1 tbsp olive oil
4 boneless, skinless chicken breasts
2 cups water or milk
1 can (10.75 oz) condensed cream of mushroom soup
2 cups Minute® White Rice
1 pkg (10 oz) frozen peas, thawed and drained
1/4 cup grated Parmesan cheese
black pepper (optional)

Steps:

  • A favorite with cheese lovers, this 20 Minute Parmesan Chicken and Rice Dinner is comforting, quick-cooking and will bring a smile to everyone at your table. Step 1
  • Heat oil in a large, nonstick skillet over medium-high heat. Add chicken and cover. Cook for 4 minutes on each side, or until cooked through. Step 2
  • Remove chicken from skillet. Add water or milk and soup to skillet and stir to combine. Bring to a boil. Step 3
  • Add rice, peas and cheese to skillet and mix well. Top with chicken and cover. Step 4
  • Cook on low heat for 5 minutes. Season with black pepper, if using. Recipe Tips If you don't have a nonstick skillet, increase oil to 2 tablespoons to help prevent the chicken from sticking to the pan. If you want to add more flavor to this dish, try adding 1/2 teaspoon of dried and crushed oregano leaves to the soup when adding it to the skillet. If peas aren't your thing, sliced mushrooms, red peppers or asparagus make a great substitution here.

1 1/2 cups 375 mL water
2 tsp 10 mL paprika (optional)
2 cups 500 mL mixed vegetables (carrots, green beans, corn, peas),
1 1/2 cups 375 mL dry instant white rice

Steps:

  • Heat oil in a large nonstick skillet set over medium-heat heat. Cook chicken,stirring often,for 5 minutes or until golden brown. Transfer to a plate. Reduce the heat to medium.
  • Stir in soup,water and paprika. Cook,stirring often,until boiling. Stir in chicken,rice and vegetables. Simmer,covered over medium-low heat,for 5 minutes or until chicken is cooked through and rice is tender. Let stand,covered,for 5 minutes before serving.

1 cup sliced red pepper (1/4-inch x 1 1/2 inch)
1 teaspoon minced fresh garlic

1 (14.5 ounce) can diced tomatoes
1 cup UNCLE BEN'S® Flavor Infusions Chicken & Herb Rice
½ cup chiffonade fresh basil leaves
¼ cup shredded Parmesan cheese

Steps:

  • Heat olive oil in large skillet over medium-high heat.
  • Add chicken strips and cook until they are just done (4 to 6 minutes).
  • Add onion, red pepper slices, and fresh garlic.
  • Continue cooking, stirring occasionally, until vegetables barely tender (4 to 5 minutes).
  • Add water, tomatoes, and rice.
  • Cover pan and continue cooking until mixture just comes to a boil.
  • Reduce heat to medium low and continue cooking until rice is tender or liquid is absorbed (about 10 minutes).
  • Remove cover; stir in basil leaves and Parmesan cheese. Refrigerate leftovers.

600ml hot vegetable or fish stock (from a cube is fine)
1 tbsp korma curry paste
100ml frozen peas
150g pack smoked mackerel , skinned
3 tbsp low-fat crème fraîche
2 hard-boiled eggs , quartered
handful coriander , to serve

Steps:

  • Tip the rice into a large microwavable container. Mix together the stock and curry paste, then pour over the rice. cover with cling film and pierce a few times with a fork. Microwave for 6 mins on High.
  • Break the mackerel into large chunks and stir through the rice along with the peas and crème fraîche, then microwave for 6-8 mins more on medium until the rice is tender. Top with the eggs and serve sprinkled with the coriander.

1 tablespoon vegetable oil
1/2 cup onion, chopped
2 cloves garlic, smashed
1 3/4 cups beef broth
1 teaspoon ground cumin
1 tablespoon tomato paste
1/2 cup frozen green pea, thawed
1/2 cup cooked carrot, diced

Steps:

  • Cook rice in hot oil in 2 to 3 litre saucepan over medium heat, stirring constantly, about 2 minutes.
  • Stir in onion and garlic; cook, stirring about 1 minute.
  • Add broth and cumin.
  • Heat to boiling; stir once or twice.
  • Lower heat to simmer; Cover with tight fitting lid.
  • Cook 15 minutes or until rice is tender and liquid is absorbed.
  • Combine tomato paste and 1 tablespoon water.
  • Stir tomato mixture, peas and carrots into rice; fluff with a fork.

2 cups chicken stock
1 cup long grain rice, uncooked
1 (1 1/4 ounce) packet taco seasoning
1/3 cup salsa
1/3 cup corn kernel
1/3 cup black beans

Steps:

  • Boil the chicken stock and taco seasoning in a medium pot.
  • Once mixture comes to a boil add the rice, salsa, corn and beans (or peas if you prefer; stir a bit.
  • Turn heat to low and cover pot.
  • Allow to cook on low, undisturbed, for 20 minutes.
  • After 20 minutes are up, toss the rice a bit, and serve!
