These classic chicken salad sandwiches are open for interpretation. Depending on your level of prep, you can create them using either home-cooked chicken or a rotisserie chicken from the store. From there, the creativity is all up to you. Make them yours, make them delicious, make them again!

1 medium stalk celery, chopped (1/2 cup)
1 small onion, finely chopped (1/3 cup)
1/2 cup mayonnaise or salad dressing

8 slices bread

Steps:

  • In medium bowl, mix all ingredients except bread. Spread mixture on 4 bread slices. Top with remaining bread.

4 cups drained canned chicken
ground black pepper to taste

Steps:

  • Mix mayonnaise, yogurt, paprika, and seasoned salt together in a bowl; fold in cranberries, celery, apple, grapes, and pecans. Stir in chicken and season with black pepper.

Ok, this recipe is inspired by a sandwich I'd eaten at Togo's sandwich shop. The toasted almonds in the salad really set it off! The measurements are approximated as i just throw everything together and add mayo little by little to taste. I HATE goopy salads, so I use just enough to cover the chicken, but not make it goopy.

2 chicken breasts
olive oil flavored cooking spray
salt and pepper
1/2 cup sliced almonds
2 celery ribs, chopped
1/4 cup red onion, thinly sliced then chopped
3 tablespoons whole grain mustard
1 cup mayonnaise

Steps:

  • Preheat oven broiler.
  • Spray the chicken breasts with olive oil spray and sprinkle with salt and pepper.
  • Broil the chicken breasts for 7 minutes on each side or until cooked through. (can BBQ if you prefer).
  • Chop chicken breasts and put in refrigerator to cool.
  • While oven is still hot, spread your almond flakes on a cookie sheet and toast on the broiling rack. Please keep an eye on them because they toast quickly, and you dont want burnt almonds.
  • Once the chicken is cooled, mix in the almonds, celery, onion, mustard and mayo.
  • You can either put the salad straight onto your choice of bread and add whatever you like on your sandwiches or can be eaten out of iceburg lettuce leaves for a no carb version.

Here's what you need: shredded chicken, celery, white onion, cherry tomatoes, apple, greek yogurt, salt, pepper, whole wheat bread, romaine lettuce

½ cup shredded chicken
2 tablespoons celery, diced
1 tablespoon white onion, finely diced
6 cherry tomatoes, sliced in half
2 tablespoons apple, diced
3 tablespoons greek yogurt
salt, to taste
pepper, to taste
2 pieces whole wheat bread
1 leaf romaine lettuce

Steps:

  • In a bowl, combine chicken, celery, onion, sliced tomatoes, apple, yogurt, salt and pepper.
  • Spread the chicken salad on one of the pieces of bread and place the lettuce on the other piece. Top with desired condiments and bring the two pieces of bread together. Cut in half and place in a reusable container with some fruits and veggies.
  • Enjoy!

I am a stickler for a good chicken salad...it has to be easy, sweet, with a bit of crunch and not too "mayonnaisey"! This is my interpretation of the perfect chicken salad sandwich filling. Enjoy!

1 (18 ounce) can of cooked white meat chicken, broken up and shredded (by hand or fork)
1 tablespoon mayonnaise (regular or light is fine)
1 tablespoon Dijon mustard
1 small granny smith apples or 1 small equally tart and crisp apple, diced into small pieces
1/2 cup raisins or 1/2 cup dried cranberries
1 stalk celery, diced into small pieces
1 teaspoon pepper

Steps:

  • Combine all ingredients into large bowl and refrigerate for 1-4 hours.
  • I like to serve on sweet Hawaiian bread or toasted whole wheat.
