WISCONSIN DINER GRIDDLE CAKES



Wisconsin Diner Griddle Cakes image

Made with strawberry yogurt and buttermilk, these are light and tender and very flavorful. Have also tried with vanilla yogurt, also delicious. From the Wisconsin Milk Marketing Board, changed to my tastes. In Wisconsin these would be served with butter and real maple syrup.

Number Of Ingredients 10

1 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 tablespoon sugar
1/8 teaspoon salt
1 egg
1/2 cup strawberry yogurt
1 cup buttermilk
2 tablespoons butter, melted
2 tablespoons butter, for greasing griddle

Steps:

  • Combine first five dry ingredients.
  • In another bowl whisk the egg, yogurt, buttermilk and melted butter. Add the dry ingredients, stirring just until combined.
  • Heat griddle and 1 tablespoons butter over medium-low heat.
  • Pour 1/4 cup batter onto griddle for each pancake. Cook 2 minutes, until golden (these won't bubble as much as regular pancakes so watch closely), flip and cook 2 minutes more, until the center springs back when pressed.
  • Use additional 1 tablespoons butter to grease griddle for next batch, if necessary.

This takes the cinnamon cake one step further and is the perfect Christmas-morning breakfast. You'll find using a pre-made mix makes it even easier.

4 cups pancake mix (such as Krusteaz®)
1 (15 ounce) can pumpkin puree
½ cup cold water, or as needed
½ cup white chocolate chips
½ cup chopped pecans
2 teaspoons cinnamon

Steps:

  • Heat a lightly oiled griddle to 350 degrees F (175 degrees C).
  • Stir pancake mix, pumpkin puree, water, white chocolate chips, pecans, and cinnamon together in a large bowl until just incorporated, adding more water as needed.
  • Drop batter by 1/2 cup scoops onto the griddle and cook until bubbles form and the edges are dry, 2 to 4 minutes. Flip and cook until browned on the other side, 2 to 4 minutes; repeat with remaining batter.

Real Wisconsin fried cheese curds!

2 quarts corn oil for frying
¼ cup milk
1 cup all-purpose flour
¾ cup beer
½ teaspoon salt
2 eggs
2 pounds cheese curds, broken apart

Steps:

  • Heat corn oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Whisk together milk, flour, beer, salt, and eggs to form a smooth, rather thin batter. Place cheese curds, about 6 or 8 at a time, into the batter, stir to coat, and remove with wire strainer. Shake the curds a time or two to remove excess batter. Deep fry the curds until golden brown, 1 or 2 minutes. Drain on paper towels; serve hot.
