STEPH'S ZESTY SWEET AND SOUR MEATBALLS

These meatballs are great! I came up with them on a whim one night while searching through my pantry trying to answer the age old question, 'What's for dinner?' My family LOVES these! I have also taken them to several BBQ's and they are ALWAYS a big hit! For dinner, I like to serve them with a side of steamed minute rice to go along with the meatballs. I hope you enjoy!

1 (15 ounce) can pineapple chunks, drained with juice reserved
1 tablespoon soy sauce
⅓ cup apple cider vinegar
½ cup dark brown sugar
1 tablespoon cornstarch
1 pound lean ground beef
1 egg
1 teaspoon Worcestershire sauce
¼ cup milk
½ cup Italian dry bread crumbs
2 tablespoons dried minced onion
½ teaspoon salt
½ teaspoon ground black pepper
1 green bell pepper, chopped

Steps:

  • Heat a slow cooker to Medium-High; stir the reserved liquid from the pineapple chunks, soy sauce, vinegar, and brown sugar together in the slow cooker. Whisk the cornstarch into the mixture until dissolved.
  • Mix the ground beef, egg, Worcestershire sauce, milk, bread crumbs, onion, salt, and pepper together in a bowl; form into 1-inch balls.
  • Heat a large skillet over medium heat; cook the meatballs in the hot skillet until browned on all sides, about 5 minutes. Place the meatballs into the slow cooker. Add the reserved pineapple chunks and green bell pepper.
  • Cover and cook until the meatballs are no longer pink in the center, about 1 hour.

4 eggs
1 cup shredded Cheddar cheese
½ cup cottage cheese
½ cup finely chopped onion
1 cup finely chopped pecans
1 teaspoon dried basil
1 ½ teaspoons salt
¼ teaspoon dried sage
2 cups Italian seasoned bread crumbs
¼ cup vegetable oil
¼ cup white vinegar
¾ cup apricot jam
1 cup ketchup
¼ cup minced onion
1 teaspoon dried oregano
1 dash hot pepper sauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a large bowl, mix together the eggs, Cheddar cheese, and cottage cheese until well blended. Mix in 1/2 cup onion, pecans, basil, salt and sage. Stir in bread crumbs. Form the mixture into 2 inch balls, and place them in a 9x13 inch baking dish.
  • In another bowl, whisk together the vegetable oil, vinegar, apricot jam, ketchup, 1/4 cup onion, oregano and hot pepper sauce. Pour over meatballs.
  • Bake uncovered for 35 to 40 minutes in the preheated oven, until meatballs are firm, and sauce is thick and bubbly.

SAUCE:
1/2 cup packed brown sugar

Vegetarian Meatballs -- They really taste like the real thing!! We have fooled many people with this.

Number Of Ingredients 10

4 beaten eggs (you can use egg replacers)
2 cups grated colby cheese (you can use imitation cheese) or 2 cups grated cheddar cheese (you can use imitation cheese)
3/4 cup pecan meal (if you cannot find pecan meal, you can just grind up pecans in your food processor until they are in)
2 tablespoons onion flakes or 2 small onions, chopped
1 cup cracker crumb
1/8 teaspoon salt
2 packages George Washington broth (golden or dark)
1 cup ketchup
1 cup water
1 cup brown sugar (firmly packed)

Steps:

  • Mix ingredients in one at a time until well mixed.
  • Form into balls with greased hands.
  • Fry vegetable oil or bake until golden brown lightly on all sides.
  • Place all of the meatballs in a pan or skillet and pour in 2 cups of water and 2 packages of George Washington Broth.
  • Simmer until water almost disappears.
  • (At this point you can use them as regular meat balls make the sauce below) Mix together your sweet and sour sauce.
  • Place the meatballs in a baking dish or in a crockpot.
  • Pour sauce over meatballs.
  • Bake at 350 degrees for 30 minutes or turn on high in the crockpot and leave until all is warm.
