YUMMY, FAST AND EASY ROAST BEEF WRAP
This is something that I throw together when I am in a crunch for something to feed my kids, or myself. I love wraps, and love trying to make new ones. Dip it in Ranch dressing, or any dressing that you like. Cut them up for appetizers, or use for a snack or light dinner. Yummy yummy!

This easy pot roast recipe is warm, hearty, and delicious! Plus, the technique could not be more simple. The vegetables break down, combining with the meat's juices to create a sauce! Serve over horseradish mashed potatoes.

- Preheat the oven to 275 degrees F (135 degrees C).
- Heat vegetable oil into a large oven-safe pot over medium-high heat. Season chuck roast with salt and black pepper, then cook in hot oil until brown on both sides; transfer to a plate.
- Add carrots, celery, and onion into the pot. Cook and stir until vegetables start to release their juices, scraping any brown flavor bits off the bottom of the pot, about 3 minutes. Add butter, and cook until onions are translucent, about 5 minutes. Sprinkle in rosemary; return roast to the pot and cover.
- Roast in the preheated oven until the chuck roast is tender, about 2 1/2 to 3 hours. Season vegetables with additional salt and black pepper, if desired.

- COOK BEEF Preheat oven to 230ºC (445ºF) bake. Place beef in a roasting dish. Drizzle with oil and sprinkle with thyme, garlic powder, salt and pepper. Use your hands to rub in. Transfer to oven, shut the door and turn temperature down to 200ºC (390ºF) bake. Roast for 40 minutes (for medium to medium-rare). Once cooked, remove from oven, cover with foil and leave to rest for 10 minutes.
- PREPARE SERVING INGREDIENTS Meanwhile, stir yoghurt and mustard together in a small bowl. Season to taste with salt and pepper. Grate carrot and dice or crumble feta.
- PREPARE MUSHROOMS AND ONIONS Wipe mushrooms clean and cut into quarters. Thinly slice onions and crush garlic.
- While beef is resting, heat oil in a large frying pan on medium. Add mushrooms, onions, garlic, vinegar, sugar and thyme. Cook, stirring frequently, until lightly caramelised (5-10 minutes). Reduce heat to low to keep warm.
