This is a fabulous salad that is SURE to please all of your guests. It is easy to increase or decrease the size of the recipe to suit your needs. Dont use Extra Virgin Olive Oil for this salad. Use an olive oil suitable for salads. I really hope you enjoy my creation!!!

1/2 cup olive oil, for salads
1 teaspoon lime zest
1/4 cup lemon juice
2 tablespoons fresh basil, finely chopped
4 garlic cloves, finely chopped
2 -3 tablespoons Dijon mustard
salt, to taste
pepper, freshly ground, to taste
1 lb orzo pasta
8 ounces feta cheese, crumbled
1 large orange bell pepper, chopped small
1 large red bell pepper, chopped small
1 1/2 cups tomatoes, seeded, and chopped
3 tablespoons capers
3/4 cup kalamata olive, pitted and quartered
1/2 red onion, finely chopped
1 tablespoon fresh oregano, finely chopped
2 green onions, chopped

Steps:

  • First cook your orzo pasta per package directions, cooking until al dente, and drain.
  • In a medium sized, nonreactive bowl, gradually beat together the lime zest, lemon juice, salad quality olive oil, basil, garlic, and mustard until an emulsion forms.
  • Then season the oil mixture with salt and pepper to taste.
  • Mix your pasta, feta cheese, peppers, tomatoes, capers, kalmata olives, and chopped red onion together in a bowl.
  • Pour the vinaigrette over the pasta mixture and mix to combine.
  • Add oregano and green onions, toss, and then add extra salt and pepper to your tastes.
  • Chill salad for 1-2 hours for best results.
  • You can make this in the morning and even serve it in the evening, but dont save it for too long (you wont have leftovers I promise LOL).

2 tablespoons olive oil
2 tablespoons jarred green olive tapenade
2 teaspoons white wine vinegar
1 1/2 teaspoons dried oregano
1/2 teaspoon Calabrian chili paste
1/2 teaspoon kosher salt
1 to 2 hearts of romaine lettuce, sliced thin
2 roasted red peppers, sliced into thin strips
1 bulb fennel, shaved thin
One 6-ounce combo package of provolone and genoa salami, sliced thin
1/2 cup olive oil
1/2 cup par-cooked orzo pasta (see Cook's Note)
1/4 teaspoon kosher salt

Steps:

  • For the dressing: Whisk together the olive oil, tapenade, vinegar, oregano and chili paste in a large bowl. Season with the salt.
  • For the salad: Add the chopped romaine, roasted red pepper, fennel, provolone and salami to the dressing. Toss well to coat.
  • For the pasta: Heat the olive oil in a medium skillet over medium-high heat. When the oil is hot, add the par-cooked pasta and fry until golden brown, about 4 minutes. Using a slotted spoon, remove to a paper towel-lined plate and season with the salt. Sprinkle the crispy orzo over the top of the salad and serve.

1 bunch scallions
1/3 cup plus 2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 cup uncooked orzo pasta
1/4 cup red wine vinegar
1 tablespoon Dijon mustard
2/3 cup Kalamata or cured black olives, pitted and chopped
1 cup diced cucumber
1 cup halved cherry or grape tomatoes
1/4 cup fresh chives, finely chopped
1/4 cup fresh dill, chopped
1/4 cup fresh parsley, chopped
1/4 red onion, finely diced
6 ounces goat cheese, crumbled

Steps:

  • Preheat a grill to high heat.
  • Toss the scallions in a bowl with 2 tablespoons olive oil and sprinkle with salt and pepper. Grill the scallions until the bulbs are tender and the greens are well-charred, about 8 minutes. Set aside to cool. (Alternately, you can char the scallions in a cast-iron pan on the stove.) Chop the white and light green parts finely, then discard the remaining ends of the scallions.
  • Bring a large pot of salted water to a boil for the orzo. Drop in the orzo and begin to cook. Meanwhile, add the chopped scallions to a medium bowl. Add the vinegar, Dijon mustard, remaining 1/3 cup olive oil and half of the olives and whisk until combined. Season with salt and pepper.
  • When the pasta is finished cooking, drain and rinse to cool. Immediately toss in some of the vinaigrette, along with the cucumber, tomatoes, herbs, red onion and remaining olives. Mix well. Add more dressing to taste. Top with the goat cheese and serve.

4 cups chicken broth
1 1/2 cups orzo
1 (15-ounce) can garbanzo beans, drained and rinsed
1 1/2 cups red and yellow teardrop tomatoes or grape tomatoes, halved
3/4 cup finely chopped red onion
1/2 cup chopped fresh basil leaves
1/4 cup chopped fresh mint leaves
About 3/4 cup Red Wine Vinaigrette, recipe follows
Salt and freshly ground black pepper
1/2 cup red wine vinegar
1/4 cup fresh lemon juice
2 teaspoons honey
2 teaspoons salt
3/4 teaspoon freshly ground black pepper
1 cup extra-virgin olive oil

Steps:

  • Pour the broth into a heavy large saucepan. Cover the pan and bring the broth to a boil over high heat. Stir in the orzo. Cover partially and cook until the orzo is tender but still firm to the bite, stirring frequently, about 7 minutes. Drain the orzo through a strainer. Transfer the orzo to a large wide bowl and toss until the orzo cools slightly. Set aside to cool completely.
  • Toss the orzo with the beans, tomatoes, onion, basil, mint, and enough vinaigrette to coat. Season the salad, to taste, with salt and pepper, and serve at room temperature.
  • Mix the vinegar, lemon juice, honey, salt, and pepper in a blender. With the machine running, gradually blend in the oil. Season the vinaigrette, to taste, with more salt and pepper, if desired.
  • Yield: 1 3/4 cups

1/3 cup extra-virgin olive oil
1/3 cup apple cider vinegar
1 tablespoon Dijon mustard
Kosher salt
2 tablespoons extra-virgin olive oil
1 onion, peeled, halved and chopped
Kosher salt
1 pound orzo
1 bulb fennel, halved and sliced thin
3/4 cup dried cranberries
2 cups baby arugula, chopped
1/2 pound fresh mozzarella cheese, diced

Steps:

  • For the dressing: In a large bowl, whisk together the olive oil, vinegar, Dijon mustard and 1/2 teaspoon salt. Set aside.
  • For the salad: Heat the olive oil in a large skillet over medium heat. Add the onion and 1/4 teaspoon salt and cook, stirring often, until soft and golden brown, about 12 minutes. Add the onions to the dressing and stir to coat.
  • Bring a large pot of salted water to a boil. Cook the orzo until al dente, about 10 minutes. Drain it well and, while it is still warm, add to the bowl of dressed onions. Stir in the fennel and dried cranberries and allow to cool to room temperature, about 20 minutes. Add the arugula and mozzarella and toss to combine. Serve at room temperature or refrigerate until ready to serve.
  • Cook's Note: If serving the next day, a drizzle of olive oil will help to bring this salad back to life.

1 cup uncooked orzo pasta
2 cups cooked chickpeas
1 cup crumbled feta cheese
1 cup chopped parsley (or a parsley and basil mix)
1 cup chopped green onions or 1 cup red onion
15 -20 ripe cherry tomatoes (halved or quartered)
1 large bell pepper, chopped (any color)
2 tablespoons capers, roughly chopped
1/2 cup olive (black or green, halved)
2 (6 ounce) cans tuna (chunks or flaked)
4 -6 hardboiled egg, quartered
3/4 cup olive oil
1/2 cup lemon juice
1/4 cup thick plain yogurt
2 crushed garlic cloves
salt and pepper

Steps:

  • Cook orzo al dente according to packet directions.
  • Drain and rinse with cold water, drain again then transfer to a bowl.
  • Add all the salad ingredients except for the tuna and eggs.
  • In a jar mix all the dressing ingredients and shake well, pour half of the dressing over the salad and mix together.
  • Cover and place in the fridge so the flavors can develop, for at least one hour.
  • Before serving add the rest of the dressing and the tuna, toss and garnish with the eggs.
  • Alternatively serve the rest of the dressing in a small jug on the side.
