Steps:
- In a large skillet, coat chicken with salt, pepper, chili powder, cumin, cayenne, and garlic powder. Cook 5-7 minutes.
- Add the peppers and onions and cook for 5-7 minutes, or until they are soft. Remove chicken, onions and peppers from the pan and set aside.
- Place the tortilla in the skillet and add a layer of cheese on half of the tortilla.
- Add cooked chicken, peppers and onions. Top with more cheese and fold the tortilla in half.
- Cook for 6 minutes over medium heat, flipping half way.
- Garnish with fresh cilantro and serve with pico de gallo, guacamole, and sour cream on the side.
- Enjoy!

- Preheat oven to 450°. In a large bowl, combine the first 5 ingredients; toss to combine., Divide four tortillas between two baking sheets; spread with chicken mixture. Steps:
- In a large skillet, add chicken breast and season both sides with salt and pepper.
- Cook 15-18 minutes, flipping halfway and adding the onions when you flip the chicken. (Cooking times may vary depending on thickness of the chicken breast).
- Remove the chicken from the pan and continue to stir onions.
- Shred the chicken while onions are cooking.
- Return the shredded chicken to the pan with the onions. Add the BBQ sauce and stir. Remove from the pan and set aside.
- Place a tortilla in a pan and add a layer monterey jack and cheddar cheese on half of the tortilla.
- Place cooked chicken and onions, and top with the rest of each cheese. Fold in half and cook 6 minutes, flipping halfway.
- Serve with extra BBQ sauce and garnish with fresh parsley.

YUM...A TASTY BARBECUE CHICKEN QUESADILLA
I created this version of a quesadilla after searching recipezaar for a barbecue chicken quesadilla. When I didn't find one, I ended up making this relatively simple quesadilla that is quick, easy, and a kid pleaser.

Steps:
- Melt butter in frying pan.
- Add onions and sautee.
- Add mushrooms and sautee until desired doneness.
- Add garlic and stir.
- Add chicken to heat it up (if it's already warm you can skip this step).
- Take mixutre and place in a small bowl.
- Add the barbecue sauce and mix until everything is coated.
- Meanwhile, place about 1/2 the cheese on 1/2 of the two flour tortillas.
- Place mixture on top of the cheese and spread out.
- Sprinkle remaining cheese evenly over mixture.
- Fold the tortillas in 1/2 being careful that the ingredients don't fall out.
- Heat oil in frying pan.
- Place quesadillas in frying pan, and fry for about 1 1/2 minutes per side. The tortilla should become crispy.
- Take out of the frying pan, cut into slices and serve with sourcream if desired.

- Preheat the oven to 200°F.
- Combine the chicken and barbecue sauce in a medium bowl, season to taste with salt and pepper, and toss gently to coat.
- In a separate medium bowl, combine the chickpeas and the reserved liquid, garlic, and scallions and mash the ingredients together with a potato masher, leaving the mixture slightly chunky. Season to taste with salt and pepper and stir to combine.
- To assemble the quesadillas, lay the tortillas on a flat work surface and spread the chickpea mixture over half of each tortilla, dividing it evenly. Top with the chicken and sprinkle each with a few cilantro leaves and the cheeses. Fold the tortillas in half to form half-moons.
- Lightly grease a grill pan or cast-iron skillet with olive oil and heat it over medium-high heat until it's hot. Place two of the quesadillas in the skillet to grill for about 2 minutes per side, turning once, until the cheese is melted and the tortillas are golden brown. Transfer the quesadillas to a baking sheet and place them in the oven to keep them warm. Repeat the process with the remaining quesadillas, adding more oil to the pan if it's dry. Cut the quesadillas into wedges and serve warm.
BARBECUE BACON CHICKEN QUESADILLAS RECIPE

- Heat stove-top to medium-high heat.
- In a medium size bowl, combine the diced chicken, bacon, red onion, and barbecue sauce
- Spray a pan with non-stick cooking spray or butter.
- Place tortilla on the pan, and place about 1/2 or 3/4 cup of the chicken barbecue mixture and spread around so it is evenly spread.
- Sprinkle mozzarella cheese on top and place another tortilla on top of that.
- Once one side of the tortilla is golden brown and starting to harden, flip to the other side and cook until golden brown (this will take about 3 minutes each side).

- Preheat oven to 350 degrees F (175 degrees C).

HAWAIIAN BBQ CHICKEN QUESADILLAS
I happen to love those BBQ chicken pizzas, especially with a little pineapple on top. So here's a lunch time creation when pizza dough or bread was not an option. Quick and so good! If I cook chicken for this I boil a chicken breast (can be frozen to begin with, just drop it in the water). After about 15-20 minutes just cut open the chicken to see if it is cooked all the way through and ready to use. If the chicken breast is defrosted it takes much less time, but time is estimated. I would encourage others to change this recipe up to create other pizza favorites making a pepperoni quesadilla, meat lovers, hawaiian, chicken alfredo, etc. Get creative! Pizza anyone?

- Start to heat up a skillet on the stove because this won't take long.
- Take flour tortilla and sprinkle half of it with cheese and 1/4 of cooked chicken.
- Add bacon bits and a little bit of crushed pineapple (no juice) if desired. Pour a little bit of BBQ sauce on top. Don't be too generous with the sauce or it will seep out of the quesadilla.
- Spray the pan with cooking spray. Fold the tortilla in half and place in pan. It only takes a few short minutes to brown one side and then flip over to brown the other side.
- When done, cut into wedges and serve with added BBQ sauce if you like to dip.

- Mix the shredded chicken with the BBQ sauce. Grate the cheese and have the corn, beans, red pepper, and onion ready to use.
- Heat a nonstick pan over medium-low heat. Drizzle a little oil (about ½ teaspoon) on one side of a tortilla. Use your hands to spread it over both sides of the tortilla. Put the tortilla into the pan and let it cook for 10 seconds. Remove the pan from the heat and flip the tortilla over.
- Spread ¼ cup of the cheese over half of the tortilla. Top with ½ cup of the chicken and 1 tablespoon each of the corn, black beans, and red pepper. Fold the empty half of the tortilla over the filling and press the edges together. Put the pan back on the heat and let the quesadilla cook for 2 minutes. Flip it over and let it cook for 2 minutes more.
- Remove the quesadilla from the pan. Cut it in half then cut both pieces in half again so that you have 4 triangle slices. Repeat with the remaining tortillas and fillings.
