caster sugar
100 g gluten-free flour, mix
1/2 teaspoon baking powder
1/2 teaspoon guar gum
icing
150 g icing sugar
water
candy sprinkles

Steps:

  • Heat the oven to 180C and place 12 paper cases in a muffin tray.
  • Beat the custard powder with the butter eggs and milk, then stir in the sugar. (don't panic if it looks curdled,,,it will be fine).
  • Fold in the sifted flour mix, baking powder and guar gum.
  • Devide the mixture between the cases.
  • Bake for 20 minutes.
  • Leave to cool completely.
  • Mix the icing sugar with about 3 tablespoons water to form a thick paste.
  • Top each bun with a teaspoon of icing and sprinkle with chosen decoration.
