Steps:

1 cup shredded zucchini
1 cup applesauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 36 muffin cups or line with paper liners.
  • Mix bananas, white sugar, zucchini, applesauce, eggs, brown sugar, and vanilla extract together in a bowl. Combine all-purpose flour, whole wheat flour, cinnamon, salt, baking soda, and baking powder in a sifter and sift into the banana mixture; add oats and mix until batter is just combined. 1/4 teaspoon baking powder
1/4 teaspoon baking soda

1/4 cup canola oil
1 cup finely shredded unpeeled zucchini
1/2 cup chopped walnuts

Steps:

1/2 cup vegetable oil
4 eggs (or vegan substitute or equivilant)
1/3 cup water
2 cups zucchini, shredded

2 1/4 cups flour
1 cup oats
1 1/2 teaspoons salt

2 teaspoons baking soda
1 teaspoon cinnamon
2 cups sugar
1/2 cup brown sugar

Steps:

  • Combine first five (wet) ingredients in a large bowl and set aside.
  • Combine dry ingredients and add to wet ingredients, mixing well.
