- Toss lettuce, radishes and onions in a large salad bowl; set aside. In a skillet, cook bacon until crisp. Remove to paper towels to drain. When we were kids, my sister and I would prepare the freshly picked lettuce for this wilted lettuce salad recipe, rinsing it several times and carefully drying it. - Clean and cut the onions into the lettuce.

My North Carolina dad made this for me when I was growing up in a Southeast Alaska logging camp. He grew the lettuce and onions right there in the yard. Not exactly low fat, but one of my favorites anyway.

- Clean and rip up lettuce into larger serving bowl.
- Chop onions and add to bowl with lettuce.
- Fry bacon until crisp in frying pan and drain on paper towels.
- Crumble bacon when cool.
- Add vinegar and water to bacon fat in frying pan and bring to boil.
- Pour boiling bacon grease and vinegar mixture over salad greens, stirring constantly while lettuce wilts.
- Mix well.
- Garnish with bacon bits before serving.
