2-INGREDIENT DINNER: MARC MURPHY'S PORK CHOPS WITH WILTED SPINACH
"Chopped" judge & chef Marc Murphy shares a quick & easy dinner recipe that only requires 2 ingredients: pork chops and spinach.

Steps:
- Preheat oven to 350˚F
- Place a large oven-proof sauté pan over medium heat and add olive oil
- Season the pork chops on both sides with salt and pepper
- Once the pan is hot, cook 2 pork chops at a time until browned, 3 to 4 minutes on each side, then transfer to a rack-lined rimmed baking sheet in the oven to cook through, about 10 minutes
- Repeat with the remaining chops
- Remove from the oven and let rest
- Meanwhile, using the same pan, add the spinach and season with salt and pepper
- Cook, tossing, until wilted then remove from the heat
- Serve alongside the pork chops
GRILLED SPICED DOUBLE-THICK PORK CHOPS
Steps:
- Make brine:
- Lightly mash garlic with flat side of a large heavy knife. In a kettle bring water to a boil with garlic and remaining brine ingredients and simmer 15 minutes. Cool brine completely.
- Working over a bowl, divide pork chops and brine among 3 large heavy sealable plastic bags and seal bags, pressing out any excess air. Marinate pork chops in bags in a large bowl, chilled, turning them once, 2 days.
- Make spice rub:
- In a small bowl whisk together all spice rub ingredients.
- Prepare grill.
- Remove pork chops from brine, discarding brine and any spices still adhering to chops, and pat dry. Season chops with salt and pepper and sprinkle each side of each chop with about 1/2 tablespoon spice rub, patting it into meat.
- Grill chops on an oiled rack set 5 to 6 inches over glowing coals 10 to 12 minutes on each side, or until a meat thermometer diagonally inserted 2 inches into centers registers 155°F. (Alternatively, arrange chops in 2 lightly oiled shallow baking pans. Roast chops in upper and lower thirds of a preheated 450°F. oven, switching position of pans halfway through roasting, about 20 minutes, or until a meat thermometer registers 155°F.) Transfer chops to a platter and let stand 5 minutes before serving.
PORK CHOPS MILANESE WITH CREAMED SPINACH
No frying necessary in our Pork Chops Milanese with Creamed Spinach. Instead, the chops get their crispy coating and tender, juicy goodness in the oven.

- Heat oven to 425ºF.
- Pound chops between sheets of waxed paper to 1/4-inch thickness. Combine mayo and mustard. Mix coating mix, Parmesan and oregano in pie plate.
- Spread 1 tsp. mayo mixture onto top of 1 chop; place, mayo-side down, in coating mix. Repeat to coat other side of chop. Place on rimmed baking sheet sprayed with cooking spray. Repeat with remaining chops.
- Bake chops 12 to 15 min. or until done (160ºF). Meanwhile, melt butter in large saucepan on medium heat. Add garlic; cook and stir 1 min. Stir in Neufchatel and milk; cook 2 to 3 min. or until Neufchatel is melted, stirring constantly. Add 1/3 of the spinach; cook 2 min. or just until spinach is wilted, stirring frequently. Repeat with remaining spinach.
- Place chops on platter; top with spinach mixture. Serve with lemon wedges.

PORK CHOPS AND CREAMY SPINACH RECIPE BY TASTY

Steps:
- Preheat the oven to 400°F (200°C).
- Heat the olive oil in a medium pan over medium heat. Add the onion and sauté until translucent, about 2 minutes. Add the garlic and cook until fragrant, about 1 minute.
- Add the spinach and cool until wilted.
- Add the cream cheese and stir until melted. Season with salt and pepper. Remove the pan from the heat and let cool.
- Make a slit on the side of each pork chop to make a pocket, but do not cut all the way through.
- Fill the pork chops with the spinach mixture. Season with salt and pepper on both sides.
- Heat a drizzle of olive oil in a large pan over medium-high heat. Working in batches, sear the pork chops until golden brown on both sides. Transfer to a baking sheet.
- Bake the pork chops for 20 minutes, or until cooked through.
- Serve the pork chops with mashed potatoes.

- In a large skillet, heat oil over medium-high heat. Sprinkle pork chops with salt and pepper; add to skillet. Saute until a thermometer reads 145°, about 5 minutes per side. Remove to a serving platter; squeeze juice from lemon over chops. Tent with foil; let stand at least 5 minutes before serving., For garlic spinach, heat oil over medium-high heat in same skillet. Add garlic; cook until it just begins to brown, about 45 seconds. Add spinach; cook and stir just until wilted, 2-3 minutes. Sprinkle with salt and pepper. Remove from heat; add lemon juice.
