- Make dough:
- Fill kitchen sink with about 2 inches of cold water. Melt butter in a 2- to 3-quart heavy saucepan over moderate heat and cook, stirring occasionally, until butter turns golden with a nutlike fragrance and flecks on bottom of pan turn a rich caramel brown, 10 to 12 minutes. (Butter will initially foam, then dissipate. A thicker foam will appear and cover the surface just before butter begins to brown; stir more frequently toward end of cooking.) Place pan in sink to stop cooking, then cool, stirring frequently, until butter starts to look opaque, about 4 minutes. Remove pan from sink and stir in sugar and vanilla.
- Whisk together flour, baking soda, and salt in a small bowl and stir into butter mixture until a dough forms. Shape into a ball, wrap with plastic wrap, and let stand at cool room temperature 1 to 2 hours (to allow flavors to develop).
- Form and bake cookies:
- Put oven rack in middle position and preheat oven to 325°F.
- Press a piece of dough into bowl of teaspoon, flattening top, then slide out and place, flat side down, on an ungreased baking sheet. (Dough will feel crumbly, but will become cohesive when pressed.) Continue forming cookies and arranging on sheet. Bake cookies until just pale golden, 8 to 15 minutes. Cool cookies on sheet on a rack 5 minutes, then transfer cookies to rack and cool completely, about 30 minutes.
- Assemble cookies:
- While cookies cool, heat preserves in a small saucepan over low heat until just runny, then pour through a sieve into a small bowl, pressing hard on solids, and cool completely.
- Spread the flat side of a cookie with a thin layer of preserves. Sandwich with flat side of another cookie. Continue with remaining cookies and preserves, then let stand until set, about 45 minutes. Transfer cookies to an airtight container and wait 2 days before eating.
PERFECT THUMBPRINT COOKIES
My mother, Pauline, made really nice thumbprint cookies, but I never wrote down her recipe. I knew the ingredients, but unless you have the right proportions, you won't get that perfect melt-in-your-mouth texture. So, I did an image search and found a recipe that looked very similar, credited to a great-grandma named Mitzi. Since my last name is Mitzewich, that pretty much sealed the deal. In case you can't decide between a shortbread-focused cookie and a more jammy one, here's how to make both.

- Preheat the oven to 325 degrees F (165 degrees C).
- Mix butter and powdered sugar together with a rubber spatula until creamy. Add vanilla extract, almond extract, salt, and egg yolk. Mix with the spatula. Add flour and blend until just combined.
- Use a sorbet scoop to portion dough into 1/2-ounce (1-tablespoon) balls. Roll balls in a plate of white sugar to coat; roll again between your palms. Place several inches apart on a silicone-lined baking sheet. Flatten balls lightly with your fingers.
- To make shortbread cookies with a little jam, poke a well into each cookie using the end of a thick wooden spoon dusted with powdered sugar or using one of your fingers. Fill cookies with fruit jam. Tap baking sheet against the counter to let jam settle.
- Bake in the preheated oven until tops are barely blonde and bottoms are slightly golden, about 15 minutes. Let cool on a wire rack before icing.
- Meanwhile, mix powdered sugar with a little milk until you have a consistency that will hold its shape when piped. Pipe icing on top of cookies in a zigzag pattern. Let sit for 15 minutes before serving.
- For a more jam-forward cookie, press your thumb into the cookies to make large, shallow indentations. Spoon in jam. Tap baking sheet against the counter.
- Bake until not quite golden brown, about 15 minutes. Let rest on pan for 5 minutes before transferring a wire rack. Dust with powdered sugar.

- Preheat oven to 350 degrees F. Grease and flour 2 large cookie sheets. In 2-quart saucepan, combine ground almonds, margarine or butter, sugar, flour, and cream. Heat over low heat, stirring occasionally, until margarine or butter melts. Keep mixture warm over very low heat.
- Drop batter by rounded teaspoons, about 3 inches apart, onto cookie sheet. (Do not place more than 6 on cookie sheet because, after baking, cookies must be shaped quickly before hardening.)
- Bake cookies 5 to 7 minutes, until edges are lightly browned and centers are just golden. Let cookies remain on cookie sheet 30 to 60 seconds, until edges are just set. With pancake turner or long, flexible metal spatula, flip cookies over quickly so lacy texture will be on outside after rolling. Working as quickly as possible, roll each cookie into a cylinder around handle of wooden spoon; remove to wire rack. If cookies become too hard to roll, return to oven briefly to soften. As each cookie is shaped, remove from spoon handle; cool on wire rack. Repeat until all batter is used.

These are very easy and impressive. They from a Good Housekeeping dated 1996...they are different and SO wonderful that you will probably have to make several batches as they are eaten as fast as they are made!

- In 2-quart saucepan, combine ground almonds, butter, sugar, flour and cream.
- Heat over low flame until butter melts.

Steps:
- Preheat the oven to 325˚F (160˚C).
- Place the sugar cookie dough sheet on a lightly floured surface.
- Sprinkle the flour over the dough and knead together.
- Roll out the dough to a ¼-inch (6-mm) thick square.
- Top with sprinkles and lightly roll out the dough again so the sprinkles become submerged in the dough.
- Place a spoon on top of the dough and trace its shape with a paring knife. Reroll the dough as needed to cut out 8 spoons.
- Arrange spoons upside-down on a parchment-lined baking sheet. Lightly grease with nonstick cooking spray.
- Place each cookie spoon cutout on top of a spoon. Lightly press down to mold.
- Bake for 25-30 minutes, or until the cookie dough is light brown.
- Cool for 10 minutes before carefully removing the cookies from the spoons.
- Microwave the milk chocolate chips and coconut oil together in a glass measuring cup or bowl in 30-second intervals, until the chips are completely melted.
- Dip each cookie spoon in chocolate and let dry on a wire rack for about 10 minutes.
- Serve with ice cream, if desired.

- Preheat the oven to 375 degrees F (190 degrees C). Stir together the flour, baking soda, salt and instant pudding powder; set aside.
- In a medium bowl, cream together the butter, white sugar and brown sugar until smooth. Blend in the eggs and vanilla. Gradually mix in the dry ingredients until just blended. Stir in the chocolate chips by hand using a wooden spoon. Scoop cookies using an ice cream scoop or by heaping tablespoons. Place cookies at least 2 inches apart onto ungreased cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven, until lightly golden. Cool on baking sheets for a few minutes before removing to wire racks to cool completely.
