  • Mix beans and salsa until blended.

1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon ground cumin
1 (10 ounce) bag scoop-shaped tortilla chips
8 ounces Colby-Monterey Jack cheese, thinly sliced
1 (4 ounce) can sliced jalapeno peppers

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine refried beans, garlic powder, onion powder, and cumin in a bowl; mix well.
  • Pour tortilla chips onto a baking sheet in one layer. Spoon bean mixture over tortilla chips. Top with Colby-Monterey Jack cheese and jalapenos.
  • Bake in the preheated oven until cheese is melted, about 5 minutes.

1/4 cup scallion

Steps:

  • Combine refried beans, sour cream, salsa, and lime juice in a medium bowl.
  • Spread evenly over the bottom of a 9 inch pie plate.
  • Combine sour cream and taco seasoning. Spoon over bean layer and spread evenly.
  • Pour salsa over sour cream.
  • Spread to sides of pie plate.
  • Sprinkle cheese over salsa and top with green onions.
  • Cover and refrigerate for 1 hour before serving.

1 can (4 ounces) chopped green chilies
3 tablespoons chopped onion
2 garlic cloves, minced
1 tablespoon canned chopped jalapeno pepper
1-1/2 teaspoons ground cumin
1-1/2 teaspoons chili powder
2 cups cubed cooked chicken
2 cups shredded Monterey Jack cheese, divided
1 package (14 ounces) pita bread (6 inches)
1 cup shredded cheddar cheese
Salsa, optional

Steps:

  • In a large bowl, beat the cream cheese, chilies, onion, garlic, jalapeno, cumin and chili powder until smooth. Stir in chicken and 1 cup Monterey Jack cheese. , Split each pita into two circles. Spread 1/4 cup of chicken mixture on each circle; place on ungreased baking sheets. , Bake at 400° for 5-10 minutes. Combine the cheddar cheese and remaining Monterey Jack; sprinkle over circles.
