HOMEMADE CHOCOLATE PUDDING
This delightful pudding is always a treat and easy to whip up using common pantry ingredients. I usually top the pudding with M&M's. My husband likes whipped topping on his and our daughter loves to dip fresh strawberries in hers. -Carrina Cooper, McAlpin, Florida

- In a heavy saucepan, combine sugar, cocoa, cornstarch and salt. Gradually add milk. Bring to a boil over medium heat; boil and stir for 2 minutes. Remove from the heat; stir in butter and vanilla. Spoon into individual serving dishes. Chill until serving. If desired, garnish with whipped cream and M&M's.

NANA'S HOMEMADE CHOCOLATE PUDDING
A rich, silky homemade chocolate pudding made the same way in our family since the 50's. Cooled pudding will form a dark skin on top, which is our favorite part! Top with whipped cream, if desired.

- Sift and whisk sugar, cocoa powder, cornstarch, and salt together in a saucepan.

- Combine all ingredients and store in container with tight-fitting lid. Makes 3 cups mix, yielding 12 servings of prepared pudding.
- Stir mix well. For two servings, combine 1/2 cup Chocolate Pudding Mix, 4 tsp. butter, and 1-1/3 cups milk in a small saucepan. Heat over low heat, stirring constantly, until mixture boils. Boil gently, stirring constantly, for one minute. Pour into serving dishes and chill until thickened.

- Dry Mix.

- Place 1 3/4 cups of dry pudding mix into a medium saucepan. Add milk and heavy cream and whisk to combine.
- Over medium heat, bring mixture to a boil, continuously whisking gently. Reduce heat to low and cook for 4 minutes while continuing to whisk. Remove from heat and stir in vanilla.
- Pour the mixture through a sieve and into individual dishes or a 1 1/2-quart serving dish. Cover the surface of the pudding with plastic wrap.
- Place in the refrigerator to chill completely before serving, approximately 4 hours.
