Steps:
- Mix dry ingredients.
- Do not sift the flour!
- Mix liquids and add to dry.
- Stir until there is no more dry flour.
- Depending on the humidity of the air where you live you may need a little bit more or less liquid.
- The dough should be moist but not sticky.
- It may take a few minutes for the flour to fully absorb the liquid, so don't rush to add liquid or flour to it.
- Score lightly the surface in a diamond or X shape to prevent splitting of the crust.
- This is a country style bread that should be sliced thick.
- It is important not to overwork the dough.
- Shape into a ball or an oval, with oiled hands.
- Place on clean baking sheet.
- Bake for 40 minutes at 400°F.
- Variations: Rub the dough ball with virgin olive oil and sprinkle sea salt and oregano for a foccacia flavor.
- For tea time add a tsp pure cane sugar.
- The liquid can be replaced for orange or other fruit juice if the bread is to be used for teatime and you can even add dried chopped fruits.
- For a savory bread the liquid can be tomato juice and you can add chopped sundried tomatoes to the dough.
- Sprinkling of seeds in the dough or on top of the bread is also possible.
YEAST FREE WHOLEMEAL BREAD
This is so far the BEST yeast free bread that I have baked for my daughter who has candida. It tastes really nice, holds together well and is so quick and easy to make. I adapted this recipe from an Irish Soda Bread recipe called Wheaten Bread which I found on an untitled web site.

Steps:
- Pre-heat oven to 200 deg.celsius (392 deg. fahrenheit).
- Combine all dry ingredients then mix butter through well with a fork.
- Add milk (and sweetener if it is a liquid) mix until well combined.
- Put mixture into a greased loaf tin and bake for 50 minutes.
- Remove bread from tin and cool on a rack.

UNYEASTED BREAD
Makes a very good loaf. I use it for special occasions at church. You can substitute brown sugar for the honey if you wish.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.
- In a large mixing bowl, sift whole wheat flour, bread flour, salt and baking powder. Sift three more times. Mix in 1/4 cup oil. In a separate bowl, dissolve honey in water. Stir into flour mixture. Mix just until a sticky dough pulls together.
- Turn dough out onto a well floured surface and divide into four pieces. Form pieces into desired shape. Place loaves on lightly greased baking sheet.
- Bake in preheated oven for 18 minutes. Remove from oven, brush with remaining 2 tablespoons oil and bake for 10 to 15 minutes longer, until bottom of loaf sounds hollow when tapped.
