GRILLED SHRIMP WITH PONZU SAUCE
Steps:
- Prepare barbecue (medium-high heat).
- Whisk soy sauce, mirin, sugar lemon juice, oil, ginger, and lemon zest in a shallow glass bowl to blend.
- Add shrimp and stir to coat. Cover with plastic wrap and let marinate in the refrigerator for 15 to 20 minutes.
- Drain marinade into small saucepan and bring to boil for 1 minute. Reduce heat to low and let the sauce simmer for 5 minutes, stirring often. Remove sauce from heat and let cool slightly.
- Preheat grill. Grill shrimp until just opaque in center (shrimp should be pink and firm to the touch), turning occasionally, about 3 to 5 minutes.
- Divide bok choy or napa cabbage between 2 plates, top each with 5 shrimp, and drizzle with a liberal amount of warm sauce and serve. You can also serve the sauce on the side if you'd prefer.

- Whisk lemon juice, Worcestershire sauce, vinegar, oil and garlic until blended. Reserve 1/2 cup lemon juice mixture for later use.
- Pour remaining lemon juice mixture over shrimp in shallow dish; toss to evenly coat shrimp. Refrigerate 30 min. to marinate.
- Heat grill to medium heat. Remove shrimp from marinade; discard marinade. Grill shrimp 4 to 5 min. or until they turn pink, turning after 3 min.

- Soak 12 wooden skewers in water for 30 minutes to prevent charring.
- Meanwhile, make the sauce: Bring sugar and lime juice to a simmer in a small saucepan. Cook, stirring, until sugar dissolves, about 2 minutes. Remove from heat; stir in lime zest, chili paste, and fish sauce. Season with salt.
- Make the shrimp: Heat grill to high. Brush grates with oil. Thread 3 shrimp onto each skewer; season with salt. Divide sauce in half; reserve half for serving. Grill shrimp for 1 minute; brush with sauce. Flip, and grill for 1 minute more; brush with sauce again. Flip, and grill, brushing occasionally with sauce, until opaque, 1 to 3 minutes more. Serve with reserved sauce.
EASY GRILLED SHRIMP
I love trying new things on the grill. Some disasters have occurred (don't ask), but this was a huge success!! Easy and quick. If you don't make some pasta or something filling to serve on the side, you'll have to beat them away from your grill with a spatula.

- Mix Italian dressing (I use Kraft Zesty Italian) and lime juice to make marinade.
- Place shrimp in resealable container.
- Pour marinade over shrimp and gently stir.
- Cover and refrigerate for 20 to 30 minutes. No longer than that or the acid in the lime will start to "cook" the shrimp.
- Thread shrimp on skewers and place on prepared grill. Be careful not to overcook.
- Dunk hot, grilled shrimp into melted butter and eat as many as you can!
- I usually serve linguini with butter and parmesan cheese with this.
