2 teaspoons butter, or as needed
8 slices white bread, cut into cubes
1 (16 ounce) package bulk spicy breakfast sausage
2 green onions, minced
1 (10.75 ounce) can cream of mushroom soup
½ cup milk
6 eggs, beaten
1 cup milk
½ cup shredded Gruyere cheese
½ cup shredded extra-sharp Cheddar cheese

Steps:

  • Grease an 8 1/2x11-inch baking dish with butter. Place the bread cubes in the baking dish.
  • Break the sausage into small pieces into a large skillet over medium heat. Cook and stir sausage until completely browned, 5 to 7 minutes. Add green onions; toss once and remove skillet from heat. Drain as much grease as possible from the skillet. Spread sausage and green onion mixture over bread cubes.
  • Stir cream of mushroom soup and 1/2 cup milk together in a bowl; pour over the layer of sausage in the baking dish.
  • Whisk eggs and milk together in a bowl; pour over the sausage. Top with Gruyere and Cheddar cheese. Cover the dish with aluminum foil and refrigerate 8 hours to overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake uncovered in preheated oven until the middle is set, about 1 hour.

3 tablespoons unsalted butter
3 tablespoons all-purpose flour
2 cup whole milk, warmed
4 large egg yolks
2 tablespoons grated Parmesan
5 large egg whites
Kosher salt, as needed
1 cup overseasoned cooked vegetables, chopped (such as sautéed spinach, green bean salad, sautéed mushrooms, roasted eggplant, etc.)

Steps:

  • In a small saucepan, melt 2 and 1/2 tablespoons butter over medium heat. Whisk in flour and cook for 2 minutes, stirring frequently. Remove from heat and whisk in warm milk. Return to heat and cook, whisking constantly, until thickened, 2 to 3 minutes
  • In a small bowl, whisk yolks. Whisking constantly, dribble yolks into the saucepan until they are completely incorporated. Scrape mixture into a large bowl and cool to room temperature
  • Heat oven to 375 degrees. Grease a 1 and 1/2 quart soufflé dish with remaining 1/2 tablespoon butter and sprinkle the bottom and sides evenly with cheese
  • In a clean mixing bowl, beat egg whites with a pinch of salt until they form stiff peaks, but are not dry. Fold a third of the whites into yolk mixture to lighten it, then fold in remaining whites. Gently fold in vegetables
  • Immediately scrape mixture into prepared dish. Transfer to oven and bake until puffed, golden and slightly firm to the touch, about 30 minutes. Do not open the oven door during baking. Serve immediately

1/2 cup butter or margarine, melted
1/4 cup fresh thyme, finely chopped
1/4 cup fresh rosemary, finely chopped
1/4 cup fresh parsley, finely chopped
1 cup grated Parmesan cheese
1 pound sausage, cooked, crumbled and drained

Steps:

  • Flatten each roll into a 4-inch circle. Place butter in a shallow bowl. Combine herbs and cheese and place in another shallow bowl. Coat each dough circle with butter and then with cheese mixture. Arrange 6 dough circles evenly in a large sprayed bundt pan, to cover the bottom. Circles will overlap. Sprinkle half the cooked sausage over dough. Repeat with 6 more dough circles and the remaining sausage. Add last 6 dough circles to the top to cover sausage. Cover with plastic wrap and let rise until almost double.Remove wrap and bake at 350°F for 35-40 minutes. Cover with foil last 10 minutes of baking. Remove from oven and invert onto serving platter.

2 cans (15 ounces each) black beans, rinsed and drained

1 medium green pepper, chopped
1 medium onion, chopped
1/2 cup water
5 bacon strips, cooked and crumbled
3 tablespoons brown sugar
2 tablespoons cider vinegar
3 garlic cloves, minced
1/4 teaspoon dried thyme
1/4 teaspoon dried marjoram
1/4 teaspoon cayenne pepper
Hot cooked rice

Steps:

  • In a large skillet, brown the sausage. Transfer to a 4-qt. slow cooker; add the beans, tomato sauce, green pepper, onion, water, bacon, brown sugar, vinegar, garlic, thyme, marjoram and cayenne. 1 lb sausage, cooked and drained
6 -8 slices white bread, cubed and no crust
1 cup swiss cheese, shredded

1 teaspoon prepared mustard
1 (3 ounce) can chopped mushrooms, drained

3/4 pound bulk breakfast sausage
1 green bell pepper
6 home-style white bread slices, crusts trimmed, cut into cubes
1 cup seasoned corn bread stuffing mix
1 cup (packed) grated sharp cheddar cheese (about 4 ounces)
4 eggs
2 cups milk
1/2 teaspoon salt
2 14 1/2-ounce cans stewed tomatoes (preferably Cajun style)

Steps:

  • Preheat oven to 350°F. Butter 8-inch square baking dish. Place sausage and bell pepper in heavy large skillet over medium-high heat. Sauté until sausage is cooked through and pepper is tender, breaking sausage into small pieces with back of spoon, about 10 minutes. Using slotted spoon, transfer sausage and pepper to small bowl.
  • Layer half of bread, stuffing mix, sausage mixture and cheese in prepared dish. Repeat layering. Combine eggs, milk and salt in small bowl and whisk until blended; season with pepper. Pour egg mixture over sausage mixture.
  • Bake until casserole begins to brown and custard is set, about 40 minutes.
  • Meanwhile, bring tomatoes with juices to boil in heavy medium saucepan over high heat. Cook until tomatoes thicken to sauce consistency, stirring occasionally, about 9 minutes.
  • Spoon soufflé onto plates. Spoon tomato sauce alongside and serve.
