BIG AL'S K.C. BAR-B-Q SAUCE
This is a Kansas City-style sauce that I make in my restaurant. It is sweet and smoky with a little bite.

- In a large saucepan over medium heat, mix together the ketchup, tomato sauce, brown sugar, wine vinegar, molasses, liquid smoke and butter. Season with garlic powder, onion powder, chili powder, paprika, celery seed, cinnamon, cayenne, salt and pepper.
- Reduce heat to low, and simmer for up to 20 minutes. For thicker sauce, simmer longer, and for thinner, less time is needed. Sauce can also be thinned using a bit of water if necessary. Brush sauce onto any kind of meat during the last 10 minutes of cooking.

AWARD WINNING COMPETITION BARBECUE PORK BUTT RECIPE
Steps:
- Preheat a charcoal grill to 225 degrees F. Carefully edge the coals to 1 side and then add 1/2 cup drained wood chips. Place 1 cup of water in metal drip pan on opposite side.
- Inject the pork butt with brine about every 2-inches and then rub with marinade and dust with Dry Rub. Place the pork on the grill, directly over the drip pan and cook. Be sure to replenish the coals as the temperatures drops, the chips as the smoke dissipates and the water in the drip pan.
- After 6 hours, spray the pork with Cider Mop every half hour. Cook until a thermometer placed into the thickest part of pork reaches 195 degrees F. Transfer to a platter, brush with the sauce and let rest 30 minutes. To serve, slice into 1/2-pound servings, place on plates and serve with extra sauce alongside.
- Combine all ingredients in a bowl until the salt and sugar dissolve and then place into meat syringe for immediate brining or reserve, refrigerated, for later use.
- Place all ingredients into a blender and puree. Remove to an airtight container and store in the refrigerator until needed.

- Heat the oil in a saucepan set over medium heat. Add the bacon and cook until browned and crispy, about 4 minutes. Reduce the heat to low and add the onion, garlic, onion power, garlic powder, black pepper, and cloves. Cook for about 5 minutes, stirring constantly. Add the sugar and water and then bring to a simmer. Stir in the ketchup, mustard, honey, preserves and juice and then simmer for 20 minutes. Remove the pan from the heat and season with the vinegar. Remove the bacon with a spider and discard. Puree the mixture with a hand blender and then cool and reserve for later use.

Steps:
- In a 5 quart or larger pot, add all ingredients. Bring to a boil, stirring often, and then simmer on medium low for at least 30 minutes.
- Keep coming back to stir it to break up the sugar and rub or it will burn on the bottom.
- Taste it and adjust the flavors. It's ok if it is a bit vinegary now; that will dissipate as it cooks.
- To bottle this for longer-term storage:
- Fill clean, new, sterilized glass mason jars within ⅛ inch from the top with hot barbecue sauce and process in that boiling hot water bath for 15 minutes. Process means to boil them for the 15 minutes. Make sure the jars are covered by two inches of boiling water while they process.
- Pull the bottles out after 15 minutes of boiling, let them cool and listen for the pops as the jars seal, check the seals and tighten the mason jar twist lids, add a mighty nice label (or do what I do and just write on it with a magic marker), and stock them in your pantry.

- Prep. To trim the thighs, remove the fat on the edge of thighs and any visible blood veins. Scrape the edges of the skin to remove any remaining excess fat. The goal is to make all the thighs same size so that they cook equally, weighing approximately 5 ounces after trimming.
- Combine the water and injection mixture, stirring until the injection mixture has completely dissolved.
- Place a wire rack in a pan and set the chicken thighs on the rack skin side down. Inject about 1 ounce of the injection mixture into each thigh. Aim to inject each thigh approximately five times in various muscles. Sprinkle bottom of thighs (the non-skin side) with Big Poppa Smokers Sweet Money Rub and place them in the refrigerator uncovered for 2 hours.
- Remove thighs from refrigerator. Turn them over with the skin side up and reshape them so they all look uniform. Sprinkle the tops of the thighs (the skin side) with Simply Marvelous Genie’s Trinity Rub. Place the thighs back in refrigerator uncovered for 1 hour.
