CHRISTMAS MORNING WIFE SAVER (BREAKFAST CASSEROLE)



Christmas Morning Wife Saver (Breakfast Casserole) image

I certainly cannot take credit for this recipe but it is a Christmas classic. There are lots of little things to personalize this recipe. I have suggested using red and green bell peppers because they are Christmas colors! I also use grated cheese and spread it over the Canadian bacon instead of cheese slices. I have used regular bacon in this recipe, but I find that it overpowers the rest of the flavors. Make this tasty breakfast dish the night before and just pop it in the oven on Christmas morning; let it cook while you open gifts and sip your rum-spiked coffee!

16 slices bread, crusts removed - divided
16 slices Canadian bacon
16 slices sharp Cheddar cheese
6 large eggs
½ teaspoon salt
½ teaspoon ground black pepper
1 teaspoon dry mustard
¼ cup minced onion
2 tablespoons diced green bell pepper
2 tablespoons diced red bell pepper
2 teaspoons Worcestershire sauce
1 dash hot sauce
3 cups whole milk
½ cup butter, melted
1 cup crushed corn flakes cereal

Steps:

  • Butter a 9x13-inch baking dish. Cut and fit 8 slices of bread to fit over entire bottom of dish. Cover bread with slices of Canadian bacon and sharp Cheddar cheese. Cut and fit remaining 8 slices of bread to completely cover bacon and cheese.
  • Whisk eggs with salt and black pepper in a bowl. Whisk dry mustard, onion, diced green and red bell pepper, Worcestershire sauce, and hot sauce into eggs. Whisk in milk until egg mixture is smoothly combined. Pour egg mixture evenly over the casserole. Cover the dish and refrigerate overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Pour melted butter evenly over the casserole and sprinkle corn flake crumbs over the top.
  • Bake in the preheated oven until set and lightly browned, about 1 hour. Let casserole stand for 10 minutes before serving.

A great breakfast or brunch dish if you have company overnight. Ooey, gooey and tasty!

1 cup light brown sugar
½ cup light corn syrup
¼ cup butter
10 slices French bread
2 eggs
2 ½ cups 1% low-fat milk
1 teaspoon vanilla extract
1 tablespoon all-purpose flour
1 pinch salt
2 tablespoons white sugar
1 teaspoon ground cinnamon

Steps:

  • Grease a 9x13 inch baking dish. Stir the brown sugar, corn syrup, and butter together in a saucepan over medium-high heat until bubbly. Pour into the prepared baking dish, then arrange the sliced French bread evenly over the syrup. Whisk together the eggs, milk, vanilla extract, flour, and salt until smooth. Pour over the French bread. Cover, and refrigerate overnight.
  • Preheat oven to 350 degrees F (175 degrees C). Stir together the white sugar and ground cinnamon; sprinkle over the french toast.
  • Bake in preheated oven until golden brown on top, about 50 minutes.

I got this recipe from my sister, who is an amazing cook! We have it often at Christmas for breakfast. The great part is that you make it the night before, and have minimal work in the morning. It's fantastic! :)

12 -16 slices white bread
1 (1 lb) package cheddar cheese (I prefer med.)
6 -8 slices back bacon or 2 cups chopped ham
8 -10 eggs
1 teaspoon dry mustard
1/2 cup minced onion
1/2 cup green pepper
salt & pepper
1/2 cup butter, melted
1 cup crushed corn flakes

Steps:

  • Grease the bottom of 11 x 13 pan.
  • Remove crusts from bread and layer them in bottom of pan.
  • Add a layer of sliced cheese, and then a layer of ham followed with a final layer of bread with crusts removed.
  • Set aside.
  • In a medium bowl beat the eggs, then add dry mustard, minced onion, chopped green pepper, and salt& pepper to taste.
  • Pour egg mixture over bread, cheese and ham.
  • Cover and refrigerate overnight.
  • In the morning preheat oven to 350°F.
  • Mix melted butter to the crushed corn flakes and sprinkle over top.
  • Bake for 1 hour.

16 slices white bread, crust removed
Place one layer of bread slices on bottom of greased 9x13 inch baking dish.
6 thin slices ham
6 thin slices Swiss cheese
Top bread with layer of ham and cheese, then another layer of bread.
6 eggs
1 tsp dry mustard
1/2 tsp salt
1/4 tsp pepper
1 tsp Worcestershire sauce
dash Tabasco sauce
3 cups milk
Beat eggs with next 6 ingredients. Pour evenly over bread.
1/4 cup each: chopped green and red peppers, zucchini, sauteed broccoli
Just before baking, sprinkle on vegetables. Cover and refrigerate overnight.
1 cup cornflakes
1/4 cup melted butter
Toss cornflakes with melted butter and sprinkle over casserole. Bake at 350 F for 50-60 minutes until puffed and golden. Let stand 10 minutes before serving.

16 slices bread, crust removed
sliced ham
sliced cheese
6 eggs
1/2 teaspoon salt
1/2 teaspoon pepper
1/2-1 teaspoon dry mustard
1/4 cup minced onion
1/4 cup green pepper, finely chopped (green capsicun)
1 -2 teaspoon Worcestershire sauce
3 cups whole milk
1 dash Tabasco sauce (optional)
1/4 lb butter, melted
enough crushed corn flakes, to cover

Steps:

  • In a 9"X 13" buttered pan, put 8 slices of bread that the crust has been removed.
  • Add ham layered over bread.
  • Lay cheese over ham.
  • Cover with rest of bread.
  • In bowl beat eggs, salt and pepper.
  • To egg mixture add dry mustard, onion, green pepper, worcestershire sauce, milk and Tabasco (optional) Pour over bread, cover and let stand in fridge overnight.
  • In the morning cover with crushed corn flakes.
  • Melt 1/4 1b butter and pour over top of flakes.
  • Bake uncovered for 1 hour at 350 degrees F.
  • When baked let sit for 10 minutes before serving.
