WHOLE WHEAT PIZZA DOUGH
This whole wheat pizza dough recipe is made from 100% whole wheat flour or wholemeal flour which gives a soft textured pizza base with a lovely crust. Easy foolproof Whole Wheat Pizza Crust recipe that works every time.

Steps:
- Take instant yeast in a mixing bowl or in the stand mixer bowl.
- Add sugar and 1 cup water. Mix to dissolve the sugar.
- Next add whole wheat flour, salt, olive oil and lemon juice..
- If you do not have olive oil, use any neutral flavoured oil.
- Attach the bowl to a stand mixer with the hook attachment. On a medium-high speed knead the dough. If kneading with hands, then mix all the ingredients first and knead for about 8 to 10 minutes.
- The dough should be smooth, pliable and soft. If the dough looks dry, then you can add some water while kneading. If the dough looks sticky, then you can add some flour and knead again.
- Spread some water all over the dough.
- Cover with a lid or a kitchen towel and allow to leaven for 45 minutes to 2 hours till the dough increases in volume and doubles up. If using dry active yeast, then keep for 2 hours to 3 hours or more. Timing varies with the temperature conditions in your city.
- The pizza dough will nicely increase in volume and double up.
- Knead the dough lightly again and then you can directly make pizzas from these. Or you can keep them covered in a tight box or pan. Spread some olive oil all over the dough before placing them in the box.
- Cover the box or pan with a tight fitting lid. Keep in refrigerator or freeze the whole wheat pizza dough.
- In the refrigerator this whole wheat pizza dough stays good for 2 to 3 days. In the freezer, you can store for a month.

EASY 100% WHOLE WHEAT BREAD

Steps:
- Mix the warm water, honey, and yeast in a stand-mixer bowl until mixture becomes foamy, about 5 minutes.
- Add half the whole wheat flour, olive oil, and salt to the mixture. Mix with a spatula or wooden spoon until incorporated. Let sit for 1 to 2 minutes.
- Mix with a dough hook attachment on low speed, slowly adding the remaining whole wheat flour, increasing the speed to high. Mix on high until the batter is combined and not sticking to the sides of the bowl, about 7 minutes. Cover the bowl with a towel and let rest for 15 minutes.
- Meanwhile, prepare a 9x5-inch loaf pan with parchment paper. Flour a surface to work the dough.
- Place the dough onto the floured work surface and shape into a loaf. Use more flour if necessary. Place into the prepared loaf pan.
- Let shaped dough sit in a warm place until it has risen over the top of the pan, about 1 hour.
- Meanwhile, preheat the oven to 350 degrees F (175 degrees C).
- Bake in the preheated oven until top of the loaf sounds hollow when tapped, about 35 minutes. Remove from the oven and let cool for 15 to 20 minutes before removing from the pan and transferring to a wire rack. Let cool an additional hour before slicing; otherwise it will feel doughy.

- Mix ingredients well (add salt and yeast at different times) and let rest 5 minutes.
- Knead by dough hook for 7 - 8 minutes.
- Stretch and fold and place in an oiled container to rest.
- After 10 minutes, stretch & fold again. Do the same two more times and place in fridge.
- After an overnight stay in the fridge (up to 3 days) divide the dough into 8 oz pieces (6) for pizza or 2.9 oz pieces (16) for buns or a combination of both.
- For pizza dough, place each ball into an oiled plastic sandwich bag and place into the fridge for use within 3 days or freeze for a month or so. Thaw in the fridge overnight.
- Roll each piece of dough for bun into balls and press or roll into round flats 3.5 " to 4" in diameter. Repress to maintain diameter and place on parchment covered to rise for 20 to 30 minutes.
- Preheat oven to 375 F.
- When risen to 1.5 the original volume, place into the oven. Bake 8 minutes and rotate.
- Bake 4 to 6 more minutes until the rolls are 200 F internally.

- In a large bowl, dissolve sugar in warm water. Sprinkle yeast over the top, and let stand for about 10 minutes, until foamy.n
- Stir the olive oil and salt into the yeast mixture, then mix in the whole wheat flour and 1 cup of the all-purpose flour until dough starts to come together. Tip dough out onto a surface floured with the remaining all-purpose flour, and knead until all of the flour has been absorbed, and the ball of dough becomes smooth, about 10 minutes. Place dough in an oiled bowl, and turn to coat the surface. Cover loosely with a towel, and let stand in a warm place until doubled in size, about 1 hour.n

- Preheat the oven to 425 degrees F (220 degrees C). Roll a ball of dough with a rolling pin until it will not stretch any further. Then, drape it over both of your fists, and gently pull the edges outward, while rotating the crust. When the circle has reached the desired size, place on a well oiled pizza pan. Top pizza with your favorite toppings, such as sauce, cheese, meats, or vegetables.n
- Bake for 16 to 20 minutes (depending on thickness) in the preheated oven, until the crust is crisp and golden at the edges, and cheese is melted on the top.n

- Using a stand mixer, place water in bowl. Add nectar, salt and 2 cups flour. Combine well. Add yeast and allow to sit until you observe that the yeast is beginning to work. Combine remaining dry ingredients. Gradually add to mixer bowl. Switch to dough hook and knead, adding more flour if needed, until dough does not stick to bowl. Knead for 3-4 minutes on medium setting. Set aside in a draft free area to rise, until double in size, about 90 minutes. Punch down and form loaves. Rise again until nearly double, about 60 minutes. About 45 minutes into second rising, preheat oven to 400 degrees.
- Bake at 400 degrees, for 25 - 30 minutes, until bread reaches an internal temperature of 200 degrees. Cool and enjoy.

100% WHOLE WHEAT BREAD
I haven't bought a loaf of store bought bread for almost a year and have experimented with quite a few recipes. I made this recipe up, after having a few doorstops, and now pretty much use this recipe all the time. It comes out very light, and tastes like white bread!

- Add the first four ingredients into Bosch bread mixer along with FIVE cups of flour.
- Mix briefly.
- Let sit for 20 minutes to proof yeast. (I know it sounds weird to proof instant yeast but this works).
- After 20 minutes the mixture should be quite high, if not, throw out and start again with new yeast.
- Then add the next three ingredients with 7 cups of flour.
- You might use more or less flour but mix in one cup at a time until dough is sticky but not dry.
- I add the gluten flour because, as far as I know, whole wheat flour has very little gluten and bread just won't rise well without it -- believe me I've tried and ended up with doorstops, reeeeeealy heavy doorstops!
- After adding the last of the flour turn your Bosch down to 1 and knead for 7 minutes (I picked 7 just because it's a lucky number). I'm sorta fanatical about the size of my bread so I weigh my dough, roughly 750 grams for whole wheat bread.
- I get 5 full size loaves and 1 smaller one with this recipe.
- I bake it on convection bake for about 25 minutes at 350 degrees in greased pans. It doesn't taste like whole wheat and has a very light texture.
