BANANA LOAF CAKE I
This recipe is a family favorite. It is great for using overripe bananas. I usually double the recipe and make two loaves. You can also add walnuts if you wish. Note: When your bananas are overripe, you can put them in the freezer until you are ready to use them.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 5x9-inch loaf pan.
- Mash bananas and add flour, sugar, butter, vanilla, baking powder, baking soda and egg. Mix well. Pour into loaf pan.
- Bake in preheated oven until toothpick inserted into center of cake comes out clean, 50 to 60 minutes.

- Preheat oven to 350 degrees. Butter a 9-by-5-by-3-inch loaf pan; set aside. In an electric mixer fitted with the paddle attachment, cream butter and sugar until light and fluffy. Add eggs and beat to incorporate.
- In a medium bowl, whisk together flour, baking soda, and salt. Add to the butter mixture and mix until just combined. Add bananas, sour cream, and vanilla; mix to combine. Stir in nuts and pour into prepared pan.
- Bake until a cake tester inserted into the center of the cake comes out clean, about 1 hour 10 minutes. Let rest in pan for 10 minutes, then turn out onto a rack to cool.

- Mix all liguid ingrediants, mash Bananas mix with liquid ingrediants, Combine with liquids.

YET ANOTHER BANANA BREAD RECIPE
I have been making this banana bread for years now.It comes from the Fanny Farmer Baking Book. I've tried others but none come close to this one. It is moist and flavorful. Wrapped tightly, it can be kept for a few days (If it lasts that long), and freezes well also. My kids like when I add about a half a cup of mini chocolate chips to this also.

Steps:
- Preheat oven to 350 degrees.
- Grease and flour a 9X5 loaf pan.
- Stir together the flour, salt and baking soda.
- In a large bowl, mix the shortening, sugar, banana, eggs, and walnuts (and vanilla if using).
- Add the combined dry ingredients and stir just until the batter is thoroughly blended.
- Do not overbeat as that will make your bread tough.
- Pour into a prepared pan and bake for about 65 to 70 minutes or until a skewer inserted in the center of the bread comes out clean.
- You may have to cover the bread with foil at some point during the baking to prevent over browning.
- Remove from the oven and let cool for about five minutes in the pan, then turn out onto a rack to finish cooling.

A not too sweet, super-moist, deep golden brown, dense banana bread with a crispy sugary crust right out of the oven. It is enjoyed at our home hot with butter, and eaten like cake with a fork. - Preheat oven to 350 degrees F (175 degrees C). Grease 2 9x5-inch loaf pans. In a bowl, whisk together the flour, baking soda, and salt.
- In a separate large bowl, beat the butter, vegetable shortening, white sugar, and brown sugar together with an electric mixer on Low until thoroughly mixed; beat in the bananas, eggs, buttermilk, sour cream, and vanilla extract until well combined. Mix half of the flour mixture into the banana mixture; beat until combined; beat in remaining flour mixture. Mix on Medium speed for 1 minute. Pour the batter into the prepared loaf pans.
- Bake in the preheated oven until a toothpick inserted into the center of the loaves comes out clean, 50 minutes to 1 hour. Allow to cool for 15 minutes; serve warm.

- In a bowl, cream sugar with 1/2 cup of butter.
- Add the eggs, one at a time, beating between each addition.
- Incorporate bananas.
- In a seperate bowl, mix flours, bake powder, baking soda, and salt.
- Incorporate into previous preparation, alternating with the milk.
- Pour into a greased 13"x9" pan.
- Bake 40 minutes, until a toothpick comes out clean.
- Mix melted butter with brown sugar and cream, pour over cake.
- Return to oven on broil until the sauce is bubbling (do not overcook), approximately 5 minutes.
