Recipe video above. A classic side salad that makes an appearance on fine dining restaurants and local bistros! It goes with virtually every Western dish, with the pepper flavour of rocket lettuce making it ideal to pair with rich meat-heavy or carb heavy mains like pastas and roasts.

Ingredients

150g / 5 oz rocket / arugula ((4 big handfuls))
15g / 0.5oz parmesan (, shaved finely using vegetable peeler)
1 tbsp balsamic vinegar
2 1/2 tbsp extra virgin olive oil
1/2 tsp each salt and pepper

Steps:

Shake Balsamic Dressing in jar.
Place rocket in a bowl, drizzle with Dressing then toss.
Transfer to serving bowl. Shave over parmesan. Serve immediately.

2 (5 ounce) packages arugula
¼ cup roughly chopped cilantro
1 teaspoon fresh lemon juice
1 teaspoon olive oil
1 teaspoon balsamic vinegar
1 teaspoon red pepper flakes
1 pinch ground black pepper
¼ cup shaved Parmesan cheese

Steps:

Toss arugula and cilantro together in a large salad bowl. Drizzle arugula mixture with lemon juice, olive oil, and balsamic vinegar. Sprinkle with red pepper flakes and black pepper; toss salad again. If desired, add more lemon juice, olive oil, balsamic vinegar, red pepper flakes, and black pepper to taste.
Sprinkle salad with Parmesan cheese shavings and toss again to serve.

2 bunches arugula, washed, dried, and torn
1/4 cup extra-virgin olive oil
1/2 lemon, juiced
Salt and freshly ground black pepper
A chunk of Parmigiano-Reggiano

Steps:

In a serving bowl, drizzle the arugula with the oil, squeeze in the lemon juice, and sprinkle with salt and pepper. Toss until well mixed and taste for seasoning. Use a vegetable peeler to shave thin pieces of Parmigiano over the top.

8 ounces baby greens
1 bunch arugula, trimmed
10 ounces grape tomatoes, each cut lengthwise in half
1/2 cup pine nuts, toasted
3 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
3 ounces parmesan cheese, shaved with a vegetable peeler
salt and pepper

Steps:

Place salad greens and arugula in serving bowl; add tomatoes and pine nuts; toss well.
In small bowl, mix together oil, vinegar, salt and pepper.
Pour over salad and toss well.
Scatter Parmesan shavings on top to serve.
