This is one of those recipes that when served to guests you had better have lots of it. It is a real crowd pleaser that your guests just can't stop eating. The beauty of it is that it is so simple to make with only three ingredients. You can double the recipe but use two plates instead of one. You will simply have two appetizers. If you take this appetizer to a potluck or party, spread the mixture on a sturdy plastic or styrofoam plate and you won't have to worry about getting your plate back. My personal preference to accompany this spread is Ritz or rice crackers but use what you like, you won't be disappointed.

4 ounces cream cheese
1/2 cup purchased seafood sauce
6 ounces imitation crabmeat, shredded (pollack)
assorted cracker, to serve

Steps:

  • Spread softened cream cheese into the bottom of a 9" plate.
  • A pie plate works well for this.
  • Spread the seafood sauce on top of the cream cheese covering to the edges.
  • Sprinkle imitation crab meat over the top.
  • (genuine crab can be used for this recipe but the imitation works really well).
  • Serve using little spreading knives (I suggest you have at least four of these knives) with assorted crackers.
  • YUM!

My MIL is Cajun and makes the best etoufee recipe I have ever tried. This I feel is equally as good and much lower in fat and calories too!!! Trust me you won't be able to tell the difference. This is just wonderful and my husband loves this recipe better then his mother's because of the lower fat content. You just have to try this delicious etoufee recipe. This is one you will want to make over and over again!

1 cup onion (1 onion)
1/2 cup green pepper (1 green pepper)
1/3 cup celery (1 celery stalk)
1 cup clam juice or 1 cup chicken broth
1 lb shelled shrimp
16 ounces crawfish tails
2 (10 3/4 ounce) cans 98% fat free condensed cream of celery soup
2 (10 3/4 ounce) cans 98% fat-free cream of mushroom soup, 98% ff
2 (10 3/4 ounce) cans cream of shrimp soup
tony chacheres creole seasoning
Old Bay Seasoning (to suit your taste)

Steps:

  • Finely chop green pepper, celery, onion. Sauté in a large pot with non-stick cooking spray.
  • Add clam juice or chicken broth, shelled shrimp, crawfish tails only, all the soups and seasonings to your liking and simmer until shellfish are done, about 10 to 15 minutes. Serve over steamed rice.
  • Variation: Leave out the crawfish and add more shrimp or crabmeat.
  • When I make this I use chicken broth instead of clam juice. I use a lot of Tony's and just sprinkle the whole top of the pot once with Old Bay seasoning and stir all together. We like a lot of spice at our house.
  • WW points 3 without rice.

2 1/2 cups water
3/4 lb unpeeled medium raw shrimp
1 (8 ounce) package cream cheese, softened
1/4 cup lemon juice
1 tablespoon mayonnaise
1/2 teaspoon seasoning salt
1/2 teaspoon lemon-pepper seasoning
1/4 teaspoon Worcestershire sauce
1 (12 ounce) jar seafood cocktail sauce (your favorite)
2 cups shredded monterey jack cheese (8 ounces)
3 green onions, chopped
1/2 cup chopped green bell pepper
1/2 cup sliced ripe black olives

Steps:

  • Bring water to a boil; add shrimp, and cook 3 to 5 minutes. Drain well; rinse with cold water. Chill. Peel and devein shrimp. Chop half the shrimp. Chill chopped shrimp and remaining whole shrimp.
  • Beat cream cheese at medium speed of an electric mixer until light and fluffy. Add lemon juice, mayonnaise, seasoned salt, lemon-pepper seasoning, and Worcestershire sauce, and beat until smooth. Spread mixture into a 10-inch circle on a large serving platter. cover and chill at least 30 minutes.
  • Spread cocktail sauce evenly over cream cheese mixture. Layer chopped shrimp, Monterey Jack cheese, and remaining ingredients, except whole shrimp, over the cocktail sauce. Top with whole shrimp. Cover and chill thoroughly. Serve with assorted crackers.

Great fast weeknight pasta dish that goes well for just family or for guests. I got this out of Chatelaine May 2005.

2 cups pasta, uncooked, any short penne, rotini, fusilli etc
3/4 cup alfredo sauce
8 ounces imitation crabmeat (I use the real thing)
1/4 teaspoon ground nutmeg
4 cups Baby Spinach
1/2 cup milk (optional)

Steps:

  • Cook pasta as directed according to package.
  • Pour alfredo sauce into a large saucepan set over medium heat. Meanwhile, slice crab into chunks. Stir in crab and nutmeg. If pasta is not ready yet, reduce heat to low and cover to keep warm.
  • When pasta is cooked, drain well. Then add to sauce in pan. Stir in spinach. If sauce is too thick, stir in milk, 1/4 cup at a time. Stir until warmed through, 1 or 2 more minutes. Serve in big pasta bowls.
