This Gluten Free Chili Mac is a breeze to make and tastes great--it's sure to become a family fave that you'll want in your meal rotation!

2 teaspoons coconut oil
1 onion ((finely diced))
4 cloves garlic ((minced))
1 pound ground beef ((or any ground meat))
1/4 cup tomato paste
14.5 ounces canned tomatoes ((pureed or crushed; about 1 can))
2 cups beef broth
2 teaspoons oregano
1 tablespoon chili powder ((or to taste))
2 1/2 cups gluten-free elbow pasta ((uncooked))
1/2 cup dairy-free cheddar cheese

Steps:

  • Preheat a 10-12" skillet with a tight fitting lid over medium heat.
  • Add the oil.
  • Add the onions and saute until soft, about 3-5 minutes.
  • Crumble the ground meat and add in the garlic, stirring to break the meat up.
  • When browned, add in tomato paste, canned tomatoes, beef broth, oregano, and chili powder. Stir to combine.
  • Mix in the noodles. Bring to a boil, lower the heat, and cover. Cook until the noodles are al dente, about 7-10 minutes. The noodles will continue to soak up liquid as it sits, so don't worry if it seems thin at first.
  • Stir in cheddar shreds until melted. Serve with preferred garnishes.

1 bag frozen mixed peppers
1 medium sweet onion, chopped
2 cloves of garlic, minced (about a tbsp)
2 cans of BUSH'S Chili Beans (black and red)
2 tsp chili powder
Salt and pepper, to taste
20 oz diced tomatoes with chilis
8 oz chickpea pasta or other gluten-free pasta
1 cup of water
1 ¾ cup low-fat cheddar cheese
1 tsp cumin
Olive oil

Steps:

  • In a large pot, heat 1-2 tbsp of olive oil over medium heat. Add onion, garlic, and peppers, saute until cooked through and translucent. Add in beans, spices, and diced tomatoes. Stir until mixed together. Add in water and pasta. Stir again and bring mixture to a boil. Once boiling reduce heat to medium-low and simmer until pasta is cooked through (about ten minutes). Remove pot from heat and stir in cheese until well dispersed. Serve hot with crushed cheddar crackers, tortilla chips, cilantro, and/or avocado, if desired.

A really yummy chili mac type dish that can be made for carnivores and veggies alike, and can also be made gluten free. I'm a vegetarian and my hubby has celiac so this is a great recipe that we can both eat that we both love!

Number Of Ingredients 6

1 (16 ounce) package pasta noodles (any shape, regular or gluten-free)
half a package soy chorizo (trader joe's is veggie and gluten free, but you can use the real thing if you want)
1 (16 ounce) jar spaghetti sauce
8 ounces of shredded cheese (we like monterrey jack)
1 few dashes garlic
1 few dashes red chili pepper flakes

Steps:

  • Boil the pasta until just under al dente.
  • While pasta is cooking, heat/cook the chorizo in a skillet pan.
  • Drain and return pasta to cooking pot.
  • Combine pasta with spaghetti sauce and chorizo.
  • Stir until combined, then add garlic and chili pepper flakes to taste.
  • Stir in cheese, leaving some for sprinkling on top.
  • Pour into 9x13 pan and sprinkle with remaining cheese.
  • Bake at 400 for about 25 minutes.
  • Enjoy!
