Since my husband likes spicy foods, I frequently sprinkle chopped jalapeno peppers over half of this cornbread casserole for him. -Carrina Cooper, McAlpin, Florida

1 can (15-1/4 ounces) whole kernel corn, drained
1 can (14-3/4 ounces) cream-style corn
1 package (8-1/2 ounces) cornbread/muffin mix
1 large egg
2 tablespoons butter, melted
1/4 teaspoon garlic powder
1/4 teaspoon paprika

Steps:

  • In a large bowl, combine all ingredients. Pour into a greased 11x7-in. baking dish. Bake, uncovered, at 400° for 25-30 minutes or until the top and edges are golden brown.

1/2 cup butter, softened
1 cup sour cream
1 egg
1 (16 ounce) can corn, drained
1 (16 ounce) can cream-style corn
1 (9 ounce) box corn muffin mix

Steps:

  • Combine butter, sour cream and egg. Stir in both cans of corn and the muffin mix. Spoon into a well creased casserole dish.
  • Bake 1 hour at 350°F until golden brown.

1 cup sour cream
1 egg
1 (16 ounce) can whole kernel corn, drained
1 (16 ounce) can cream-style corn, undrained
4 1/2 ounces corn muffin mix
1 cup cheddar cheese, grated

Steps:

  • In large bowl, mix together butter, sour cream and egg.
  • Stir in cans of corn and corn muffin mix.
  • Spoon mixture into buttered 2-quart casserole dish.
  • Bake in preheated 375-degree oven, about 45 minutes.
  • Remove from oven, add cheese, stir well.
  • Return to oven, bake additional 15 minutes, or until dish is slightly puffed, bubbly, and browned around the edges.
