THE WORLD FAMOUS MAINE LOBSTER ROLL

Steps:
- If using live lobsters, steam or boil them. Let cool at room temperature. Use a cleaver to crack and remove the meat from the claws, knuckles and tails. Remove the cartilage from the claws and the intestine from the tails of the cooked meat. Cut the meat into 1/2 inch dice. You may pick all the meat from the carcass and freeze the carcass for soup or broth. Place the cucumber in a colander for at least 5 minutes to drain the excess liquid. Combine the lobster, cucumber and mayonnaise. If the salad is to be served within the hour, add the scallions. If not, add them 30 minutes before serving with salt if needed and pepper. Cover with plastic wrap and chill for at least 30 minutes before serving.;
- Place a stainless steel mixing bowl on a damp cloth to keep the bowl from sliding around. Add the egg yolk, mustard and tarragon to the bowl and whisk until blended. Drizzle the oil into the bowl while whisking constantly. Be sure that the mixture is smooth and well blended at all times. Stop adding the oil periodically to allow yourself time to catch up; when there is no oil visible, continue adding and whisking. When half the oil is added, add 1 teaspoon of the lemon juice. Alternate between the remaining oil and lemon juice, whisking all the while, until both are incorporated. Whisk in the ice water. (The water stabilizes the mayonnaise, which prevents separating, a common flaw of homemade mayonnaise.) Season to taste with salt and pepper and cayenne. Whisk. Store in a small container, covered and refrigerated, until needed. To assemble the roll, prepare the lobster salad and chill for at least 30 minutes. Preheat a large heavy skillet over medium low heat. Lightly butter both sides of each bun. Place in the pan and cook for about 2 minutes until golden brown. Turn the buns over and toast the other side. Or toast the buns under a broiler instead. When they are ready, stuff them with the chilled lobster salad. Place each roll on a small paper or china plate. Garnish with pickles and potato chips. Serve at once.

- In a large nonstick, deep-sided saute pan, heat the olive oil over medium-high heat. Add the onions and saute until just starting to get soft and translucent, about 5 minutes. Add the cauliflower and stir well. Cover and lower the heat, letting the cauliflower steam until almost fork-tender, about 5 minutes. Remove the cover; raise the heat to medium to evaporate most of the cooking liquid. Add a splash more olive oil and the garlic and brown over medium-high heat until the cauliflower is crisp-tender, about 5 minutes. Add the pasta and toss together to combine.
- Add the bread crumbs and cheese and stir well to coat, slightly browning the crumbs, about 2 minutes.
- Season with salt and pepper, to taste. Add more cheese, if desired. Serve with crusty Italian bread and butter.

- Preheat oven to 400 degrees F. Use pizza stone, or a 12-inch pizza pan if stone is unavailable. Place dough in a pan and generously brush with infused oil. Place caramelized onion on the dough, then slice the smoked chicken and place on top of the onion. Spread the garlic around, generously, on top of the chicken and onion. Break up the goat cheese and place on the pizza. Bake for 8 to 10 minutes until the toppings are hot. Remove from the oven and sprinkle with fresh rosemary over the top.

- Bring the stock to a simmer in a medium saucepan.
- With a whisk, mix the eggs and Parmesan cheese together in a bowl. Make sure the stock is not boiling and slowly pour in the egg and cheese mixture. Wait a minute for the eggs to just set. - Preheat the oven to 300 degrees F.
- In a large mixing bowl, mix the flour and a dash salt with a fork. Transfer the flour mixture to the bowl of a food processor. Add in the butter and 2 cups water. Pulse just until bound. Take the dough out of the food processor. Sprinkle the counter lightly with some flour. Cut the dough into three equal chunks. Flour your rolling pin, then roll out each piece of dough. Lightly fold in half, which creates a half-moon shape, and move to baking sheet. Open and flatten out the dough. Wet your hands and wipe over the dough to moisten. Sprinkle with sea salt. Cut with ravioli wheel (random sizes are best). Then take a fork and puncture the pieces. Repeat for the remaining pieces of dough. Bake until puffy and golden brown, 10 minutes.

Steps:
- Cut a criss-cross in the figs, but not quite to the bottom, and then, using your thumb and forefinger, squeeze the base of the fig to reveal the inside.
- Place the figs on a large plate and weave around I piece of prosciutto or Palma ham around each fig.
- Add the ripped up basil and the buffalo mozzarella.
- Drizzle over the honey, making sure each fig has some in the middle, then drizzle the olive oil, lemon juice, and salt and pepper.
- Or: Mix all the dressing ingredients together in a bowl and season, to taste, then drizzle everything with the honey and lemon juice dressing.
