2 cups diced honeydew melon
1 English (seedless) cucumber, peeled and diced
1 small onion, diced
1 avocado - peeled, pitted, and chopped
1 jalapeno pepper, seeded and coarsely chopped
1 clove garlic, chopped
¼ cup white balsamic vinegar
1 tablespoon lime juice
salt and freshly ground black pepper to taste

Steps:

  • Blend honeydew melon, cucumber, onion, avocado, jalapeno pepper, garlic, white balsamic vinegar, lime juice, salt, and black pepper in a blender until smooth. Adjust seasonings if desired and chill before serving.

4 cups tomato juice
2 cups chopped seeded peeled tomatoes
1 cup diced green pepper
1 cup diced celery
1 cup diced seeded cucumber
2 garlic cloves, minced
1/2 cup diced onion
1/3 cup tarragon vinegar
2 tablespoons minced fresh parsley
1 tablespoon minced chives
1 teaspoon Worcestershire sauce
1 teaspoon salt, optional
1/2 teaspoon pepper
2 tablespoons olive oil

Steps:

  • In a large bowl, combine the first 13 ingredients. Cover and refrigerate for 4 hours or until chilled. Stir in oil just before serving.

1 small ripe avocado, chopped

Olive oil, for brushing
4 scallions
4 tomatillos, halved
2 zucchini, sliced lengthwise into 1/2-inch planks
Kosher salt
1/2 cup plain Greek whole-fat yogurt
8 to 10 fresh basil leaves
2 Kirby cucumbers or 1 English cucumber, quartered (do not peel)
2 cloves garlic
Juice of 1 lemon
Kosher salt
1/4 cup plain Greek whole-fat yogurt
2 tablespoons honey
Green pepper hot sauce, for serving

Steps:

  • For the veggies: Heat the grill to 400 degrees F.
  • Brush oil on the scallions, tomatillos and zucchini, then sprinkle them with salt and place over the direct heat of the grill. Cook, rotating or flipping occasionally, until everything chars and the tomatillos soften a bit, about 5 minutes.
  • Blend and chill soup: Combine the scallions, tomatillos and zucchini in a blender, along with the yogurt, basil, cucumber, garlic, lemon juice and a nice pinch of salt. Blend until smooth. If the consistency is too thick, add a handful of crushed ice and blend; this should fix it! Taste and season with salt, then taste again. Refrigerate at least four hours or up to overnight.
  • Serve. Mix the yogurt and honey in a small bowl. Serve the soup in bowls and drizzle with the yogurt mixture, and a shake or two of the hot sauce.

A splendid no-cook soup that will awaken taste buds dulled by summer heat. This soup can be eaten as soon as it is made, but definitely benefits from having time to stand for several hours so that the lively flavors can mingle. This soup is a great first course for a Mexican or Southwestern-style meal.

Number Of Ingredients 12

2 large cucumbers, peeled, quartered lengthwise, and seeded
1 large green bell pepper
6 romaine or large curly green leaf lettuce leaves, coarsely chopped
2 scallions, white and green parts, coarsely chopped
1/3 cup fresh cilantro leaves
1/2 cup store-bought salsa verde (tomatillo sauce)
1 mild or hot fresh green chili pepper, seeded and minced
Juice of 1 lime
1 teaspoon ground cumin
1 recipe Vegan Sour Cream (page 7)
1 to 2 cups rice milk, as needed
Salt and freshly ground pepper to taste

Steps:

  • Finely chop about half of one cucumber and half of the bell pepper and set aside. Coarsely chop the rest and place in a food processor along with the lettuce, scallions, and cilantro. Process until pureed, with a little texture remaining. Transfer to a large serving container.
  • Stir in the reserved cucumber and bell pepper, followed by the salsa verde, chili pepper, lime juice, cumin, sour cream, and 1 cup rice milk. Stir well to combine. Add more rice milk as needed to give the soup a slightly thick consistency.
  • Season with salt and pepper. Serve at once, or cover and refrigerate for an hour or so, until thoroughly chilled.

1 large poblano pepper
3 tablespoons extra-virgin olive oil, plus more, for drizzling
4 large cloves garlic, smashed
1/4 cup lightly packed fresh mint leaves
4 English cucumbers, peeled, seeded and chopped
Juice of 1 lemon
Kosher salt and freshly ground black pepper
1 small green or yellow heirloom tomato, seeded and finely chopped
1 tablespoon chopped fresh chives
Picked lump crabmeat or chopped cooked shrimp, for serving
Crusty bread, for serving

Steps:

  • Roast the poblano pepper directly over a gas burner, turning, until charred all over. (Alternatively, broil the pepper.) Transfer to a cutting board to cool slightly and then peel, seed and chop. Heat the olive oil in a small skillet over medium heat. Add the garlic and cook, stirring occasionally, until softened and golden brown, 3 to 5 minutes; set aside to cool slightly.
  • Put the mint, cucumbers, lemon juice, oil and garlic mixture and chopped poblano in a blender and puree until smooth. Season with salt and black pepper.
  • Ladle the gazpacho into 4 small bowls and top evenly with the tomato, chives and crab or shrimp. Drizzle with oil.

1 bunch cilantro
1 bunch parsley, plus more for garnish
6 sprigs basil
1/4 jalapeno, coarsely chopped
1 tablespoon extra-virgin olive oil
Kosher salt and freshly ground pepper to taste
1 scallion, trimmed and thinly sliced
3 tomatillos, cut into tiny dice
1/2 semi-ripe avocado, peeled and cut into tiny dice
1/2 Granny Smith apple, cut into tiny dice
1 teaspoon lemon juice
1 medium cucumber, peeled and seeded, cut into julienne strips

Steps:

  • Bring a large pot of salted water to a boil. Add cilantro, parsley and basil and cook until bright green, about 45 seconds. Remove the herbs and place into a bowl of ice water until cold. Drain.
  • In a blender, combine the herb mixture, jalapeno and 2 cups ice water and puree until smooth. With the motor running, add the oil. Using a sieve over a medium bowl, strain the herb puree and season with salt and pepper.
  • In a large bowl, toss together the scallion, tomatillos, avocado, apple and lemon juice and season with salt and pepper.
  • In a small bowl, season the cucumber with salt and pepper. Using your hands, squeeze out the excess liquid from the cucumber. Place 1/4 of the cucumber in the center of each of four soup bowls and surround the cucumber with the tomatillo mixture. Pour 1/4 of the herb puree into each bowl. Garnish each bowl with chopped parsley and serve.

1 ounce tequila
1 lb small shrimp (cooked)
1 small purple onion
1 small green bell pepper
2 large cucumbers
2 large celery ribs
6 small roma tomatoes
3 garlic cloves (minced fine)
4 cups tomato juice
4 1/2 cups v 8 spicy vegetable juice
2 tablespoons red wine vinegar
2 tablespoons olive oil
3 tablespoons lime juice
1 1/2 teaspoons salt
1/2 teaspoon black pepper
1/4 cup green onion (sliced)

Steps:

  • Wash vegetables.
  • Chop purple onion, bell pepper, unpeeled cucumbers, celery, and tomatoes.
  • Place chopped vegetables into a large bowl.
  • Add finely minced garlic, olive oil, salt, and pepper, tequila and cooked shrimp; stir gently to combine all.
  • Stir in lime juice and red wine vinegar.
  • Stir in tomato juice and V-8 juice.
  • Cover with plastic wrap and place in fridge until well chilled (about 1 hour for flavors to blend).
  • To serve, ladle each portion into a serving bowl and sprinkle each with desired amount of the chopped green onion.
