6 large red apples, sliced
2 tablespoons lemon juice
4 bunches watercress, stems removed
2 pounds seedless red grapes, separated into small bunches
2 small red onions, halved and thinly sliced
HONEY LEMON DRESSING:
1/2 cup lemon juice
1/4 cup vegetable oil
2 to 3 tablespoons honey
1/2 teaspoon salt
1/8 teaspoon pepper
Lemon slices and fresh mint, optional

Steps:

  • In a small bowl, toss apples and lemon juice. Arrange watercress on a large serving platter. Top with the grapes, onions and apples., In a jar with a tight-fitting lid, combine lemon juice, oil, honey, salt and pepper; shake well. Drizzle 1/2 cup over salad; toss to coat. Cover and refrigerate salad and remaining salad dressing until serving. Serve remaining dressing on the side. Garnish with lemon and mint if desired.

1 grapefruit, supremed, plus 4 teaspoons grapefruit juice
1 orange, supremed, plus 4 teaspoons orange juice
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper.

Steps:

  • Combine the watercress, grapefruit supremes and juice, orange supremes and juice, olive oil and some salt and pepper in a large bowl. Gently toss to combine. Serve immediately.

2 mandarin oranges, peeled and segmented
2 kiwi fruits - peeled, sliced, and quartered
1 medium apple, diced
1 medium Bartlett pear, cored and diced
¼ cup sweetened dried cranberries (such as Ocean Spray® Craisins®)
2 tablespoons pomegranate arils
2 tablespoons minced celery
2 tablespoons lime juice
1 tablespoon honey
1 tablespoon olive oil
1 teaspoon poppy seeds

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook farfalle at a boil, stirring occasionally, until tender yet firm to the bite, about 7 minutes. Rinse under cold water and drain well.
  • Meanwhile, combine mandarin orange sections, kiwi, apple, pear, dried cranberries, pomegranate arils, and celery in a large bowl.
  • Add pasta to the fruit salad, mixing until well combined.

1 1/4 cup sugar
3 star anise
1 plump vanilla bean, split in half lengthwise
2 2-inch long pieces lemon zest (peeled with a vegetable peeler), preferably Meyer lemons
3 firm Bosc pears
1 firm tart apple
8 dried Turkish apricots, cut in half
4 dried figs, quartered

Steps:

  • Fill a medium saucepan with 5 cups water. Add the sugar, star anise, vanilla bean and lemon zest. Bring to a boil, and cook until all the sugar is dissolved. Then shut off the heat. Meanwhile, peel and core pears and apple. Slice thinly lengthwise and place in a large heatproof bowl. Add apricots and figs. Pour hot sugar syrup on top, making sure all the fruit is covered. Cover bowl with plastic wrap; poke a few holes in plastic. Chill overnight in refrigerator.
  • The next morning, using a slotted spoon ladle fruit into a serving bowl and serve.

1 ⅓ cups quinoa, rinsed
1 ½ cups water
2 kumquats - seeded and chopped
2 tablespoons chopped fresh cilantro
¼ cup olive oil
2 ½ tablespoons lemon juice
½ teaspoon kosher salt
1 Bosc pear - peeled, cored and chopped
1 cucumber - peeled, seeded and chopped
1 cup trimmed and coarsely chopped watercress

Steps:

  • In a medium saucepan, combine the quinoa and water and bring to a boil. Simmer over low heat stirring often, until tender, about 12 minutes. Drain and cool completely.
  • In a small bowl, combine the kumquats, cilantro, olive oil, lemon juice and salt. Allow to steep for 5 minutes.
  • In a large bowl, combine the quinoa, pear and cucumber. Add the dressing and toss well. Add the watercress and toss again and serve.

2 small pink grapefruits (12 ounces each) or 1 large pink grapefruit, peeled and sectioned
9 juice oranges (6 ounces each), peeled and sectioned
1 small pineapple, peeled, cored and cut into 1-inch chunks (about 3 cups)
3 Anjou pears (8 ounces each), peeled, halved, cored and thinly sliced lengthwise (about 3 cups)
3 McIntosh apples (8 ounces each), peeled, quartered, cored and cut into thin wedges (about 3 cups)
6 kiwis (3 to 4 ounces each), peeled and cut into rounds about 1/4-inch thick
3 papayas (1 pound each), peeled and cut into 1-inch chunks (about 4 cups)
3/4 cup fresh orange juice
3 tablespoons fresh lemon juice
3 tablespoons Triple Sec
3 bananas
1 1/2 cups strawberries (about 1 pint), hulled and halved

Steps:

  • Combine all ingredients except the bananas and strawberries in a large bowl. Stir well and let stand, loosely covered, in the refrigerator for at least one hour.
  • Just before serving, peel the bananas and slice them on the diagonal (you will have about three cups). Stir in the bananas and strawberries.
