- 1.Heat the oil in a 10-inch skillet over medium-high heat. Add the beef and cook until it's well browned, stirring often. Pour off any fat. 2.Stir the picante sauce, broth and rice in the skillet and heat to a boil. Reduce the heat to low. Cover and cook for 20 minutes or until the rice is tender. Sprinkle the beef mixture with the parsley, if desired.

- SLICE meat thinly across the grain. Heat 1 tablespoons oil in large nonstick skillet or wok over high heat. Stir-fry beef in batches until browned, about 10 minute Remove from skillet.
- STIR-FRY vegetables, ginger and garlic in remaining 1 tablespoons oil for 3 to 5 minute until vegetables are crisp-tender. Return beef to skillet.
- STIR in gravy and Worcestershire. Cook until sauce thickens slightly and flavors are blended. Serve over cooked rice, if desired.

- In a saucepan, bring broth to a boil. Add rice. Reduce heat; cover and simmer for 20 minutes. Meanwhile, in a skillet, cook the beef, onions, green pepper and garlic over medium heat until meat is no longer pink and vegetables are tender. Drain and place in a large bowl. , In the same skillet, cook and stir eggs until set but still moist. Add to meat mixture. Fluff rice with fork. Stir in the rice, mushrooms, soy sauce and hot pepper sauce to meat mixture. , Transfer to a greased 13-in. x 9-in. baking dish. Cover and bake at 350° for 30 minutes or until heated through.

- In a Dutch oven, brown roast on all sides in oil. Add broth. Spread horseradish over roast; sprinkle with onion, salt and pepper. Cover and bake at 350° for 2 hours or until tender, basting frequently. Remove roast from the pan; let stand for 10 minutes. , Meanwhile, pour the pan juices into a large measuring cup; add water to equal 2 cups. Return to pan. Combine flour and cold water until smooth; gradually stir into pan juices. Bring to a boil; cook and stir for 2 minutes. Add additional water if a thinner gravy is desired. Slice roast; serve with gravy.

- In a large skillet, cook beef, onion, and green pepper over medium heat until beef is no longer pink. Drain well.
- Add rice, corn, stewed tomatoes, diced tomatoes, chili powder, garlic powder, and salt and bring to a boil. Remove from heat.
- Stir in Velveetta cheese, until cheese melts. Spoon into greased 9x13 baking dish.
- Combine cracker crumbs, pecans, and melted margarine, and sprinkle over top of casserole.
- Bake uncovered at 350°F for 25 minutes or until casserole is bubbly hot.
