GRILLED ROMAINE SALAD WITH SPICY CAESAR DRESSING



Grilled Romaine Salad with Spicy Caesar Dressing image

1 tablespoon prepared mayonnaise
1 teaspoon Dijon mustard
1 teaspoon freshly ground pepper
1 teaspoon pureed canned chipotles
1 teaspoon Worcestershire sauce
Few drops of hot pepper sauce
1 tablespoon fresh lime juice
1 teaspoon capers
5 anchovy fillets
8 cloves garlic
1 cup olive oil
2 tablespoon red wine vinegar
Salt and freshly ground pepper
24 romaine leaves
3 tablespoons olive oil
2 - ounce piece of parmesan cheese, shaved
Grilled croutons

Steps:

  • Put all ingredients, except the oil and vinegar, in a food processor and process until blended. Slowly mix in the oil, then mix in the vinegar. If too thick, add a little water.
  • Brush the leaves of romaine on both sides with the olive oil and season lightly with salt and pepper. Grill on each side for 30 seconds. Place 6 leaves on each plate, drizzle with the dressing and garnish with shaved cheese and croutons.

If you prefer, tomato juice can be substituted for the Clamato juice. Marinate steaks for at least 4 hours.

1 cup Clamato juice
1/2 cup vodka
2 tablespoons fresh lemon juice
1 tablespoon Worcestershire sauce
2 teaspoons kosher salt
1 teaspoon prepared horseradish
1/4 teaspoon celery seed
1 (1 1/2 lb) beef flank steak, fat trimmed
4 large red onions, cut crosswise into 3/4-in .-thick slices

Steps:

  • In a bowl, whisk together tomato juice, vodka, lemon juice, Worcestershire, salt, horseradish, and celery seed.
  • Add flank steak and red onions to marinade and chill at least 4 hours and up to 16 hours.
  • Prepare a hot charcoal or gas grill. Grill steak and onions, turning once and basting halfway through cooking, until onions are browned (6 to 8 minutes) and meat is done the way you like it, 10 to 12 minutes for medium-rare (cut to test).

Steps:

  • Combine olive oil, soy sauce and Montreal Steak Seasoning in a glass dish or plastic bag.
  • Add steak and cover dish or seal bag.
  • Refrigerate 30 minutes or longer for extra flavor.
  • Remove steak from marinade and discard marinade.
  • Grill or broil to desired doneness.

  • Add 1 pound steak.
  • marinate 30 minutes in a Ziplock bag.
  • Grill Broil.

3 tablespoons olive oil
2 teaspoons mccormick parsley flakes
2 teaspoons mccormick rosemary, crushed

Steps:

  • Sprinkle steaks with Steak Seasoning. Mix olive oil, parsley and rosemary; brush over steaks. Refrigerate 30 minutes to 1 hour.

1 lemon
1/3 cup caesar-style vinaigrette dressing
1 tablespoon Dijon mustard
3/4 teaspoon McCormick's Montreal Brand steak seasoning
3 boneless rib eye steaks, 1-inch thick (about 2-1/4 lbs.)
parsley sprigs and lemon slice (optional)

Steps:

  • Grate 1/2 t. zest and squeeze 2 t. juice from lemon into bowl; stir in salad dressing, mustard and steak seasoning.
  • Pierce steaks with fork; place in large plastic food storage bag. Pour in dressing mixture. Seal bag; turn to coat steaks. Refrigerate 1 hour.
  • Position broiler rack so that top of meat on rack in pan will be 4 inches from heat source. Preheat broiler. Transfer steaks to rack in broiler pan; discard dressing mixture. Broil, turning once, 5-6 minutes per side for medium rare. Let stand 5 minutes before serving. If desired, garnish with parsley and lemon slices.

  • Set a large skillet over medium heat. Add the butter. Once the butter is melted, add in the bread cubes. Toss well. Toast the bread cubes on all sides, tossing every minute for even browning. After 3 minutes, sprinkle the croutons with garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon cracked black pepper. Continue turning and cooking another 3-4 minutes until golden. Remove from heat and cool.
  • Whisk the egg yolks, Dijon mustard, and 1 1/2 tablespoons lemon juice together in a small bowl. Slowly drizzle in both oils, while whisking the mixture vigorously. This emulsifies the dressing for a thick silky texture.
  • Chop the lettuce and place it in a large salad bowl. Drizzle two-thirds of the dressing over the lettuce. Toss well to coat. Add more dressing if needed, but do not drench the lettuce. Then toss in the croutons. Garnish with shaved Parmesan cheese if desired. Serve immediately!
