2 bunches kale, trimmed and torn
8 bacon strips, diced
2 large onions, chopped
4 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In a large saucepan, bring 1 in. of water to a boil. Add kale; cook for 10-15 minutes or until tender. Meanwhile, in a large nonstick skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, reserving 1 teaspoon drippings. In the drippings, saute onions and garlic until onion is tender. , Drain the kale; stir into onion mixture. Add the salt, pepper and reserved bacon; heat through.

While you can use any green you like, a mix of tender and sturdy ones-some bitter and some hot-gives the best balance to the final dish.

1 Tbsp. extra-virgin olive oil, plus more for drizzling
4 slices bacon, coarsely chopped
1 small onion, chopped
4 garlic cloves, smashed
1 pint Sun Gold or cherry tomatoes
2 Tbsp. sherry vinegar or red wine vinegar
2 tsp. honey
Kosher salt
10 cups torn greens (such as escarole, Swiss chard, and/or mustard)
1 Fresno chile, thinly sliced into rings

Steps:

  • Heat 1 Tbsp. oil in a large saucepan over medium-low. Add bacon and cook, stirring often, until brown and crisp around the edges, 5-7 minutes. Add onion and garlic and cook, stirring often, until onion is translucent, about 5 minutes. Increase heat to high and add tomatoes. Cook, stirring occasionally, until tomatoes have mostly burst and are lightly charred in spots, about 5 minutes. Mix in vinegar, honey, and 1 1/2 cups water. Season lightly with salt and simmer over low heat to allow flavors to blend, 8-10 minutes.
  • Working a handful at a time, add greens, stirring to wilt before adding more, and cook until all greens are wilted and submerged in the broth. Season with more salt; let cool slightly.
  • Transfer greens to a serving dish. Generously drizzle with oil and scatter chile over.

½ teaspoon garlic salt
¼ teaspoon ground black pepper
4 slices fully cooked bacon

Steps:

  • Melt Parkay in large skillet over medium-high heat. Add onion; cook 2 to 3 minutes or until tender. Add kale; stir to combine. Add undrained tomatoes, water, garlic salt and pepper; stir gently. Cover; cook 10 to 15 minutes or until kale is tender, stirring occasionally.
  • Meanwhile, heat bacon in microwave according to package directions. Cut into bite-size pieces. Stir bacon into kale mixture before serving.

3 slices bacon
¾ cup onion, chopped
4 cloves garlic, chopped
1 ½ tablespoons margarine
1 bunch red-leaf kale, thick stems removed and leaves chopped
1 cup apple cider
1 tablespoon mango-habanero sauce
8 ounces precooked turkey sausage, cut into bite-sized pieces
salt to taste

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until just crispy, about 10 minutes. Drain bacon slices on paper towels. Trim and discard half the fat from each piece. Dice remaining bacon.
  • Use a paper towel to wipe out skillet, leaving a light coating of bacon grease. Add onion, garlic, and margarine. Cook until onions are soft and translucent, stirring frequently, about 5 minutes. Add kale and toss until wilted, 3 to 5 minutes. Add apple cider, habanero sauce, cooked bacon, and turkey sausage. Cook, stirring occasionally, until liquid is reduced, 15 to 20 minutes. Season with salt.
