MUSHROOM & GOAT'S CHEESE TARTLETS
Topped with sautéed mushrooms, walnuts and goat's cheese, these puff pastry tarts make a easy dinner party dish, or midweek meal

Steps:
- Heat oven to 200C/180C fan/gas 6. Unroll the pastry and cut into 4 rectangles. Use a sharp knife to score a 1cm border around each, place on a baking tray, then chill until needed.
- Heat the butter and oil in a large frying pan, add the mushrooms and cook over a high heat, stirring, for about 10 mins, or until golden brown and almost all the liquid has evaporated. Season, add the garlic and walnuts, and cook for 1 min. Set aside.
- Put the goat's cheese in a bowl, season and stir through the thyme leaves. Remove the pastry from the fridge and spread the cheese over the centres. Top with the mushroom mixture, then brush the edge of the pastry with beaten egg for a glossier finish, and bake for 20-25 mins or until the pastry is golden and crisp. Top with the remaining thyme sprigs and a good grinding of black pepper. Serve with a baby leaf salad.

Steps:
- pre-heat oven 350.
- saute mushrooms in a large pan over high heat until all moisture has evaporated. Add butter ,shallots,lemon zest and garlic. Cook for 1-2 minutes.
- Remove from heat and stir in goat cheese and herbs. Season with salt and pepper to taste. Let cool.
- Once cooled, place a spoonful into phyllo tart shells and bake about 5 minutes or so,.

MUSHROOM AND GOAT CHEESE TART

- Melt 2 tablespoons butter in heavy large skillet over medium-high heat. Add mushrooms and sauté until soft and dry, about 5 minutes. Add remaining 1 tablespoon butter to skillet, then shallot. Sauté until shallot is soft, about 4 minutes longer. Add nutmeg. Season mushroom filling with salt and pepper. Cool.
- Line baking sheet with parchment paper. Roll out puff pastry onto lightly floured surface to 12x15-inch rectangle. Cut one 12x5-inch rectangle, two 11x1/2-inch strips and two 5x1/2-inch strips from pastry. Place rectangle on prepared baking sheet. Pierce all over with fork. Using pastry brush, brush all strips with egg. Place short strips, egg side down, atop ends of pastry to form raised crust edge; place long strips, egg side down, atop long sides of pastry. (Mushroom filling and tart shell can be prepared 1 day ahead. Cover separately and refrigerate.)
- Preheat oven to 400°F. Bake tart shell until golden, about 15 minutes. Maintain oven temperature. Spread cheese evenly over bottom of hot tart shell. Top with mushrooms. Sprinkle with thyme, salt, and pepper. Drizzle with cream. Bake until heated through, about 10 minutes. Serve hot.
OVEN-ROASTED WILD MUSHROOMS WITH GOAT CHEESE AND CHILE OIL
Steps:
- Preheat oven to 425 degrees F.
- In a large mixing bowl, combine the mushrooms with the olive oil, and shallots, then season with salt and black pepper.
- Arrange the mushrooms evenly in one layer in a heavy roasting pan and roast for 15 minutes or until tender. Remove the mushrooms from the roasting pan and place into a large cazuela or baking dish. Drizzle with 1/2 cup of chile oil and top with the slices of cheese. Bake until hot, 5 to 8 minutes. Remove from the oven, garnish with thyme, and drizzle with the remaining chile oil. Serve with lots of crusty French bread.
- Place all ingredients in a blender and puree. Strain mixture through a fine strainer. Reserve. This may be done up to one day in advance.

- Preheat oven to 375°F (190°C). Combine Knorr® Cream of Mushroom Dry Soup Mix, milk, goat cheese, eggs and thyme in medium bowl. Stir well, and season, if desired, with salt and black pepper. Let mixture stand for 10 minutes.
- Arrange tart shells on baking sheet. Spoon soup mixture into shells. Bake 15 minutes or until centres are set. Remove and serve immediately.
- Tip: Prepare a pie-sized pastry crust with Becel® Buttery Taste and use filling to make a quiche for a quick supper.

- In a large saute pan over medium heat, melt butter. Add the shallot and garlic, stirring constantly for 1 minute. Add the chopped mushrooms. Cook until the mushrooms begin to soften, about 5 minutes. Transfer the mushroom mixture to a food processor and add the goat cheese. Add the oil and parsley. Pulse until the mixture comes together. Season with salt and pepper and pulse again.
- Spoon mushroom filling into tartlet shells and place on a baking sheet. Bake in a preheated 350 degree oven for 10 minutes. Garnish with sliced mushroom and chopped chive before serving.
GOAT CHEESE AND MUSHROOM TART
This is such a simple appetizer but packs loads of flavor. It's a huge hit at both parties and family meals. I found the original recipe in a community cookbook and it's become a party staple. Prep time does not include time to let the filling cool.

- To make the spread:.
- Clean the mushrooms, remove stems and cut into quarters.
- Place the mushrooms and onions in a food processor and finely chop ~ I just chopped finely by hand.
- Heat a skillet over medium heat and melt the butter.
- Add the mushroom/onion mix, salt and thyme and saute for 5 minutes.
- Reduce heat to low and saute for 5 minutes longer or until most of the moisture has evaporated and the mixture is like a paste in texture.
- Spoon into a small bowl and let it stand until cool then add lemon juice, mayo and Worcestershire sauce and mix well.
- This filling may be made 1 day ahead and refrigerated until needed.
- For the tart:.
- Preheat the oven to 450º. If using a refrigerated pie crust like I do, let pie crust stand at room temperature according to package directions.
- Unroll the pastry on a parchment paper lined baking sheet.
- Spread the mushroom filling evenly to within 1 1/2 inches from the edge.
- Sprinkle with cheese and thyme.
- Fold in one edge of the pastry toward the center covering part of the filling.
- Work around the edge, pleating as you go.
- Bake for 10 minutes.
- Then reduce heat to 350º and bake 20 to 25 minutes or until pastry is golden brown.
- Remove from oven and cool pan on wire rack for 10 minutes before serving.
WILD MUSHROOM TARTLETS

- Roll the pastry out on a floured surface and cut out 4 circles, about 15cm wide. Leave to chill on a lined baking tray in the fridge.
- Heat oven to 200C/fan 180C/gas 6. Heat a large frying pan until hot, then add the butter and fry the mushrooms for 5 mins until there is no liquid left in the pan. Season, then take off the heat and mix mushrooms with the Parmesan, parsley and garlic.
- Score a 1cm border around the edge of each tart, then spoon the mushrooms into the centre circle. Brush the edge with beaten egg, then bake the tarts for 20 mins until puffed up and golden. Serve immediately.

- Roll the dough into a 1/8-inch-thick rectangle on a floured surface and with a floured 3 1/2-inch-long oval cutter cut 20 ovals from it. Fit ovals into 20 lightly oiled 3 3/4-inch-long barqutte tins and chill the tartlet shells for 30 minutes. Weight the shells with empty barquette tins or line them with foil, fill the tins or foil with the rice and bake the shells in a jelly-roll pan in the lower third of a preheated 425°F. oven for 10 minutes. Remove the rice and tins or foil carefully, bake the shells for 5 to 10 minutes more, or until they are golden, and let them cool in the pan on a rack.
- In a bowl let the porcini soak in boiling water to cover for 30 minutes or until they are softened, drain them, reserving the soaking liquid for another use, and discard any tough stems. In a large skillet cook the shallots in the butter over moderately low heat, stirring, until they are softened. In a food processor chop fine the porcini with the white mushrooms, add the mixture to the shallot mixture, and stir in the tarragon. Cook the mixture, stirring, until the liquid the mushrooms give off is evaporated, stir in the flour, and cook the mixture, stirring, for two minutes. Stir in the Sherry, the sour cream, the lemon juice, and salt and pepper to taste and cook the filling, stirring for 5 minutes, or until thickened. Remove the skillet from the heat and let the filling cool. The filling may be prepared up to this point 2 days ahead and kept covered and chilled.
- Stir the parsley into the filling and divide the filling among the shells, smoothing the tops. Bake the tartlets in the lower third of a preheated 375°F. oven for 10 minutes, or until heated through, arrange 2 of the enoki-dake, trimmed, on each tartlet, and bake the tartlets for 2 minutes more. Loosen the tartlets from the tins with the tip of a small sharp knife and transfer them carefully to serving plates.
LEEK, MUSHROOM AND GOAT CHEESE TART
This savory tart is built upon a layer of store-bought puff pastry and topped with goat cheese, fennel, mushrooms and leeks. It makes an impressive (and easy) party appetizer or weeknight dinner for two.

- Heat oven to 400 degrees. Trim fennel of green top and root end, reserving fronds, and quarter bulb from top to bottom. Using a mandoline or very sharp knife, cut fennel and leeks into paper-thin slices. Clean and slice mushrooms.
- Heat 1 tablespoon oil in a skillet over medium heat; add fennel and leeks and sauté until just tender but not brown, about 6 minutes. Transfer to a bowl and set aside. Heat remaining teaspoon of oil in skillet over medium-high heat; add mushrooms and sauté until they release all their liquid and most of it boils away, about 5 minutes. Combine fennel mixture with mushrooms and sauté together briefly; season with salt and pepper. Remove pan from heat.
- Unfold puff pastry onto lightly floured surface; cut in half lengthwise to form two long rectangles. Gently roll out each rectangle to approximately 5 by 14 inches and place on cookie sheet (or cut into two circles, if desired). Trim edges by 1/4 inch strips all around; set strips aside. Break one egg into a small bowl; beat slightly. Brush edges of pastry with some egg. Use trimmed strips to make a raised border on each. (Or, fold pastry edges over to form a rim.) Brush entire surface with remaining beaten egg. Prick interior of pastry all over with a fork. Bake until pale gold, about 10 minutes. If pastry has puffed up inside edge, press it down gently. Set aside.
- Meanwhile, combine remaining eggs with 6 ounces goat cheese and blend until smooth. Spread onto pastry. Return to oven and bake just until set, about 4 minutes. Remove from oven and spread with mushroom-leek mixture. Crumble remaining cheese on top. Just before serving, broil tarts on low heat for 2 to 3 minutes, until tarts are warm and cheese softens. Garnish with fennel fronds.
