SPINACH SOUP



Spinach Soup image

Number Of Ingredients 10

2 tablespoons olive oil
10 ounces fresh spinach
2 cloves garlic, finely minced
1/2 medium onion, chopped
4 tablespoons (1/2 stick) butter
1/4 cup all-purpose flour
3 cups whole milk
2 teaspoons kosher salt, or more to taste
1/2 teaspoon cayenne pepper, or more to taste
Freshly ground black pepper

Steps:

  • In a large skillet, heat the olive oil over medium heat. Add the spinach and garlic and cook, stirring constantly, until the spinach is wilted, 2 to 3 minutes. Add the mixture to a blender or food processor, pour in 1/4 cup hot water and pulse until pureed. Set aside.
  • In a large soup pot, cook the onions in the butter over medium heat until the onions begin to soften. Sprinkle the flour over the top and stir to combine. Cook for about 2 minutes, then pour in the milk, stirring occasionally. Add the salt, cayenne and some black pepper and stir to combine. Cook over medium heat for 5 minutes, stirring constantly. Pour in the pureed spinach, then cook until thickened, another 3 to 5 minutes.
  • Check the seasonings, adding more salt, black pepper or cayenne as needed. Serve warm.

2 tablespoons extra virgin olive oil
1 purple onion, chopped
1 large carrot, chopped
1 cup celery, including leaves
3 garlic cloves
1 teaspoon sea salt
1 pinch fresh ground pepper
6 cups vegetable stock or 6 cups chicken stock
2 vegetable bouillon cubes or 2 chicken bouillon cubes
2 cups chopped tomatoes
1/2 cup quinoa (rinsed)
2 cups white kidney beans (rinsed and drained)
1 teaspoon curry powder
1 pinch ground nutmeg
3 cups spinach leaves (baby)

Steps:

  • Heat oil over medium heat in a large soup pot or dutch oven. Add onion and saute over med-low heat until translucent.
  • Add carrots, celery, garlic and salt. Saute until vegetables are golden about 5 minutes.
  • Add stock. Unwrap cubes and add to liquid. Add tomatoes, quinoa, beans and spices. Bring to a boil and reduce heat to simmer for 15-20 minutes or until quinoa is tender.
  • Add spinach and cover. Cook briefly until leaves are wilted.
  • Season with salt and pepper. Serve with crusty bread.

4 cups water
1 tablespoon canola oil
1 medium onion, chopped

1 can (14-1/2 ounces) Mexican diced tomatoes
1 can (14-1/2 ounces) diced tomatoes
1 can (8 ounces) tomato sauce
1 cup medium salsa
3 medium zucchini, halved and sliced
2 medium carrots, sliced
1 cup frozen white corn
1 can (4 ounces) chopped green chilies
3 teaspoons ground cumin
2 teaspoons chili powder
1 teaspoon dried basil
Shredded cheddar cheese and tortilla chips, optional

Steps:

  • Place chicken in a Dutch oven; add water. Bring to a boil; reduce heat. Simmer, covered, 10-15 minutes or until chicken juices run clear. Remove chicken; cut into 1/2-in. cubes and set aside., In a large skillet, heat oil over medium-high heat. 20 oz frozen spinach
6 oz cream cheese, cubed
1 ¼ cups shredded mozzarella cheese, divided
5 tablespoons grated parmesan cheese, divided
1 tablespoon Tasty Zesty Spice Blend, plus more for topping
½ teaspoon kosher salt
chip, or carrots or celery sticks, for serving

Steps:

  • In a medium microwave-safe bowl, microwave the spinach until completely defrosted, about 5 minutes. Remove from the microwave and let sit until cool enough to handle, about 5 minutes.
  • Transfer the spinach to a surface lined with 4 paper towels. Gather the towels around the spinach and position over the bowl. Wring out to remove all of the moisture. Discard any excess liquid that accumulates in the bottom of the bowl.
  • Return the spinach to the bowl and add the cream cheese, 1 cup (100 g) shredded mozzarella, 4 tablespoons Parmesan, the zesty spice blend, and salt.
  • Microwave for 4 minutes, stirring halfway, until the cream cheese is completely softened and the mozzarella is melted. Stir well to combine, then microwave for 30 seconds more to melt any remaining cream cheese clumps.
  • Top with remaining ¼ cup mozzarella and tablespoon of Parmesan. Return to the microwave for 1½-2 minutes, until the mozzarella on top is melted. Sprinkle with more zesty spice blend.
  • Serve with chips, carrots, or celery.
  • Enjoy!

2 (10 ounce) packages frozen chopped spinach, thawed and squeezed dry
1 tablespoon instant bouillon granules
1 tablespoon lemon juice (I used the reconstituted type)
1/2 cup mayonnaise
1/4 cup sour cream
1/2 teaspoon dried dill weed
1/4 cup finely diced onion
1/4 teaspoon Tabasco sauce (hot sauce)
1 1/4 teaspoons white pepper
1 (8 ounce) can water chestnuts, drained and chopped fine

Steps:

  • Thaw and drain spinach.
  • Squeeze as dry as possible, set aside.
  • In a small bowl, combine beef bouillon granules and lemon juice to dissolve granules, set aside, in medium bowl combine mayonnaise, sour cream, dill weed, onion, Tabasco, white pepper, and water chestnuts.
  • Stir in lemon and bouillon mixture.
  • Stir in spinach and mix well.
  • Pour into non-metal container and refrigerate until ready to use.

1 pound bulk Italian sausage
3 cans (14-1/2 ounces each) reduced-sodium chicken broth
1 can (15 ounces) black beans, rinsed and drained
1 can (15 ounces) pinto beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes and green chilies, undrained
1 can (14-1/2 ounces) Italian diced tomatoes
1 large carrot, chopped
1 jalapeno pepper, seeded and chopped
1-1/2 teaspoons Italian seasoning
1 teaspoon dried minced garlic
1-1/2 cups cooked elbow macaroni

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink; drain. , Transfer to a 5-qt. slow cooker. Stir in the broth, beans, tomatoes, carrot, jalapeno, Italian seasoning and garlic. , Cover and cook on low for 7-8 hours or until heated through. Just before serving, stir in macaroni.
