STRAWBERRY YOGURT GRANOLA POPS



Strawberry Yogurt Granola Pops image

Stay cool on rushed mornings with these easy-to-fix yogurt pops. Just mix fruit, milk, yogurt and Cascadian Farm Oats & Honey Granola into a pop maker, freeze overnight and you'll have a perfect breakfast on the go.

1 container (6 oz) organic vanilla yogurt
1/3 cup milk
4 whole fresh strawberries
4 teaspoons Cascadian Farm® Oats & Honey Granola

Steps:

  • In medium bowl, beat yogurt and milk with whisk until well combined. (Mixture needs to be a pourable consistency.)
  • Cut each strawberry into slices. Apply strawberry slices to inside walls of 4 molds in quick-frozen ice pop maker (Zoku™). Insert pop sticks. Pour about 1 ounce (2 tablespoons) yogurt mixture into each mold. Freeze 3 to 4 minutes.
  • Add thin layer of granola to each mold. Pour yogurt mixture to "fill" line of each mold. Freeze completely. Follow manufacturer's instructions for removing pops.

1 1/2 cups plain Greek yogurt
1/2 teaspoon vanilla extract
1 tablespoon plus 1 teaspoon honey, divided
1 1/2 cups mixed berries, sliced if large, and/or cubed peaches
1/2 cup granola
Special Equipment
10 (2.5-ounce) ice-pop molds and sticks

Steps:

  • Whisk yogurt, vanilla, and 1 Tbsp. honey in a large bowl. Fold in berries and/or peaches. Microwave honey jar 10 seconds or place in a bowl of hot water to loosen. Place granola in a medium bowl and drizzle with remaining 1 tsp. warmed honey. Stir to lightly coat granola.
  • Divide yogurt mixture among molds, leaving about 3/4" at the top. Tap molds on counter to get rid of any air pockets; top with granola. Cover molds, insert sticks, and freeze until ice pops are firm, at least 2 hours.
  • Do Ahead
  • Ice pops can be made 3 months ahead. Freeze until solid, then transfer to an airtight container and keep frozen.

These little delights will be the star of any brunch gathering! You can substitute applesauce for mashed bananas, if desired. Use your favorite yogurt to fill the cups and top with fresh fruit of your choice!

cooking spray
¼ cup mashed banana
¼ cup honey
½ teaspoon almond extract
1 ¼ cups rolled oats
½ teaspoon ground cinnamon
¼ teaspoon salt
3 cups yogurt

Steps:

  • Spray 6 muffin cups with cooking spray.
  • Whisk banana, honey, and almond extract together in a bowl until smooth. Whisk oats, cinnamon, and salt together in another bowl. Stir oat mixture into banana mixture until evenly mixed. Press mixture into the base and up the sides of the prepared muffin cups. Refrigerate until chilled and firm, 1 to 2 hours.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Remove muffin cups from refrigerator and press each firmly into the base and sides of the muffin cups again.
  • Bake in the preheated oven until set and fragrant, 10 to 12 minutes. Press sides of granola cup into the muffin cup again with a spoon. Let cool for 20 minutes before removing from muffin cups. Fill each cooled cup with yogurt.

  • Mix together the milk, yogurt and 1 teaspoon of the honey. Then divide the mixture between your popsicle molds.
  • Place a few berries into each mold. Mix the last teaspoon of honey with the granola (you can place the honey in the microwave for 10 seconds if you are struggling to mix it) and top the yogurt with a little granola mixture.
  • Place a wooden ice cream stick into each mold and place the popsicles into the freezer for at least 4 hours before consuming.
