HEALTHY CHILI MAC (GLUTEN FREE)
Steps:
- Preheat a 10-12" skillet with a tight fitting lid over medium heat.
- Add the oil.
- Add the onions and saute until soft, about 3-5 minutes.
- Crumble the ground meat and add in the garlic, stirring to break the meat up.
- When browned, add in tomato paste, canned tomatoes, beef broth, oregano, and chili powder. Stir to combine.
- Mix in the noodles. Bring to a boil, lower the heat, and cover. Cook until the noodles are al dente, about 7-10 minutes. The noodles will continue to soak up liquid as it sits, so don't worry if it seems thin at first.
- Stir in cheddar shreds until melted. Serve with preferred garnishes.

LIGHT AND EASY CHILI MAC N' CHEESE
Steps:
- In a large pot, heat 1-2 tbsp of olive oil over medium heat. Add onion, garlic, and peppers, saute until cooked through and translucent. Add in beans, spices, and diced tomatoes. Stir until mixed together. Add in water and pasta. Stir again and bring mixture to a boil. Once boiling reduce heat to medium-low and simmer until pasta is cooked through (about ten minutes). Remove pot from heat and stir in cheese until well dispersed. Serve hot with crushed cheddar crackers, tortilla chips, cilantro, and/or avocado, if desired.
ZESTY CHILI MAC (VEGETARIAN AND GLUTEN FREE!)
A really yummy chili mac type dish that can be made for carnivores and veggies alike, and can also be made gluten free. I'm a vegetarian and my hubby has celiac so this is a great recipe that we can both eat that we both love!

Steps:
- Boil the pasta until just under al dente.
- While pasta is cooking, heat/cook the chorizo in a skillet pan.
- Drain and return pasta to cooking pot.
- Combine pasta with spaghetti sauce and chorizo.
- Stir until combined, then add garlic and chili pepper flakes to taste.
- Stir in cheese, leaving some for sprinkling on top.
- Pour into 9x13 pan and sprinkle with remaining cheese.
- Bake at 400 for about 25 minutes.
- Enjoy!

- Heat a 6 quart pot or Dutch oven over medium high heat. Once hot, drizzle in the olive oil and let heat. Add the chopped mushrooms and diced onions. Sprinkle with salt. Sauté for 6-8 minutes, or until the onions and mushrooms have softened an released their juices.
- Add chili powder, cumin, oregano and black pepper. Cook for 30 seconds, stirring continuously to prevent burning.
- Pour in the crushed tomatoes (with juices), tomato sauce, and vegetable broth. Cover with a lid and bring to a boil over high heat. Once boiling, add the elbow noodles and kidney beans. Stir to prevent the pasta from sticking together. Boil uncovered until pasta is tender (see note 1).
