ZOPF (TRADITIONAL SWISS PLAITED BREAKFAST BREAD)

Zopf (Traditional Swiss Plaited Breakfast Bread) image

Zopf is a soft milk bread and is a family tradition with us; it is usually served with butter and jam, although can also be served with soft cheeses and cold meats. It is a breakfast or dinner bread. If you need to know how to do the plait, let me know and I'll send you a diagram! Based on a Betty Bossi recipe.

Time 3h

Yield 2 loaves

Number Of Ingredients 8

1 kg plain flour
1 tablespoon salt
30 g yeast (or a 1/4 ounce packet)
1 tablespoon sugar
125 g melted and cooled butter
650 -700 ml milk

I discovered this Swiss Sunday bread when I was visiting friends in Switzerland. One of these friends is a pastry chef! The measurements given to me were metric, so I had to convert them. This makes a beautiful loaf and is super easy to make!

Time 1h35m

Yield 12

Number Of Ingredients 7

1 (.25 ounce) package active dry yeast
1 ⅓ cups warm milk
1 egg yolk
2 tablespoons butter, softened
3 ½ cups bread flour
1 egg white
1 tablespoon water

Steps:

  • In a large bowl, dissolve yeast in warm milk. Let stand until creamy, about 10 minutes. Add the egg yolk, butter and 2 cups of bread flour; stir well to combine. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  • Divide the dough into 3 equal pieces and roll each piece into a 14 inch long cylinder. Braid the pieces together and place on a lightly greased baking sheet. Cover with a damp cloth and let rise until doubled in size, about 1 hour. Meanwhile, preheat oven to 425 degrees F (220 degrees C).
  • In a small bowl, beat together egg white and water. Brush risen loaf with egg wash and bake in preheated oven for 20 to 25, until golden.

SWISS CHEESE SOUFFLé BREAD

Swiss Cheese Soufflé Bread image

Homemade yeast bread boasts the aroma and flavors of garlic and Swiss cheese.

Provided by Betty Crocker Kitchens

Categories     Side Dish

Time 2h20m

Yield 24

Number Of Ingredients 13

1 1/3 cups Gold Medal™ all-purpose flour
1 tablespoon sugar
1/2 teaspoon salt
1 package regular active or fast-acting dry yeast
1/3 cup butter or margarine
1/4 cup water
1/4 cup milk
1 egg
1 cup shredded Swiss cheese (4 oz)
1 clove garlic, finely chopped
Butter or margarine, softened
Grated Parmesan cheese, if desired
Freshly cracked pepper, if desired

Steps:

  • In medium bowl, mix 1 cup of the flour, the sugar, salt and yeast. In 1-quart saucepan, heat 1/3 cup butter, the water and milk over medium heat, stirring frequently, until very warm (120°F to 130°F). Pour over flour mixture; beat with electric mixer on low speed about 30 seconds or until blended. Beat in egg on medium speed; continue beating 3 minutes, scraping bowl occasionally.
  • Stir in remaining flour, the Swiss cheese and garlic. (If dough is sticky, stir in 1 to 2 tablespoons additional flour.) Cover; let rise in warm place about 45 minutes or until dough has doubled in size.
  • Grease 1-quart casserole with shortening or cooking spray. Stir down dough; shape into a ball. Place in casserole. Brush top with softened butter; sprinkle with Parmesan cheese and pepper. Cover; let rise in warm place about 35 minutes or until dough has doubled in size. (If using fast-acting yeast, do not let rise 35 minutes; cover and let rest on floured surface 10 minutes.)
  • Heat oven to 375°F. Bake 30 to 35 minutes or until loaf is golden brown and sounds hollow when tapped. (If loaf browns too quickly, cover loosely with foil during last 15 minutes of baking.) Immediately remove from casserole to cooling rack. Serve warm.

GRANDMA'S SWISS NEW YEAR'S BREAD (ZUEPFE)

Grandma's Swiss New Year's Bread (Zuepfe) image

My Grandma's Grandma brought this with her to the US from Switzerland in the mid 1800's. Every generation of our family makes this Swiss Zuepfe for New Year's, sharing with those who aren't bakers. Eat with butter - do not disrespect this bread by using margarine in it or on it! It also makes the most delicious French toast I have ever had.

Categories     Bread     Yeast Bread Recipes

Time 3h45m

Yield 16

Number Of Ingredients 9

3 (.25 ounce) packages active dry yeast
3 cups warm water (110 degrees F/45 degrees C), divided
1 pint heavy cream
1 cup butter
6 eggs
3 tablespoons salt
8 cups all-purpose flour, or as needed
1 egg, beaten
1 tablespoon water

Steps:

  • Pour yeast into 1 cup water and set aside.
  • Heat heavy cream in a saucepan over medium heat until scalding, 3 to 4 minutes. Remove from heat. Stir in butter to melt; add remaining 2 cups warm water. Add eggs and salt; mix until all butter is melted. Pour in yeast mixture and stir.
  • Beat 4 cups flour into the cream mixture with an electric mixer until well combined, adding more flour as needed to make a very stiff dough.
  • Turn dough out onto a heavily floured surface. Knead in about 4 more cups of flour until it is smooth, elastic, and no longer sticks. Turn into a large greased bowl and let rise until doubled in size, about 2 hours.
  • Knead down and let rise again, about 30 minutes.
  • Divide dough into 6 long strands. Overlap 2 strands at a time into an upside-down "U" and braid. Place onto an ungreased baking sheet. Combine beaten egg and 1 tablespoon water in a small bowl; brush loaf with wash. Let rise for about 20 minutes more.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven until golden, 30 to 40 minutes. Let cool slightly before eating.

GREEK BRUSCHETTA

Greek Bruschetta image

Rustic, golden-brown bread slices - crisp on the outside, chewy on the inside. Drizzled with great olive oil, sea salt and Mediterranean oregano. That's really the recipe right there. You'll love this.

Provided by evelynathens

Categories     Breads

Time 4m

Yield 1 serving(s)

Number Of Ingredients 4

really good quality country bread, like a sourdough
extra virgin olive oil
sea salt or kosher salt
dried Mediterranean oregano

Steps:

  • Slice the bread 1 inch thick; grill on the bbq or under the grill in the oven until golden and crusty outside, but still soft and chewy inside- this takes about a minute per side, but it really depends on your grill temperature; drizzle with the olive oil and sprinkle with sea salt and oregano, to taste; enjoy!
  • I haven't really put down the number of servings cause you can make as many as you like, but count on a couple of slices per person cause they're so delicious.
  • Note: you can do a variation on this by rubbing a cut garlic clove on the grilled bread before adding the remaining ingredients.

2 teaspoons salt
1/2 cup milk (1 dl, Slightly less than a 1/2 cup)
2 teaspoons sugar

1/2 cup butter
2 1/2 cups milk (separate from the 1 dl milk)
