MEXICAN PIZZA I
Mexican Pizzas are delicious corn tortillas topped with beans, beef and all the delicious taco toppings you can imagine! They can be cut into wedges and served as an appetizer or left whole and served as a main dish.

Steps:
- Heat the refried beans.
- In a large skillet, brown the ground beef. Stir in the seasoning packet.
- Preheat oven to 350 degrees F (175 degrees C).
- Place a small amount of vegetable oil in a large skillet. Let the oil heat, then place one corn tortilla in the skillet. After 15 seconds, flip the tortilla over and let it fry another 15 seconds. Repeat this process with the remaining tortillas, letting them drain on paper towels once they have been heated. When the tortillas have drained, arrange them on a cookie sheet.
- Spread a thin layer of beans on the tortillas, followed by a layer of beef, and cheese.
- Bake the tortillas in the preheated oven for 20 to 30 minutes. Slice the tortillas into wedges and arrange them on plates or a serving platter and garnish them with the sour cream, tomatoes, green onions, chiles, avocado, and olives.

EASY HOMEMADE VEGGIE CRAB CAKES/SLIDERS-WEIGHT WATCHERS 4 POINTS
This is soooo good and easy! It's an adaptation of various veggie burgers I have made. You could put it on a bun and make it a slider. I like thowing these on a salad and they are great for guests. I improvised this so feel free to switch up the veggies! I put this into my WW recipe builder and its 4 points for 3 veggie crab cakes. This recipe makes 9 veggie crab cakes.

Fabulous hot chocolate ready almost instantly. Mexican hot chocolate is more bitter and even has peppers added sometimes. If you want it more bitter, use the bittersweet chocolate and even add less sugar. You can also mix a batch of the dry ingredients, divide by 4 and store into ziploc bags. Add each portion to 1 cup of fat free milk and heat it up. Enjoy!

- Spray grill rack with nonstick spray and prepare grill for medium-hot fire.
- Heat the oil in a large non-stick skillet over medium-high heat. Add the onion, sugar, and 1/4 tsp of the salt.
- Cook, stirring until onion is a rich golden brown, about 8 minutes.
- Stir together the spinach or arugula, ricotta, 2 tbsp of the parmesan, the basil, and the remaining 1/4 tsp salt in a small bowl.
- Place the crust on a pizza paddle or rimless baking sheet and spread the spinach mixture over it to cover entirely.
- Top with the onion and sprinkle with the remaining 2 tbsp paremesan.
- Using the paddle or baking sheet, slide the pizza on the grill, away from the heat source.
- Cover and cook, rotating the pizza a half turn every 5 minutes, until the pizza is hot and the cheese is fully melted, about 8 minutes.

- Preheat oven to 425*F.
- Spray baking sheet with cooking spray.
- Heat large nonstick skillet over med-high heat.
- Add the oil, then add turkey, onion, and seasoning mix.
- Cook, breaking up the turkey with wooden spoon, until browned.
- Stir in tomatoes and water, bring to a boil.
- Simmer, uncovered, over med-high heat until most of the liquid has evaporated.
- Meanwhile, spray another large skillet with nonstick spray and heat on med-high.
- Add one tortilla and cook, turning occasionally, until crisp and golden.
- Repeat with remaining tortillas.
- Arrange tortillas on baking sheet.
- Spoon turkey mixture on tortilla.
