3 Day Coconut Cake image

The best make ahead dessert ever! This old fashioned 3 Day Coconut Cake starts with a cake mix but you'd never know. It's lightly sweet and delicious.

1 box white cake mix ((15.25 ounces))
1 cup 2% milk
3 large eggs
1/2 cup vegetable oil
1 cup granulated sugar
1 cup sour cream
6 ounces frozen fresh coconut (thawed)
1/2 cup reserved filling mix
8 ounces Cool Whip (thawed)

Steps:

  • Preheat the oven to 350º Fahrenheit. Grease with shortening, then dust with flour 2 8" round cake pans.
  • In the bowl of a stand mixer, add the cake mix, milk, eggs and vegetable oil. Beat on medium speed for 2 minutes, scraping the sides of the bowl as needed.
  • Divide the batter equally between the two prepared cake pans.
  • Bake for 25-27 minutes or until the center of the cake bounces back when you touch it.
  • Allow the cakes to cool for 5 minutes in the pan, then turn them out on a wire rack to cool completely.
  • While the cakes are cooling, prepare the filling. In a medium bowl, combine the sour cream, sugar and thawed coconut. Mix well. Place this into the refrigerator until you are ready to assemble the cake.
  • To assemble the cake, cut each cake into two layers. You should now have four layers.
  • Place one cake layer down on a cake plate, cut side up.
  • Scoop 1/2-2/3 cup of the coconut filling into the center of the cake. Spread to the edges carefully so that it does not run over.
  • Place another cake layer on top and then spread another 1/2-2/3 cup filling on top.
  • Repeat with another cake layer and more filling.
  • Then place the last cake layer on top.
  • In a bowl, fold together any remaining sour cream filling (we had about 1/2 cup left over) with the 8 ounces of Cool Whip.
  • Use this Cool Whip mixture to frost the outside and top of the cake.
  • Store in the refrigerator for 3 days before serving. This allows the cake to develop the best flavor.

1 (18 ounce) package white cake mix
3 egg whites (or as called for by your cake mix)
1/3 cup oil (or as called for by your cake mix)
1 1/3 cups water (or as called for by your cake mix)
16 ounces sour cream
12 ounces frozen coconut, thawed and drained
1 1/2 cups Cool Whip
1 cup granulated sugar

Steps:

  • The night before you make this cake, blend together the sour cream, coconut and sugar.
  • Separate 1 cup of mixture and place in a separate bowl; refrigerate both portions.
  • The next day, prepare cake mix as per instructions on the back of the box, in two 8- or 9-inch round cake pans; let cool.
  • Using a long, serrated knife, split both layers in half horizontally, to end up with four layers.
  • Place one layer of cake on the plate of a cake stand or cake saver that has a top; spread all but the reserved 1 cup of coconut mixture between the layers.
  • Mix Cool Whip together with the reserved 1 cup coconut mixture.
  • Frost sides and top of cake with this mixture.
  • Cover the cake and place in the refrigerator.
  • Do NOT remove or eat for 3 days.

This Yummy cake recipe came from my good friends mom, Marilyn. It is so very wonderful. You must be patient though and wait the 3 days...it's worth the wait, trust me!

1 (18 ounce) box yellow cake mix
3 eggs
1/2 cup butter
1 1/4 cups water
2 cups sugar
2 cups flaked coconut
8 ounces Cool Whip
2 cups sour cream

Steps:

  • Prepare cake mix as directed using the 3 eggs, 1 1/4 cup of water and 1/2 cup of butter, then pour into 8" or 9" pans. **depending on what brand of cake mix you buy the amount of eggs, butter, water may be different - just use the ingredients listed on your box of yellow cake and omit any of mine that aren't needed. I used Betty Crocker butter recipe yellow, but it doesn't not matter which one you use**.
  • Meanwhile, mix together the sugar, coconut and sour cream.
  • Set aside 1 cup of the coconut mixture.
  • After the cake has cooled split the layers using a serrated knike, so you have 4 layers.
  • On a covered cake dish begin layering the cake with the coconut mixture, leave the top layer unfrosted.
  • Take the remaining cup of coconut mixture and mix with the cool whip.
  • Frost the top and the sides of the cake.
  • Cover the cake and refrigerate for 3 days before serving.
  • LOVE IT!

Sanders Confectionary Company in Detroit, Michigan, makes all sorts of candies and fudge, but is famous for what is appropriately called "bumpy cake." This legendary dessert resulted from a happy accident over 100 years ago when the owner, Fred Sanders, ran out of buttercream to completely frost his devil's food cake. He decided instead to pipe thick rows of vanilla buttercream (the "bumps") on the top, then blanket the entire surface with chocolate fudge frosting. This adapted version boasts a moist, one-bowl chocolate cake, long pillows of sweet vanilla buttercream and a decadent, pourable fudge draped on top. Be sure to clear room in the freezer: freezing the cake before and after piping the buttercream is essential to success.

3/4 cup unsweetened cocoa powder
1 tablespoon instant espresso powder
3/4 cup vegetable oil
1 cup hot water
1/4 cup whole milk
1 tablespoon pure vanilla extract
1 1/2 teaspoons baking soda
3/4 teaspoon baking powder
3/4 teaspoon kosher salt
3 large eggs
2 cups granulated sugar
2 cups all-purpose flour
2 cups confectioners' sugar
1 stick (8 tablespoons) unsalted butter, at room temperature
Pinch kosher salt
1 tablespoon pure vanilla extract
1 to 2 tablespoons whole milk, if needed
1 3/4 cups confectioners' sugar
1/2 cup buttermilk
1 tablespoon pure vanilla extract
1/2 cup unsweetened cocoa powder
1/3 cup dark corn syrup
Pinch kosher salt
2 sticks (1 cup) unsalted butter, cut into small pieces, at room temperature

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Spray a 9-by-13-inch baking dish with nonstick cooking spray.
  • Whisk the cocoa powder and instant espresso in a large bowl. Pour in the vegetable oil, water, milk and vanilla extract and whisk until smooth. Add the baking soda, baking powder, salt and eggs and whisk until smooth. Whisk in the granulated sugar until well combined. Fold in the flour until smooth. Pour the batter into the prepared baking dish. Bake until a toothpick inserted into the center of the cake comes out with just a few crumbs, 33 to 35 minutes. Transfer to a wire rack to cool completely in the dish, about 1 hour. Freeze until hardened, about 1 hour.
  • For the buttercream: Meanwhile, fit a piping bag with a 1/2-inch round tip. Combine the sugar, butter and salt in the bowl of a stand mixer fitted with the paddle attachment (or in a large bowl if using a handheld mixer). Mix on low speed until mostly incorporated. Add the vanilla, increase the speed to medium high and mix until smooth and thick but pliable. Adjust the consistency if needed by mixing in the milk. Transfer the buttercream to the piping bag. If the buttercream has become too soft and warm, refrigerate until chilled, about 10 minutes.
  • With a short side of the cake dish facing you, pipe 7 rows of buttercream crosswise on the cake 1 to 1 1/2 inches apart. Return the cake to the freezer until the buttercream is very cold, about 30 minutes.
  • For the fudge frosting: Whisk the confectioners' sugar, buttermilk and vanilla in a medium saucepan over medium heat. Add the cocoa powder, corn syrup and salt and bring to a boil, whisking constantly. Fit the saucepan with a candy thermometer, reduce the heat to medium low and cook until the mixture reaches 240 degrees F. Remove the saucepan from the heat and add the butter a few pieces at a time, whisking constantly, until the frosting is smooth. Let cool slightly, about 10 minutes.
  • Pour half of the fudge frosting over the buttercream rows, tilting the dish slightly so that the entire surface is covered and the fudge drips down the sides of the cake. Return the dish to the freezer until the fudge hardens, about 10 minutes. Repeat frosting with the remaining fudge and refrigerate the cake for 20 minutes to let the fudge harden before serving. Be sure to use a sharp knife to cut the cake; the fudge is sticky, especially around the edges of the cake. The cake can be stored, covered, in the refrigerator for up to 1 week.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch round pan.
  • In a large bowl, mix together the flour, sugar, baking soda and cocoa. Make a well in the center and pour in the water, oil, vinegar, vanilla and almond extract. Mix well and pour into prepared pan.
  • Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
