Three Cheese Stuffed Shells are a delicious twist on lasagna using jumbo shells that are stuffed with the classic lasagna cheese blend with Italian seasoning all baked in spaghetti sauce for a classic Italian dish. A tried and true family favorite dinner!

20 uncooked jumbo pasta shells
15 ounce container ricotta cheese
8 ounces 2 cups grated mozzarella cheese
1/2 cup grated Parmesan cheese
2 Tablespoons chopped basil
1 teaspoon Italian Seasoning
1 egg
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 - 26 ounce jar spaghetti sauce

Steps:

  • Preheat oven to 350 degrees. Cook pasta shells according to package directions for al dente, about 9 minutes. Drain and rinse in cold water.
  • In a large bowl, combine the ricotta, 1 1/2 cups of the mozzarella, parmesan, basil, Italian seasoning, egg, salt and pepper. Spread 3/4 of the spaghetti sauce on the bottom of a 13x9 inch baking dish.
  • Spoon the cheese mixture into the pasta shells and place in the baking dish. Pour remaining spaghetti sauce over shells and sprinkle with remaining mozzarella. Cover with foil and bake at 350 degrees for 30 minutes. Uncover and bake for 5-10 minutes more.

3 cups ricotta cheese
3 cups shredded part-skim mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 cup chopped green pepper
1/2 cup chopped fresh mushrooms
2 tablespoons dried basil
2 large eggs, lightly beaten
2 garlic cloves, minced
1/2 teaspoon seasoned salt
1/4 teaspoon pepper
2 jars (one 28 ounces, one 14 ounces) spaghetti sauce, divided

Steps:

  • Cook pasta shells according to package directions. Drain and rinse in cold water. In a large bowl, combine the next 10 ingredients. Divide the small jar of spaghetti sauce between two ungreased 13x9-in. baking dishes., Stuff shells with the cheese mixture and place in a single layer over sauce. Pour the remaining spaghetti sauce over shells. , Cover and bake at 350° for 20 minutes. Uncover; bake 10 minutes longer or until heated through.

1-1/3 cups fresh baby spinach
1 tablespoon plus 1-1/2 teaspoons balsamic vinaigrette
BURGERS:
1 large egg
1/3 cup fresh baby spinach, finely chopped
3 tablespoons crumbled feta cheese
3 tablespoons shredded Asiago cheese
3 tablespoons chopped red onion
1 tablespoon plus 1-1/2 teaspoons ketchup
2 teaspoons Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon pepper
1 pound ground beef
4 ounces fresh mozzarella cheese, sliced
4 whole wheat hamburger buns, split

Steps:

  • Place spinach in a small bowl. Drizzle with vinaigrette and toss to coat; set aside., In a large bowl, combine the egg, chopped spinach, cheeses, onion, ketchup, Worcestershire sauce, salt and pepper. Crumble beef over mixture and mix well. Shape into four patties., Grill burgers, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 160° and juices run clear. Top with mozzarella cheese. Grill 1-2 minutes longer or until cheese is melted. Serve on buns with spinach mixture.

1-3/4 c. cottage cheese
1 egg, beaten
1/2 c. grated Parmesan cheese, divided
1 c. shredded mozzarella cheese, divided
1/3 c. fresh parsley, chopped
salt and pepper to taste
7-oz. pkg. small shell macaroni, cooked
1-1/2 to 2 16-oz. jars Alfredo sauce, divided

Steps:

  • Combine spinach, cottage cheese, egg, 1/4 cup Parmesan cheese, 2/3 cup mozzarella cheese, parsley, salt and pepper in a large bowl. Set aside. In a separate bowl, toss macaroni with 2-1/2 cups Alfredo sauce. Arrange half of macaroni mixture in a lightly greased 13"x9" baking pan. Layer spinach mixture evenly over macaroni. Cover with remaining macaroni, sauce, Parmesan and mozzarella, in that order. Bake, uncovered, at 350 degrees for 35 to 40 minutes. Serves 6.

Steps:

  • In a large pot of salted water boil pasta shells until al dente. Drain well and rinse.

  • In medium bowl, combine spinach, mozzarella cheese, cottage cheese, egg white, parmesan cheese, nutmeg, and Italian seasoning until blended.
  • Fill each pasta shell with a heaping tablespoon of spinach mixture. Pour 1 cup spaghetti sauce into a 8x12 inch baking dish, spread evenly. Place shells in pan. An interesting meatless casserole. Uses large shells filled with a spinach and cottage cheese mixture and baked in a creamy parmasan cheese sauce. This is from an old Better Homes and Gardens recipe card. I have not tried it yet myself, but it is on my list to try. (prep time is a guess)

12 ounces jumbo pasta shells
1/2 cup finely chopped celery
2 tablespoons finely chopped onions
1 tablespoon cooking oil
2 cups creamy cottage cheese
1 (10 ounce) package frozen chopped spinach (cooked and drained)
1 beaten egg
1/2 teaspoon salt
1/8 teaspoon dry oregano
1/8 teaspoon ground nutmeg
1 dash pepper
2 tablespoons chopped onions
3 tablespoons cooking oil
3 tablespoons flour
1/4 teaspoon salt
1 1/2 cups milk
3/4 cup chicken broth
1/4 cup grated parmesan cheese

Steps:

  • Cook shells according to package directions; drain and set aside.
  • Filling;.
  • In skillet cook celery 2 Tbls onion in 1 Tbls oil till tender but not brown; drain.
  • Combine celery mixture with cottage cheese, cooked spinach, egg 1/2 teas. salt, oregano, nutmeg and pepper.
  • Mix well.
  • Fill shells with mixture, set aside.
  • For sauce;.
  • In saucepan cook 2 Tbls onion in 3 Tbls oil till tender but not brown.
  • Blend in flour, salt and pepper.
  • Stir in milk and chicken broth.
  • Cook and stir till thickened and bubbly.
  • stir in parmesan.
  • Pour half of the sauce into bottom of 12x71/2x2 inch baking dish.(You cold use a 9x13 as well).
  • Arrange stuffed shells in dish.
  • Cover with foil.
  • Bake at 375 for 20 minutes.
  • pour remaining sauce over shells.
  • Baked Uncovered for 15 minutes more.
  • Sprinkle with additional grated parmesan cheese if desired.

4 cups hot cooked penne (about 8 ounces uncooked tube-shaped pasta)
2 cups shredded shredded cooked boneless skinless chicken breasts
1 cup shredded reduced-fat sharp cheddar cheese, divided
1/2 cup grated fresh parmesan cheese, divided
1/2 cup 2% low-fat milk
1 (10 3/4 ounce) can reduced-fat reduced-sodium condensed cream of chicken soup, undiluted

Steps:

  • Preheat oven to 425°.
  • Heat olive oil in a large nonstick skillet coated with cooking spray over medium-high heat.
  • Add mushrooms, onion, and bell pepper; sauté 4 minutes or until tender.
  • Add spinach, oregano, and black pepper; sauté 3 minutes or just until spinach wilts.
  • Place cottage cheese in a food processor and process until very smooth.

1 ½ pounds ground beef
2 cloves garlic, chopped
1 teaspoon dried oregano
½ teaspoon salt

2 (8 ounce) cans tomato sauce
½ cup water
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 (8 ounce) container cottage cheese
¼ cup chopped onion
2 tablespoons grated Parmesan cheese
8 ounces shredded mozzarella cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes or until al dente; drain.
