Steps:
- Preheat oven to 425°F (220°C).
- Cut zucchini into fries and set aside.
- In a large bowl combine panko, parmesan, garlic powder, basil, salt, and pepper.
- Whisk eggs in a shallow bowl or dish.
- Dip zucchini in eggs, coating evenly, and then toss in bread crumb mixture.
- Place on a baking sheet lined with parchment paper. Bake for 15-20 minutes, flipping halfway.
- Prepare dip while fries are baking. Combine all dip ingredients in a small bowl and set aside in the refrigerator until ready to use.

ZUCCHINI FRICO
It may be daunting to imagine, but this dish is really quite simple. All you do is take some good hard cheese, grate it, spread it in a nonstick pan and let it melt until it turns golden. Montasio is traditional, but Parmesan, asiago or a young, not too salty pecorino will all work well, too, so use whatever you have. You can form frico into small individual crackers for neater serving, or you can make one large cracker the size of your pan and break it apart as you devour it. Frico on its own doesn't need much embellishment. All it truly requires is a chilled cocktail or a glass of Italian white wine served alongside. But this one incorporates zucchini. First, I browned thin rounds of zucchini in olive oil, then I topped them with the cheese and let them cook. It took only five minutes, plus another minute or so to let the cheese crisp up after I turned it out of the pan.

- Brush a large nonstick skillet with oil and heat over medium-high until hot. Arrange half the zucchini rounds in a single layer, allowing about an inch of space between them. Cook, without moving them, until undersides are dark golden, about 2 minutes. Carefully flip and cook until golden, about 2 minutes more.
- Sprinkle half the cheese evenly over zucchini and into the spaces between it. Cook, without moving, until cheese looks lacy and translucent, and no longer sticks to the pan, about 5 minutes. Tip the skillet and using a spatula, gently help slide the frico in one piece onto a large plate. Sprinkle with torn basil and finish with pepper. Repeat with remaining zucchini and cheese. Break into pieces to serve.

- Preheat an oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper or aluminum foil lightly greased with cooking spray.
- Cut the peeled zucchini in half lengthwise and remove the seeds. Slice the zucchini ito 1/2 x 1/2 x 4 inch pieces.
- Combine the bread crumbs, cheese, and seasoned salt in a pie plate. Dip the zucchini fries into the melted margarine, then press into bread crumbs. Gently toss between your hands so any bread crumbs that haven't stuck can fall away. Place the breaded zucchini onto the prepared baking sheet.

- Cut off ends of zucchini. Cut each zucchini in half crosswise; cut each half into 8 (3-inch) spears. Place spears in colander over bowl; sprinkle with salt. Cover; let stand at room temperature 4 hours so zucchini spears can dry.
- Once zucchini spears are dry, rinse spears and pat completely dry with paper towels; set aside.
- Heat oven to 425°F. Line cookie sheet with parchment paper; spray paper with olive oil cooking spray. Place flour in shallow bowl. Beat eggs in another shallow bowl. Place bread crumbs in third shallow bowl.
- Coat each zucchini spear with flour; dip into eggs and coat with bread crumbs. Place on cookie sheet.

- Grate zucchini with a cheese grater or food processor. Spread out onto a double layer of paper towels. Sprinkle with salt. Let sit at least 15 minutes to draw out moisture. Pat dry and then wrap zucchini in dry towels and squeeze to remove as much moisture as possible. May be done 1-3 days in advance and stored in paper towels in a ziplock bag in refrigerator.
